I had seen this book at a friends business and thought it was good. Since I have ordered and received it I have had the chance to really review the contents and find it one book that I can use daily. The CD rom is also fantastic in the number of recipes it contains. One nice feature is that you can size the recipes to what you need. Another great plus. Well worth the money. Tom Elliott, CEC

I had to buy this book for my Quantity Foods course as a part of my Dietetics major. I actually liked the book, and I am going to keep it for later use. I thought the book was organized very well. Some of the charts in Chapter 2 and 5 that we used quite often were a little hard to find (because there are so many!).
It also presented a good overview of things you wouldn't think would be in the book, such as the school lunch program, etc.
I liked it!

This book was awful. I read "The Sugar Addict's Total Recovery Program" (DesMaisons) first, and I was spoiled by more rational, documented approach to the subject. To be fair, I only got through the first part of this book before I put it down in disgust. This book is the rantings of someone who feels passionately about something. Great. Now back it up. You can't just say, "This is bad and you have to do this!" Well... I suppose you can. But in my opinion that makes for a lousy book for someone who is trying to learn and separate fact from hysteria.

First of all, I am fascinated by nutrition. It's a pretty cool thing to know how food contributes to our everyday existence. With that in mind, this book is a fantastic nutrition resource and reference. I've read a lot of extracurricular nutrition guides over the years and was under the impression I had a pretty good handle on the concepts. Nope. I felt like an amateur once I got into this book. There is so much more to learn and this book lays it out into a very "digestible" format.

This book explains what trans-fatty acids are and which fats are really healthy. Most of the common press has been feeding us industry propaganda. This book simply explains the different types of fats and what they do. You will learn about the harmless nature of saturated fats that has been mistaken for the harmful nature of trans-fats. Most studies in the last 50 years failed to separate the two.

This information came from a PhD physician. It's not myth and Dr. Enig is not trying to sell you ANYTHING. She gives reports from studies, including "double blind", from prestigious universities. One of the main reasons we're not given this info freely is that corporations selling products that would sales would be greatly affected don't want us to know this information. In some cases we have been and are being told outright lies for the almighty dollar. Don't take my word, read the books, read the actual studies from places like Harvard that have known the truth but the truth has mysteriously become very difficult to obtain.
