A Taste of the Past is an entertaining reconstruction of the daily life and household of Therese (Riza) Baruch (1851-1938), the great-grandmother of the author, Andras Koerner. Based on an unusually complete cache of letters, recipes, personal artifacts, and eyewitness testimony, Koerner describes in loving detail the domestic life of a nineteenth-century Hungarian Jewish woman, with special emphasis on the meals she served her family.

Based on Riza's letters, part one offers an imaginative sketch of growing up in a religious middle-class family in the 1860s and 70s in an industrial town in western Hungary. Part one also describes Riza's reactions to the dilemmas posed by the early signs of Jewish assimilation. In part two, the heart of the book, Riza has married, moved to a smaller town near the Austrian border, and become the central figure of a large household. Koerner recreates a typical day in the life of Riza and her family, peppering his narrative with recipes of the food she served for breakfast, mid-morning snack, lunch, afternoon coffee-and-cake, and the much more modest evening meal.

Riza's family was religious, and Koerner also describes the special foods (pike in sour aspic, cholent, apple-matzo kugel, and much more) she served to celebrate the Sabbath and the six major Jewish holidays. Short introductions to the recipes describe the evolution of the dishes through the centuries, their role in Jewish culture, and how cultural influences and religious traditions shaped Riza's cooking.

More than 125 evocative pen-and-ink illustrations bring Riza's story and her food to life. A Taste of the Past offers an enchanting look at Jewish daily life in western Hungary in the late nineteenth and early twentieth century, a time when middle-class Jews were increasingly assimilated into mainstream Hungarian life and culture. Such small-town Jewish life had completely disappeared due to the Holocaust. Koerner's book revives this lost world and invites the reader to be a guest in Riza's house to watch her caring for her family, shopping, cooking, and preparing for the holidays. By offering easy-to-follow updated versions of her recipes, the book also allows readers to savor Riza's dishes and desserts in their own kitchens, thus completing this experience of a visit to the past.

This cookbook realy provides the best and most flavorable recipies. Their great for occations such as Passover, Hanukkah, and Thanksgiving. You won't be dissappointed with the purchase of this book!

P.S. The applesauce and the smoked salmon are very delicious!

I vividly remember my first encounter with Jewish cuisine some 15 years ago. We were in Krakow, Poland, and everybody wanted to eat at the famous Ariel, where the crew of Schindler's List ate often while filming the movie. They offered a set menu, featuring Gefilte Fish, which I figured would be some kind of stuffed fish, so I was really looking forward to it. Well, for those of you familiar with the famous dish I certainly do not have to explain how very wrong I was. For those of you who are not - let's just say I did not finish it. I also did not finish the following two courses, but I did have some cottage-cheese based dessert. For many years after that ill-fated meal, I did not venture into the exploration of Jewish culinary delights, until I had the good luck to try some dishes cooked by my friends and served in a home setting. That was enough to wake me up to the fact that Jewish cuisine can be and actually is delectable when done right.

The "Heirloom Cookbook," compiled and edited by Miriam Lerner Satz, presents over 450 recipes which, as the author puts it, are `recipes handed down by Jewish mothers and modern recipes from daughters and friends.' While quite a few are quite expected (the fateful Gefilte Fish, different kinds of Borscht, Chopped Liver, Matzo Balls, Blinis and more...), so many of them make one realize how diverse the Jewish cuisine really is and how many other cuisines have influenced it in the past. While Spanish, German, Russian and Polish influences were quite expected, I was amazed to find traces of Amish, Chinese, Danish, Greek, Italian, Mexican and other influences as well.

The recipes are diverse and cover every course of a regular or festive meal. There are even a dozen beverage recipes included. The directions to prepare are simple and easy-to-follow and the couple that I tried turned out absolutely yummy. While I enjoyed the family background part, the division of recipes in five sections (Lerner and Satz Family Recipes, Recipes from Miriam Lerner Satz, Passover Recipes, Sephardic [Spanish Jewish] Cooking and Favorite Recipes from Friends) made it slightly difficult to find appropriate recipes for each course. That was partially offset by an absolutely wonderful Index section, which listed the recipes in alphabetical order as well as by category and by author.

I've greatly enjoyed the family photos in the book, but missed photographs of the finished dishes. With the exception of three unidentified dishes on the front cover, there were no other photos of the food in the book. I have always found good pictorial material invaluable in a cookbook and great help in making the dishes look authentic. That was also my only semi-serious complaint about the "Heirloom Cookbook." I would highly recommend this book to anybody - Jewish or not - who enjoys good food and values family ties.

I know from my name you wouldn't know that I was Jewish, but that is because my husband is not. I had to tell, that my mother-in-law picked up your book and started skimming while we were Kitchen Kibbutzin' and decided it helped her understand the holidays and customs better than anything else. She HAD to have a copy, so we got her one as (of all things)a Christmas gift! She absolutely loves it. She says that it is so easy to read and the recipees are easy to follow! She can't wait to treat me and the gang to some of the goodies she discovered from your book. She said that it isn't just a cookbook. It is her special reference book that helps us celebrate and rejoice in the Jewish customs/traditions together.

As for me.... well let's just say that I never put it away! It is a staple in my kitchen as important to me as salt and pepper! That is why it happenned to be out on the table for my MIL to discover! LOVE IT!

Introducing Israeli/Sephardi foods into your kitchen 4 out of 5 stars.

If you've been cooking Mama's Eastern-European recipes long enough, and you want your meals to turn over a new, more Sephardic leaf, in step with Israeli-style cooking, Sheilah Kaufman's cookbook Sephardic Israeli Cuisine: A Mediterranean Mosaic is for you.

Start changing your cooking by changing your ingredients. Put aside the potatoes and the cabbage in favor of eggplant and artichokes. Forget the wheat and barley and go for rice and couscous. Leave the apples and pears on the shelf and choose the melons and apricots. Now that you have a lot of ingredients that you have no idea what to do with, reach for Sephardic Israeli Cuisine: A Mediterranean Mosaic .

To follow these authentic recipes you will have to stock up on some new-to-the-Polish-palate, spices. The section on Condiments and Spices will guide you right through the Middle Eastern spice market. I doubt that any of us will actually bother to make the spices when they are so readily availalbe in any Israeli market. But in this section you will learn what Zatar and Zhoug (and many other spices) are really made of.

In my eternal search for easy-to-make appetizers that taste good even when prepared several days before serving, this cookbook offers Leah Spiegel's recipe for Walnut Dip. Combine all the easy to find ingredients into a food processor, zumm, and store it in the frig. Alas! My kind of recipe.

Here are the recipes for the well known but Gd-know-what's-in -`em dishes like Mafrum. This exotic sounding Lybian dish turns out to be beef stew. What's special about Morroccan Cholent? In addition to all the unique spicing that Bubi never dreamed of, Moroccans make their Cholent with honey. Yes, honey.

We all know about the eggs that brown in the Cholent over night. Huevos Haminados is another Shabbat dish that Sephardi Yerushalmim and Turkish Jews make, that gives you the brown eggs but without the Cholent.

Your Polish taste buds may be adjusting to Sephardic and Middle Eastern foods slowly, but everybody loves those great Sephardic and Middle Eastern desserts. No matter where you are from, you will delight in those bite-size syrupy sweet and often crunchy specialties like Baklava. Kaufman offers a recipe for preparing Baklava by the sheet that you later cut into individual pieces. I was more intrigued by the recipe from Lybia for sweet roses called Debla, which is popular on Purim. These beautiful individual edible rose-shaped sweets are made of dough that is wound around into a rose-like shape and covered in sugar syrup. They look just like flowers covered in morning dew, and must be gorgeous in mishloach manot.

This cookbook has an excellent section on Sephardic Passover recipes. This Pesach, in addition to your traditional haroset you can prepare the Haroset from Turkey - also made with apples, nuts and wine, but with the addition of dates and raisins. Or you can make the Abravanel family haroset recipe originating in Portugal. In addition to the nuts and the wine, this recipe has - you won't believe it - orange juice and cherry jam. I liked the Passover recipe for sponge cake, which has a lot of eggs but no oil, so much for kitniyot issues.

The cookbook ends with a small section on Ashkenazi foods. I am not sure why this was necessary. From my point of view the book held its own with just the Sephardic recipes.

In addition to all the great recipes the cookbook has a section on the history of Sephardic Jews and an essay on the foods traditionally eaten on the Jewish holidays.

The books opens with a translation of the Bendigamos, the Grace After Meals according to the tradition of the Spanish Portuguese Jews. It would have been nice had the Ladino text appeared alongside the English translation.

Sephardic Israeli Cuisine: A Mediterranean Mosaic is a fine addition to your cookbook collection. You'll enjoy preparing these unique recipes and incorporating them into your standard repertoire.

In A Treasury of Jewish Holiday Baking, Goldman defines Jewish cooking as a combination of influences from religious laws, holiday and seasonal events, what is locally available, and cross-cultural adaptations created as Jewish families moved around. She also explains much about Jewish dietary law and other food customs.

Holidays, in particular, call for foods with symbolic as well as sensory resonance. This leads to baking a special, spiral-shaped challah--a reminder of life's continuity. This egg bread is reserved for the Sabbath and most holidays, while triangular Hamantaschen, a pastry resembling the three-cornered hat of the evil Haman, are unique to the lively holiday of Purim.

Novice cooks will appreciate Goldman's list of "Winning Recipes for the Bakery Challenged." Her discussions of yeast (five pages) and sensible equipment (seven pages) are an education for any baker, while everyone will enjoy her killer frozen cheesecake, which you can keep for unexpected guests; flourless and rich, rich Espresso Truffle Torte; and Smoked Salmon, Dill, and Cream Cheese Pizza. Soup--A Kosher Collection is an excellent book! I never realized kosher soups were so easy to prepare and so delicious. Ms Reiss has included a recipe for every occasion; there is a huge selection of soups for meat eaters, vegetarians, and vegans. Everything from old favorites such as chicken soup to new gems like curried red lentil soup or saffron garlic fish soup. The blueberry and rosemary soup was a fantastic surprise! I just bought the book and have made 12 of the over 150 recipes. Each recipe I made was a big hit with my family. The chocolate soup was a great treat. Ms Reiss' easy to follow recipes are accompanied by excellent definitions and cooking tips. I already bought a few copies for holiday gifts this year.

If you love soup this book is for you. I have already tried several of the recipes in the book and they were all fantastic - easy to follow instructions and great variety. I would recommend this book to anybody and have already bought copies for gifts!
