13 of 13 people found this review helpful.

Spelt Healthy! has delicious recipes in every category from breakfast to dessert. Ms. Cosentino provides in depth research into the advantages of cooking with spelt, from its nutrition, taste, and is great for those with food allergies. The book also includes many recipes utilizing other whole foods and includes detailed information on the benefits of each of the types of whole food the recipes use. The recipes are delicious, easy to follow, and the ingredients are available either at grocery stores or in some cases specialty grocers like Whole Foods.

A welcome addition to personal, family, professional, and community library specialized cookbook collections. 5 out of 5 stars.

So many modern wheats have been genetically engineered for specialized uses ranging from 'pop tarts to envelope glue' that they have actually become deleterious to the health of many people. 'Spelt' is an organic 'bread' grain that retains its ancient genetic profile, is naturally self-enriched, especially high in B vitamins, and for those who have developed an aversion to modern wheats, far easier to digest. It is an all-around grain that enjoys an excellent flavor, is absolutely nutritious, and is suited to whole food dishes ranging from baguettes to delicate fruit pastries, from stuffed mushrooms to soups, and salads to pizzas. "Spelt Healthy! is a specialized cookbook that culinary expert Marsha Cosentino has compiled to showcase the versatility of this ancient grain in baking and cooking. There are more than 200 featured, kitchen-cook friendly recipes based on spelt. One of the more unusual nutrition informations provided are the Blood Type eating notations (A, B. AB, O). Another special feature is the section of 'Food Intolerances and Allergies'. There is even a 'Shopping for Spelt' appendix. The recipes range from Whole Grain Waffles with Spelt Sprouts and Fruit Bits; to Pao Doce (Massa Sovada or Portuguese Sweet Bread); to Coated Pan Fried Fish Fillets; to Chocolate Chip Florentines. Combining the features of a reference, a guide, and a recipe collection, "Spelt Healthy!" is a welcome addition to personal, family, professional, and community library specialized cookbook collections.

Diverse, wonderful one-dish meals. 5 out of 5 stars.
39 of 39 people found this review helpful.

This book if full of excellent vegetarian (suprisingly!) one-dish meals. The author's tastes run along my own lines. In this book you'll find recipes that come from Japanese, Indonesian, Indian and Thai roots as well as American eclectic innovations. The author has included main dish, soup and dessert recipes.

I'm not a vegetarian, but have been pleasantly surprised at how satisfying the dishes are. I never thought that vegetarian dishes could be so good. Rice is, of course, the common thread that ties all of the collected recipes together and the author has devoted the first chapter of the book to educating the reader about the different types of rice and how to prepare rice in a foolproof manner.

What I loved about the book is the way I changed my eating habits by getting hooked on the simplicity of the one-dish meals contained within, the flavors of the dishes (incredible) and the way I felt after eating (full, but not stuffed = more energetic).

This is my current favorite cookbook.

Interesting... should have been tested first 2 out of 5 stars.
8 of 8 people found this review helpful.

This is a pretty good source of information regarding cooking with... well, beans and rice, enough that it's worth two stars. However, the editing is hideous, there were several moments when the recipe directions were unclear (many things are simply assumed) and overall it seemed as if none of the recipes were actually tested by Ms. Layton. If you are already familiar with cooking, especially cooking from scratch, this might be a good book to get, especially if you have time for "trial and error". If you are short on either time or experience, better look elsewhere.

Editorial Review:

This cookbook is one in a series of books written on the subject of food storage. With the food shortage scares and upcomming events in the world, people are storing beans and rice as part of their food storage program. Because dry beans and rice store so well, people are storing large quantities of these food items. This book has 165 pages of wonderful recipes. Because beans and rice eaten together make a complete protein, they can be substituted for meat in the diet. This book has many charts on how to cook the various types of beans and rice, as well as many helpfull hin

Interesting, thorough, and practical. 5 out of 5 stars.
11 of 12 people found this review helpful.

The quality of the most recent addition to the Classic Beer Style series should not be a surprise. Allen and Cantwell discuss the history of Barley Wine, from Bass No. 1, to the modern brews of the American Micros. Barley Wine discusses the unique problems, and solutions, in brewing high gravity beers, and includes 11 (mostly) all grain recipes. The approach is thorough, but practical, and does not dwell on scientific technical minutiae. Also included is a section with details of the ingredients and brewing processes used in 20 commercially produced Barley Wines. This book will allow you to approach your next batch of Barley Wine with confidence.

Improved my most recent batch 4 out of 5 stars.

I found Fal and Dick's book to be one of the most useful of the Classic Beer Style series. It had the right balance of technical and historical information. I found the discussion of fermentation of BW to be helpful addressing the longer duration and the issues concerning attenuation of such a high gravity beer.

Editorial Review:

Finally, the definitive book on one of the world's mysterious beers that clearly explains the romantic term barley wine.

Daughter's favorite! 5 out of 5 stars.

Great book! My daughter is 3 1/2 and goes through the book page by page and wants to know if we have the ingredients and when we can make it. We have made 5 things out of it in one month-which is a lot as any busy Mom knows. It is just the right size too-not too big and overwhelming. Great gift idea, that is why I am buying 2 more! Discover the delights of cooking with whole grains.

U.S. Dietary Guidelines recommend that adults consume at least three servings of whole grains every day. Fortunately, whole grains are delicious -- as enjoyed in the outstanding and healthy recipes found in Judith Finlayson's The Complete Whole Grains Cookbook.

The flavors of whole grains vary from earthy to nutty and sweet. All can be appetizing on their own, marry well with a wide variety of seasonings, and add taste and texture to any dish. They also provide a variety of benefits such as reduced risk of diabetes, cardiovascular disease and obesity.

In this new book, Judith Finlayson includes whole grains from amaranth and buckwheat to Job's tears, quinoa and wild rice. There is information on each grain's origins along with its culinary and nutritional profile, buying and storage guidelines, and cooking methods.

Among the delicious and wholesome recipes:

  • For breakfast or brunch: buttermilk buckwheat pancakes; old-fashioned cornbread
  • For a departure from workweek fare: lemon lover's tabbouleh; Asian spiced beef with soba noodles; wheat berry salad with arugulav
  • Delectable main dishes: barley jambalaya; peppery shrimp with couscous; steak and mushroom pie with barley in whole F wheat crust
  • Yummy desserts: gingery shortbread; deep-dish apple pie with streusel topping; brown bread ice cream.

Each recipe includes a complete nutritional analysis. With tips for preparation and extensive sidebars, The Complete Whole Grains Cookbook guarantees a delicious and nutritious meal.

Whole grain adventure for the not-so-adventurous 4 out of 5 stars.
11 of 11 people found this review helpful.

I was curious to see what a cookbook aimed at everyday cooking with whole grains by normal folks who don't necessarily think of themselves as cooks would provide. Most of the books I've tried before now have definitely been for more adventurous cooks.

Many recipes in the Betty Crocker book use convenience products to make things easy on the cook who doesn't know whole wheat from cracked wheat. For example, the 'nutty silver dollar pancakes' use Wheaties cereal and Bisquick. However, other recipes do give you the chance to try out those whole grains you do manage to find in your travels through the grocery store aisles.

My one reservation here, however, is how the book's authors choose to define 'healthy.' For example, one of the reasons whole grains are better for us than processed grains is that they break down into sugars more slowly, resulting in more even blood sugar levels. So adding an entire jar of marshmallow creme to some popcorn and Chex cereal to make a snack would seem to obviate that healthful aspect of whole grains---yet the tip below the recipe lauds this snack specifically for its healthful nature. That seems a tad contradictory, and there are quite a few other recipes in this book that rely on relatively high sugar content to add flavor. On the other hand, at least they have moderated the saturated fat content.

I do have to hand it to them, though---the flavors of these recipes are consistently delightful. There's a gingered chicken over rice recipe that's just wonderful, and I'm not a big chicken fan. I've really enjoyed a sausage and vegetable skillet dish from here, and a slow cooker rice-and-veggies dish. So while some of these recipes do compromise a little on the sugar content, they definitely deliver on the flavor end of things. If you're having trouble convincing yourself to make the switch to whole grains, that might be a worthwhile tradeoff for you.

Editorial Review:

With this cookbook, the experts at Betty Crocker make it easy for you to include the goodness of whole grains in your family’s favorite meals. You’ll discover 140 delicious whole grain recipes for every meal of the day—including on-the-go snacks, convenient slow-cooker recipes, and super-fast 30-minute dishes—plus cooking tips and information on the different kinds of whole grains available, authoritative advice on the health benefits of whole grains, and 50 beautiful color photos.

OK 2 out of 5 stars.
8 of 15 people found this review helpful.

This cook book has great photos for every recipe and a good variety of foods. However, the emphasis is NOT on rice, but on different main entrees. Each recipe has suggestions for the rice to serve with the entree, but does not give detailed cooking directions for the rice. A disappointment.

Every one a winner -- and most in 30 minutes! 5 out of 5 stars.
7 of 7 people found this review helpful.

I have another book by Rick Rodgers, and I really liked it, so when I saw this one I thought I'd check it out. Five recipes into it I wanted to head to the kitchen and cook. Before this book, I didn't cook meals with rice very often. I do now. The recipes are not complicated, and I always have the ingredients in my kitchen. The recipes that say "Can be cooked in under 30 minutes" really CAN be cooked in under 30 minutes. I haven't encountered a dud recipe yet. All are delicious. Among my favorites are Shrimp and Green Beans with Peanut Sauce, Chicken and Asparagus with Mustard-Tarragon Sauce and Sirloin and Black Bean Chili (in under 30 minutes no less!). This book is a boon to all those of us who work a long stressful day, and then have to come home and cook.

Editorial Review:

Flavorful, nutritious, and easy to prepare, rice offers busy, health-conscious cooks a versatile base for dozens of terrific toppings. On Rice includes over 70 simple, reliable recipes for an international array of delicious sauces, stews, and stir-fries to serve over rice, most of which can be prepared in less than 30 minutes! With information on different methods for preparing perfect rice, a guide to the many exciting varieties of rice now available, and tips for using leftover rice to create fabulous desserts, this inspiring selection of seafood, meat, and vegetarian toppings proves that just about everything is nice on rice.
