WARNING--NIce Covers but Nothing Inside 1 out of 5 stars.

Suffering a severe flareup of ulcerative colitis makes one a desperate person. There's enough conflicting diet information on the internet and from the medical machine to completely confuse anyone. When I encountered this book's promotions, I immediately ordered it from Amazon and waited anxiously for it's arrival. At the same time I began to look at the "low residue diet". Information on low residue diets is very limited and searching the web is the best way to find it. I applied the princicples of this diet to my food intake while awaiting the arrival of my new cookbook. I began to feel better within a day. When my order arrived, I looked through the book, closed it, put it back in the box and returned it.
The book contains no information on any of it's recipes' nutritional or fiber content. Information on fiber content and nutrition are some of the most important things that a sufferer or ulcerative colitis needs. Some of the recipes far excede the recommended fiber content and could make things much worse.
If you are having problems with ulcerative colitis, buy some rice, apple juice, herbal tea and canned chicken or fish. Do your research and go from there.

Spelt is one of the most versatile grains around, but most people have never heard of it. This cookbook offers diverse recipes for using whole kernel spelt as well as spelt flour to enhance a wheat-free diet. We highly recommend it.

This book has multiple personalities. One is a personal story of coming to terms with having celiac disease. Another is lists of resources for the gluten intolerant. And a third kind of mixes the two -- tells how the author was able to come to terms with things because she developed strategies for living and eating.

First of all, it's really important to know that a lot of the information about what you can and can't eat is just plain wrong. Some of that is because these things become outdated quickly, but some is less understandable than that. For instance, she says that while cream soups are likely to have gluten in them, broths won't. That's totally untrue -- most of the common brands of broth do have gluten in them. And it's a particularly odd mistake to be making given that on other things, she advocates being far more careful than the standard resources do. Like she says don't use distilled vinegar because it MIGHT be distilled from wheat, but again, everything else I've read on this subject says that 1) it's probably not distilled from wheat but more importantly 2) the distillation process removes gluten.

So if you're going to get this book, get it for the personal part, about how she dealt with her diagnosis. It's pretty entertaining and there's some value to being reminded that you're not the only one. That said, while I think it's valuable to have something to read in that area, I'd say she's more than just slightly eccentric. A lot of her stories about how her friends reacted to her diagnosis seem like extreme worst-case scenarios -- suffice it to say that I was diagnosed long before I was as sick as she describes herself as having been, yet my friends were a lot more sympathetic than she says hers were.

Finally, with regard to her strategies for living. Another review here mentions that they're sort of for the caviar set, and I have to agree. These are instructions for someone who not only has a LOT of money to spend on special-ordered foods, but who feels comfortable asking restaurant staffs to go way out of their way to accommodate her.

On the whole, I'd say there are better resources than this book. Some of them are online, others are informational books like Shelley Case's "Gluten-Free Diet: A Comprehensive Resource Guide." But if you want to read everything you can on celiac disease and living gluten-free, this is at least entertaining.

I used this book CONSTANTLY when I worked at a natural foods co-op as a baker.There are endless types of bread recipes from sweet yeasted breads to savory breads.There are TOO many options for vegan substitutes!!It is so wonderful to have access to so many yummy baked goodies that are healthy.I HIGHLY recommend this book for all bakers.

This book has the best bread recipies using all natural ingredients for good health. Lots of useful substitutes for people who have special dietary needs. The Best. I did find the constant put down of our capitalistic system of free interprise uncalled for in a cook book. It seemed that the authors primary goal was to sell socialism.

This is the book I learned to bake with as a vegan child. I learned firsthand that not every recipe is a winner, but I still go back to the pages stained with over fifteen years of use. I've wound up adjusting and revising my favorites, but I would still recommend this as a good reference, especially the section on substitutions for ingredients (if the reader is vegetarian or vegan - nothing really replaces butter and chocolate).

This cook book has great photos for every recipe and a good variety of foods. However, the emphasis is NOT on rice, but on different main entrees. Each recipe has suggestions for the rice to serve with the entree, but does not give detailed cooking directions for the rice. A disappointment.

I have another book by Rick Rodgers, and I really liked it, so when I saw this one I thought I'd check it out. Five recipes into it I wanted to head to the kitchen and cook. Before this book, I didn't cook meals with rice very often. I do now. The recipes are not complicated, and I always have the ingredients in my kitchen. The recipes that say "Can be cooked in under 30 minutes" really CAN be cooked in under 30 minutes. I haven't encountered a dud recipe yet. All are delicious. Among my favorites are Shrimp and Green Beans with Peanut Sauce, Chicken and Asparagus with Mustard-Tarragon Sauce and Sirloin and Black Bean Chili (in under 30 minutes no less!). This book is a boon to all those of us who work a long stressful day, and then have to come home and cook.

Very few of the recipes inspire me to want to make them. The only ones I am even tempted to try are the couple of oat recipes. There are a lot more rice recipes than any of the other grains. The book is very uninspiring. There are no photos either which might have helped. I must add that I am not a vegetarian but was looking for ways to prepare grains and get more of them in my daily cooking. But OAT GROAT SOUP WITH MUSTARD AND THYME, just doesn't sound very appealing to me, for example.

She lists buckwheat, millet, oats, quinoa, rice, amaranth, job's tears, teff as the grain categories. No wheat or corn.

I found this book a little hard to use. I don't really like the format which is like a textbook for a cooking class but what really frustrated me is that the index isn't right. I looked up several things and was brought to a page that had something totally different.

The information on cooking methods and results was interesting but I wasn't that impressed with the recipes. A lot of them were very strange and said to be results of cooking class improvisation experiments. I would have preferred more basic and traditional recipes with just a few of the odd ones thrown in.
