Just simply blowed away by negative reviews of this book. I grew up on a small farm when you could still make a living there. Our rural community was much closer, neighborly, trusting, and thick with the smells, sounds and sights of country living. I left home at 18 traveling the world in our military and ran from that "work ethic and way of life" on the farm. Lived in some of this worlds largest cities discovering first hand all the reasons why country living was "paradise on earth."
Oh, I've heard all the urban preachers and their reasons why they love the city. I lived it!!!!!
Is there any wonder why higher income people are moving into rural america! Land prices are thru the roof, they come here with their city mind, mouth and motivations. Why? Because they want a view and try to escape all those negative things in the city. Not to mention raise their kids in a small coummunity in hopes of everyone and everything turning out ok. They don't understand farming communities, our culture, our history nor our way of life.
Ah! We are free! But wait, they come here and destroy our pastoral settings and fill the land with strip malls, fast food joints, quick marts and infrastructure that makes it "country no more."
If any farmer holds out in this "developers dream of a jauggernaut" these new "country folk" start raising cain about the country sights, smell and sounds and want the farmer gone.
Wendell is right on in this book. Oh sure there are bits and pieces of his opinion that rub some liberal wrong. But hey I'm sure a few conservatives cried foul too.
Open up your mind and heart. Look at the facts. Can you trust corporate america? Big brother? Individual selfishness and greed? A bank director and his real estate developer friend once told me that they had joined forces with our county commissioners and planning commission community and preach their "farming is dead lets split up the land and develope the farms" gospel. If they build people will come! Hmm, sounds like a movie I once saw. They are building and people are coming.
Reality of wendell's book tells it like it is. There has been a movement (I like the word conspiracy better but that will alienate a few) to industrialize american agriculture since 1940's. The corporate machine and its disciples have forclosed on many family farms, driven off the "inefficient", destroyed many lives, all in the name of progress!!!!!!
It is all about just a select few industrial size farmers doing business as corporations, corporate chemical company profits off corporate farmers, college/universities gifted $$$millions of dollars to report and publish thru sound science (you don't believe that do you?) the wonderful benefits of more food with less land, by less farmers and healthier for you. And oh yes, our environment will be cleaner because splicing plant genes with chemical compounds and breeding new GMO (genetically modified organisms)foods means the farmer uses less chemicals (is that what the chemical company wants to do, put itself out of business for the sake of humanity? -- remember a portion of your 401k is tied to that companies performance and if they don't do well, neither will you) Roundup Ready Corn/beans/cotton/wheat is here. Spray roundup on your lawn and it does what? Dies!! Put a teaspoon of pure roundup in your coffee each morning and stir, how long before you may come up with cancer or some other ailment? No! Corporate America and our Universities have managed to fill our food pipeline with RR products for years and you consume a portion of it everytime you dine. Just a few steady PPM on a weekly basis, you'll be fine and live to a ripe old age?

    A must for Raising Pigs...Tonasket, WA 2002 5 out of 5 stars.

    This is a must for pig raisers! I should know, I raise 5 breeding sows and write my own farm books, and I even mention this book in my resources section! It's that much of a needed book for pig farmers. Every subject you want to know about pigs is found in this book, from showing at the fair, breeding the pigs, to the business aspect of running a farm...

    Overall, I would consider this a good but not great book. I was left with a vague feeling of incompleteness after reading it.

    For example, it had several pictures of pigs with 'good muscling' (or 'nice topline' or 'great frame' or whatever). Granted, I'm a novice at pigs but it would be nice if it had pictures (preferably side-by-side) of an example of 'poor muscling' (or whatever) so I can see the difference.

    I also found the 'butchering' section to be lacking. For example, when 'scalding' a carcass, it only talks about dipping the entire carcass into the hot water. Nowhere does it even mention dipping out the hot water and pouring it over the carcass (which is more manageable for a large pig). And the actual butchering (cutting up) part is minimal ('separate the carcass into the larger primal cuts with a butcher's knife').

    My impression is that this book is geared more toward a small farmer wanting to raise a small herd for profit as opposed to a homesteader wanting to raise 1-3 pigs as food. It's just a different mindset. So - if you're a farmer - I would rate this book a '5'. A homesteader would still find it useful but not complete.

    (I can't believe that pot-bellied pigs aren't even mentioned anywhere.)

Through a fascinating mixture of cultural and scientific history, food politics, and culinary detective work, Bee Wilson uncovers the many ways swindlers have cheapened, falsified, and even poisoned our food throughout history. In the hands of people and corporations who have prized profits above the health of consumers, food and drink have been tampered with in often horrifying ways--padded, diluted, contaminated, substituted, mislabeled, misnamed, or otherwise faked. Swindled gives a panoramic view of this history, from the leaded wine of the ancient Romans to today's food frauds--such as fake organics and the scandal of Chinese babies being fed bogus milk powder.

    Wilson pays special attention to nineteenth- and twentieth-century America and England and their roles in developing both industrial-scale food adulteration and the scientific ability to combat it. As Swindled reveals, modern science has both helped and hindered food fraudsters--increasing the sophistication of scams but also the means to detect them. The big breakthrough came in Victorian England when a scientist first put food under the microscope and found that much of what was sold as "genuine coffee" was anything but--and that you couldn't buy pure mustard in all of London.

    Dr. Margalit's book is an easy to read primer useful for any wine student studying the technology and chemistry behind winemaking. His prose style intersperses the scientific elements with winemaking techniques from the grape ripening stages through the final production and quality checks of the produced wine. He defines most of the key acronyms and explains in simple to read precise language key winemaking concepts, using many graphs and well-placed illustrations. Topics are indexed well, and a series of appendices at the end of the book allow the reader to continue reading forward the topics at a high level, while being able to refer to added technical detail available when needed. The sections on wine acids are very concise and to the point. There is a lot of real world information in here, distilled from many more technical texts not as easy to read as this one.     This book starts with the framework for grass finished cattle production, then looks at day to day operation, followed by some more detailed points and problem shooting, before closing with marketing. This is a great guide and an enjoyable read. I liked it better than Pastured Poultry, but both are great books for those interested in the future of the farm buisness.

    I recommend Salad Bar Beef to anyone in the country that wants to produce beef worth eating. Salatin is extremely open and honest about everything he does on his farm, and is very passionate about green farming.

    This book does not contain simple homesteading information; it is a manual on how to maximize profits, production, and soil fertility, while decreasing disease and stress(both cattle stress and farmer stress). When I said it does not contain "simple homesteading information", I did not mean that this book is complicated. Salad Bar Beef is actually one of the easiest agricultural books to comprehend.

    Although easy to comprehend, you can not by any means read this book with a conventional mind. Pretend you do not know anything, and carefully consider Salatin's points.

    If you begin reading this book and get the feeling that Salatin is strong in the way he presents his points, that's because he is. Many do not like being convicted, but the truth is, if you're never convicted, you never learn. Salatin makes his views clearly seen in his books, and every one of them are good and practical. Personally, I do not like reading a book in which the author is weak in his presentation of views.

    I have never read agricultural books as good as the ones that Salatin has written, and I recommend them to anyone interested in farming naturally. The books are high-priced, but worth double that. Before long I will raise poultry and cattle using Salatin's methods, using Salad Bar Beef as a manual. Too bad I can't give Salad Bar Beef six or seven stars.
