This cookbook proves the rice cooker--which tends to have a bad rap as a never-opened or oft-neglected wedding gift--can be surprisingly versatile: not only does it prepare your rice, it can be used for every dinner course--salad, soup, vegetable, entree, and even dessert.

There is a complete buying and cooking guide for the many rice varieties, as well as other whole grains such as barley, millet, wheat berry, and quinoa. Many of the recipes provide convenient alternative cooking methods for traditional dishes like Italian risottos (the Italian Sausage Risotto is wonderful). Hensperger and Kaufmann show the rice cooker can also work miracles for hot breakfast cereals and porridges with such recipes as Hot Fruited Oatmeal. A simple little book, no frills or pictures, but surprisingly useful. Divided into four main categories--soups, salads, entrees, and sides--each recipe features beans, peas, and/or lentils. Many of the recipes are vegetarian/vegan, as well as some good recipes incorporating meat. The recipes aren't fancy or gourmet, but they're easy to prepare, healthy, and above all, quite tasty. If the book had pictures and a few exciting/unusual recipes for balance, I would give it five stars. Recommended for:
--beginning cooks
--busy/time-pressed cooks
--anyone wanting or needing to incorporate more legumes into their diet

I knew nothing about this book when I checked it out of the library, except that it had recipes for some of the more unusual grains. It is only now that I looked it up on Amazon that I discovered that it won the James Beard award. I am not the least bit surprised, however, because all the recipes I have tried have been consistently delicious, wholesome, and creative. You will find very few run-of-the-mill recipes in this cookbook.

I check many cookbooks out of the library, but for many I can't find any recipes that I want to make, or if I do find recipes to try, once I make them I am generally not impressed. So I was amazed when I opened this cookbook to find so many intriguing recipes, each of which turned out better than the last.

Some highlights: The grilled millet and butternut squash cakes had so few spices I was sure they would be bland, but they weren't. They were subtle but sweet and crunchy and addictive. The millet, quinoa, and burdock pilaf again looked underseasoned, but the burdock adds a great earthy depth to the pilaf, and again, I could not stop eating this dish. Wood's recipe for Locro, a South American soup, has a large number of ingredients, but it is well worth the effort. The barley and beans that make up the bulk of this soup make it substantial and extremely filling. The celeriac is sweet and delicious, the anise seeds add a subtle mysterious note, and the roasted New Mexican chili and the kombu create a great tasty broth with more depth than a typical vegetarian soup.

The only recipe that I was disappointed in was her basic recipe for "steamed" amaranth. Wood swears it's the best way to cook amaranth, but I thought it turned out exactly the same as it always does when I cook it--gooey, but tasty. Also, as a previous reviewer noted, Wood doesn't use too many green vegetables in this cookbook, but since it is a grains cookbook I can forgive this one shortcoming.

Overall, this book is full of healthy, nutritious, creative, well-tested recipes that please the palate and the body, and are reasonably quick to prepare. The flavorings are generally subtle, but perfectly balanced, allowing the taste of the ingredients to shine through. If you like very strong tasting food, however, you might find the recipes a bit bland. The recipes are not all vegetarian, but there are enough vegetarian recipes that I just returned my library book and ordered this book on Amazon.

Recipes good but overly complicated, layout of book poor 3 out of 5 stars.

I got this book the day it came out and I've probably used it twice. I'm of the feeling that you can't have enough recipes which make use of whole grains, especially the less common ones like quinoa, amaranth and farro. Yet when I feel like cooking whole grains, I find myself reaching for Rebecca Wood's "The Splendid Grain," which has, to my taste, better info and recipes and a much better layout. Don't get me wrong, I've liked what I've cooked from this book, but don't find it all that inspiring. As an example, the quinoa paella is quite good, but the recipe calls for fresh artichokes, which makes this dish affordable only during the very short artichoke season. No mention of whether you can substitute canned artichokes successfully. For the record, I did, and they tasted, well, canned, of course. I would have liked an alternative. In general, the recipes are rather complicated for the results, whereas in the Splendid Grain, they are far simpler and more varied. Also, this book is small and impossible to keep open during cooking, plus the recipes are on multiple pages. It's clear that cost was an issue and someone (publisher?) decided that pictures were more important than an easy-to-use layout. I'm happy to have this in my kitchen, but it feels like someone rushed this out and cut corners. I wanted to like it more than I actually do. Recommended, but not as a first choice for whole grain cooking.

This book is extremely helpful for us and we are using the Rice diet as our way to loose and maintain our weight loss. So far much better and much much healthier than any other diets I have ever done (which include many). Highly recommended for those that are interested or curious on being healthy the simple way. I am not a physician but I know the struggle I have had for years with anckle swelling and gaining too much weight. Now I have a book + to guide me. This is probably the definitive work on how to start with whole grains and
make bread and other grain based foods. The author includes essential
details about how to store grains, how to care for cast iron utensils, how
to make sourdough and sprouts, etc. that you don't see in a lot of other
books. The writing style is concise and very clear. The recipes are
flexible allowing you to adjust and substitute ingredients. It is amazing
how quickly pan bread can be made from scratch. And now I can make a $5
loaf of artisan bread with less than $1 of ingredients, and if I were
grinding my own wheat, I could do it for less than fifty cents worth of
ingredients!

A wonderful little rice book 5 out of 5 stars.

I like rice. A lot. I value it almost as highly as my eyes, and possibly a bit higher than my hands.

I got this a few hours ago, so I haven't cooked from it, but I have sat around reading it. I like it. One recipe caught my eye for its oddness. It calls for thyme stems, with the leaves and flowers discarded. I can't say I've ever seen a recipe do that. I've seen lots that want the flowers in the pot and the stems discarded, and plenty that want both leaves and stems.

The recipes are diverse. My first flip through it looked to me like it was heavy on rabbit, and snail. A subsequent investigation tells me that it is much more diverse. I skimmed over at least one vegetarian recipe (I think there are actually three of them), as well as diverse dishes calling for all manner of fish and crustacean, plus rabbit, pork, snail, mushroom, squid ink, and vegetable. It is a bit heavy on snails. But I'm sure you can leave them out of some of the dishes.

Overall I'm far more happy about this purchase than I thought I would be.
