The best cookbook I own; fabulous, fabulous! 5 out of 5 stars.
11 of 11 people found this review helpful.

I borrowed my mother's copy of this book...and still haven't given it back. If you've ever wanted to know how to make the perfect Jewish chicken soup, matzoh balls, brisket, yummy chicken dishes, and the perfect kugel, this book will be your guide. Haven't figured out that perfect dish to bring to the potluck? This book's got plenty of delectable ideas! I've been frustrated with other Jewish cookbooks that offer confusing recipes with strange ingredients, but this one keeps everything simple and delicious. It's by far the cookbook I turn to most during the week and when guests come over. This book also includes a large array of kosher Chinese recipes (from sweet & sour chicken to kung pao chicken & beef). We are not kosher, but love all the recipes nonetheless.

The Best Kosher Cookbook You'll Ever Need 5 out of 5 stars.

Terrific traditional and contemporary cooking, with a lighter California twist. THIS IS THE BEST KOSHER COOKBOOK -- MAYBE THE BEST COOKBOOK OF ANY KIND WHATSOEVER -- THAT YOU MIGHT EVER OWN. Every recipe works, because the people who put it together genuinely triple-tested each entry, and if it didn't get A-plusses from all three cooks, it didn't get in. I probably own 50 cookbooks, and this is one of the top three I use! Try the chocolate marble squares, the sesame chicken, the apricot noodle kugel, the gefilte fish, the chicken soup, the honey cake . . .

Editorial Review:

Anyone looking for new takes on Jewish cooking or fresh ideas for their kosher table will want to explore Adventures in Jewish Cooking. The book pushes the whole concept of Jewish cooking--let alone kosher restrictions--to the limit with inspired, internationally inflected dishes. Jeffrey Nathan, executive chef of Manhattan's acclaimed kosher restaurant Abigael's and host of the popular PBS cooking show New Jewish Cuisine, delivers all the standards of Jewish fare, but his Matzo Ball Soup is intensified with a spicy Latin American Soffrito and studded with saffron-infused matzo balls. His gefilte fish is a sophisticated terrine, adorned with jewel-like carrot and beet salads tossed with a tangy, sharp Horseradish Mustard Vinaigrette. Even his chicken soup is accented with Japanese miso paste. Besides updated versions of typical Jewish dishes, Nathan calls on his widely varied culinary experience to create kosher versions of more unexpected fare. Nori-Wrapped Salmon with Pea Shoot Salad would be impressive on any table--it's merely an added bonus that it also happens to be kosher. Turkey and Sausage Barley Jambalaya proves that pastrami, veal sausage, and turkey thighs can go head-to-head with the nonkosher meats normally found in this spicy Southern dish. Many of the dishes are impressive enough for the holiday table, making this a welcome resource for any cook looking for unusual takes on international cooking and those looking to add new dimensions to their kosher fare. --Robin Donovan

Good basic guide to traditional Jewish cooking. 5 out of 5 stars.
13 of 13 people found this review helpful.

Along with The Joy of Cooking for everyday basic cooking, I learned to prepare tradiditional Ashkenazic (Eastern European) Jewish dishes from Love and Knishes when it was first published 40 years ago when I was a newly-wed. The recipes and preparation instructions in Love and Knishes are simple, the ingredients are usually staples and the commentary is very funny, even if now viewed as, perhaps, stereotypical. The recipes are easily adaptable to today's guidelines to healthier (lower fat content) guidelines. I'm giving this as a gift to my soon to be new daughter-in-law. If your mom didn't keep kosher or prepare traditional dishes for holidays, sabbath etc. then Love and Knishes is a good place to start learning.

Can't beat it for good old favorites 5 out of 5 stars.

Some of the directions were a bit complicated to follow, or didn't match what I knew the recipies to be. However, for the most part, this is right out of my memories of my great Nana!

Best Jewish cookbook! 5 out of 5 stars.

My mom received this little cookbook for her wedding 40 years ago, so these were the Jewish recipes I grew up on in my household. I have continued her tradition in using this as my main source of Jewish recipes. People always tell me I make the best matzah balls and latkes they've ever tasted, and I attribute that 100 percent to tips in this cookbook. A previous reviewer mentioned the noodle kugel and stuffed cabbage recipes as well - both of which my mom became famous for!

Kosher Cooking fun in NYC 5 out of 5 stars.

I bought Levana's book after attending her cooking classes in New York City (http://www.levanakirschenbaum.com). This book is a great companion for her classes -- I recommend them both highly! Her Brisket makes a great seder main course.

Healthy, Easy and Simply Delicious 5 out of 5 stars.

During a summer picnic someone advised me to buy Levana's cookbook. Since I bought this cookbook I don't look anymore at others. I also follow her cooking classes at Lincoln Square Synagogue and they are too good to be true. She makes healthy dishes which are very easy to make and simply delicious as well. I was always a bit insecure about cooking since often recipes didn't turn out like they should. Not with levana's recipes; they work. It really makes me happy to see that my dishes turn out so well. Levana uses all kinds of healthy grains, I never heard of before, gives alternatives to white cane sugar, gives easy recipes to make fish and chicken exotic in no time, turns heavy dairy dishes into light soy creations and uses vegetables, spices and herbs in such a magical way that even the greatest carnivore would consider to become a vegetarian.
I am waiting for her new cookbook.

Edible and visual treat! 5 out of 5 stars.
7 of 7 people found this review helpful.

The "traditional" food of Israel is a mix of Middle East with Russian, German, Polish, & a wide range of cultures. Capturing the flavor of Israel is a challenge. "Taste of Israel" not only captures the tastes of the country, it shares the history, the people behind the process, culture, art, current events, and blends it all into a fantastic recipe to capture the spirit of Israel. The photography is fantastic, clear, sharp and capturing the essense of the country. Excellent as a gift book to honor the country or to keep in your cookbook racks. Lovely design and layout. Reprinted in 1998 and shame on Amazon.com for not having the new version online yet! I want to buy one for all my friends and family as a gift. Publisher: Steimatzky.

Editorial Review:

You'll never think the same way about the kosher kitchen after cracking open this wonderful book. Authors Katja Goldman and Arthur Boehm have focused on chicken, turkey, and duck--all products of Empire Kosher, the largest kosher poultry producer in the U.S. They have stuck to the kosher food laws, and have produced a world-tour, world-class collection of recipes to meet any and all occasions. You'll need a napkin at hand to mop your chin as you peruse this book.

The last may be best. In a final chapter, titled "The Next Day," you'll find recipes such as Mango-Dressed Chicken Salad, Turkey, White Bean and Escarole Soup, and Basil Chicken Salad on Rosemary Focaccia. This is all beyond leftovers. This is a whole new level. The proposed idea is to plan ahead rather than simply make do with leftovers. That is, while in the throes of cooking, cook extra portions with easy second-day meals in mind. Maximize your time. The authors call this the "poultry pantry," which is another way of saying have on hand what you need when you need it.

Empire Kosher Chicken Cookbook includes chapters on starters and finger foods; soups; recipes for the range, the oven, and the grill; side dishes; and chutneys, dressings, and salsas. Okay, you'll find Golden Chicken Soup, perhaps the last word on the subject. But get this: you'll also find yourself tempted by such soups as Moroccan Chicken and Lentil Soup, Canton Dumpling and Snow Pea Soup, and Indonesian Basil Coconut Soup.

For starters, there are Shiitake Potstickers, Chicken Nori Rolls, Curried Chicken Kabobs. Entrées include French-African Chicken Stew, Honey Ginger Chicken, Pungent Shabbat Chicken with Dried Fruit, Five Spice Roast Turkey Breast with Pear-Garlic Sauce--the list goes on and on, a couple of hundred recipes' worth. This isn't just a cookbook: Empire Kosher Chicken Cookbook is a service to cooks everywhere. --Schuyler Ingle

Editorial Review:

Master Chefs Cook Kosher is a companion to Judy Zeidler's television show, Judy's Kitchen, which appears on the Jewish Television Network. The book features dishes prepared by chefs on the show. Each of the 31 sections of this book corresponds to an episode of the show, and each has a theme, such as the cooking of Provence, dishes made with potatoes, or a Tex-Mex menu.

In every section, Zeidler talks about the accomplishments of the featured chef and tells about their appearance on the show, in case you are not a viewer. Thus you get to discover that Neela Paniz of Bombay Café in west Los Angeles never cooked before she moved to the U.S. from India and that she appeared on the show wearing a bright sari. In comments about what was prepared, Zeidler adds her own serving suggestions, like recommending that you serve Paniz's chicken curry and pungently sweet chutneys to break the fast on Yom Kippur because these dishes can be prepared in advance.

A glorious, up-close, and Technicolor photo of a dish illustrates every section, most of which provide recipes for three dishes.

The range of dishes chosen by the various chefs proves how adaptable kosher cooking can be. Much of this food is simple compared to the way the chefs cook in their restaurants, but will probably raise the level of sophistication for home cooks not in the habit of preparing brisket of beef slowly braised with beer, or salmon kebabs marinated, Yucatan-style, in fresh orange and lime juice with garlic. Side dishes like Crunchy Fennel Salad and desserts like rich, buttery Polenta Pudding topped with Berry Compote, and paper-thin Pistachio Lace Cookies with a hint of orange flavor, add to the appeal of Zeidler's book. --Dana Jacobi

Editorial Review:

Cajun cuisine and the kosher kitchen--an incompatible combination? Not with this exciting collection of kashruth-approved delicacies.

From the heart of Louisiana, Mildred Covert and Sylvia Gerson adapt the rich traditions of Acadiana to the kosher kitchen. Just as they successfully fuse Jewish and Creole cooking in Kosher Creole Cookbook, they again innovate with a Cajun flair.

Tour Acadiana and visit the soul of Cajun territory: Lafayette, St. Martinville, New Iberia, Bayou Lafourche, and other bayou country locales. The authors highlight important cultural notes about each stop and provide kosher recipes that authentically duplicate the celebrated flavors of each area of south Louisiana.

In this volume of savory dishes, kosher----with its prohibition of cooking with shellfish, shrimp, crab, and turtle--and Cajun--which relies heavily upon these ingredients for its hot, spicy gumbos, étouffées, and jambalayas--have been successfully fused. By skillful adaptation of substitute ingredients, the results are dishes with authentic flavors that are at the same time both kosher and Cajun.
