Editorial Review:

Twenty-two years ago, author Peter Venison's Hotel Management became a best seller in the hotel and tourism industry, labeled a "must read" on the curriculum of every hotel school, and landed on the bookshelf of every hotel manager. Despite many requests for a follow-up volume, Venison declined, on the basis that he had nothing new to say. Now he does.

Holed up for several weeks in five star hotels while concluding a complicated business deal, Venison realized that the standards offered by the industry still fall short of perfection. As a result, he has put pen to paper to produce this handy catalogue of suggestions to hoteliers, based upon his considerable personal experience as a hotelier and perpetual hotel guest.

100 Tips for Hoteliers guides you from the inception of a hotel to its opening and operation, offering practical tips for each stage of the journey. It should prove equally useful to hotel school students as a checklist of what they can expect, and also to practicing hotel managers as a reminder of their responsibilities.

Proceeds from the sale of 100 Tips for Hoteliers will be donated to the Duke of Edinburgh Cup charity.

Exactly what I needed. 5 out of 5 stars.
1 of 3 people found this review helpful.

This book was exactly what I needed. It contains all the information I needed. A great learning tool. The part of the book I am most impressed with is the section of infant nutrition. It explains month by month what you can feed your infant. An example is the 4th month of life, you can start your child on iron enriched cereals.

A great guide for nutrition. 5 out of 5 stars.

Very knowledgable book on nutrition including information for children and older adults. As a culinary professional I wanted to read up on the latest nutrition especially on soy and to improve my diet. I am also considering taking some courses, one of them is Sanitation. The Study Guide for the National Servsafe Exam by Dr. Leonardi was a book I found also very knowledgable and I am certain that it will help me with my exam once I decide when to take it.

Editorial Review:

Nutrition for Foodservice and Culinary Professionals is the must-have reference for the most thorough, up-to-date information on nutrition and diet. New and expanded material in this Sixth Edition addresses important topics such as the 2005 Dietary Guidelines for Americans, MyPyramid, balanced menu options and recipe ideas for morning and afternoon breaks, basic principles of food presentation, meeting special dietary needs, weight management, and much more!

This is an excellent resource for newbies AND veterans. 5 out of 5 stars.

Just don't look at the cover (the cheeziest cover I think I've ever seen on a book; I literally had to tear mine off to avoid laughing or having any of its "uncoolness" rub off on me).

Anyway, I own a pretty sucessful bar in Santa Barbara California (Indochine on State Street) and bought this book when I was reading up in anticipation of starting a new restaurant (w/ a bar in it).

While the book assumes the reader knows little or nothing about the business, it has a wealth of information for readers of all levels of experience. I was apprised/reminded of numerous aspects of the biz that caused me to tweak my own bar (to largely sucessful result). Quite simply, this book made/saved me significant money.

I highly recommend.

I think this book would be great for any student 5 out of 5 stars.
6 of 6 people found this review helpful.

I recently took a hospitality managerial accounting class at school and found this book extremely useful. There was so much in-depth information, along with illustrative examples, case studies, and useful problems and exercises. The student workbook also came in handy and helped me to pass the class.

Many examples from the hospitality industry but... 2 out of 5 stars.

I have been teaching all the chapters of this book for 9 months. There are many examples from hospitality industry and, in this sense, the book is indeed fine. It is mainly indented for students who would like to learn the "very basics" (in order to "pass the course") and apply them in practice. From a more academic point of view, the book suffers in many respects. It is rather wordy and poor in substance since there are no clear-cut definitions of the concepts used. Further, and this is very negative for me, there is no even the least reasoning or proof for any of the formulae used. Thus, in the best case, it encourages the logic of "apply the formula and interpret the results". Also, some accounting identities and formulae are written simply in an unacceptable way, from mathematics (and logic) point of view. There are some mistakes in the exercises and the formulation of many exercises, especially of the large ones, is unnecessarily complicated, sometimes the answers in the answer sheet are wrong and the presentation of solution is occasionally chaotic. Since no constructive arguments are developed for the building of the formulae, students are "forced" to apply formulae in a "mechanical" way . The result is that, even in the least modification of the problem under consideration, students try to find "the" formula to apply it. Of course, we cannot blame only the book for this since many students convey this "idea" from their years in school. The book simply follows this learning stance. Due to lack of a constructing reasoning, students do not learn to modify a formula or to built another one from first principles, according to the problem at hand. Hence, not a really constructive thinking is developed. I am looking for other, more substantial alternatives.

Editorial Review:

The success of every business in the hospitality industry depends on maximizing revenues and minimizing costs. This Ninth Edition continues its time-tested presentation of fundamental concepts and analytical techniques that are essential to taking control of real-world accounting systems, evaluating current and past operations, and effectively managing finances toward increased profits. It offers hands-on coverage of computer applications and practical decision-making skills to successfully prepare readers for the increasingly complex and competitive hospitality industry.

Better than ever -- and it was great before! 5 out of 5 stars.
4 of 4 people found this review helpful.

Before you go, while you're headed there, and even after you've moved, you'll find "The Expert Expat" an indispensable guide to living outside your country of citizenship. If you have the time or money for only ONE book, this is the one to purchase. Frequent "asides" from experienced expats illuminate the suggestions and information given in the ten chapters. Companies and organizations sending employees abroad should make sure families are given a copy of this book along with country specific material as soon as an expat assignment is accepted.

the first one was good, this version is even better! 5 out of 5 stars.
2 of 2 people found this review helpful.

I think some of the people who reviewed this book must be talking about the first version, published several years ago. This version does a great job of covering modern means of communication, telecommuting careers for expat spouses, etc. It also addresses the increased security concerns of a post 9/11 world. It is no way outdated, as far as I can see.

The strongest part of this book is its accurate description of the challenges faced by "trailing" spouses. I so wish that I had had this book before our first move overseas. It would have helped a great deal to understand the stages that I was going through, and the advice on getting connected at post wouldn't have hurt, either. There is nothing like personal advice from those who have been in your shoes!

Secondly, the chapters on cross cultural adjustment and communication are very well done. Again, nothing like advice from those who have been there. The tips are presented in a very matter of fact, non-judgmental way, with plenty of illustrative anecdotes, and with acknowledgment that there are some things to which we may never adjust, no matter how hard we try! This book does not tell you to try to blend in, but rather to find your own place as an expat within the local culture. That is the most we can realistically achieve in most foreign countries, and not a bad place to be, as a matter of fact.

Other chapters on moving with kids, with pets, etc. are chock-full of useful information gleaned from the practical experience of both authors and their many experienced expatriate interviewees.

I've lived in six countries as an expat, and I would highly, HIGHLY recommend The Expert Expat to anyone preparing for an overseas move, especially spouses!

Editorial Review:

This book not only covers the practical aspects of relocating; it enters unchatered territory, laying emotional and cultural groundwork to help the expatriate thrive.

A Good Read ! 4 out of 5 stars.
8 of 8 people found this review helpful.

Author John Yokoyama, owner of Seattle's World Famous Pike Place Fish Market, explains how he changed his attitude toward his employees, embraced a new way of treating people, led his employees in a fundamental directional shift and built a widespread reputation. This isn't a business "cookbook" that tells you step by step what to do. As Yokoyama insists, you can't just copy someone else's success. You must be an individual. However, the story of his turnaround and triumph at World Famous Pike Place Fish Market is a good read that illuminates the need for leaders to treat their employees, as he says, as people, not as human resources. Although the Market is getting to be as overexposed as a fish left out in the sun, we welcome this first person exposition from the owner. After numerous published accounts about the Market, the saga of how Yokoyama empowered employees, promoted his business and changed his style comes through best in his own words.

Editorial Review:

n this revealing business advice book, the magic of the World Famous Pike Place Fish Market proves a dynamic example of what a group of people can create when they are aligned and living a powerful vision. Here for the first time, owner John Yokoyama explains in his own words just how he transformed his business into a workplace that is renowned worldwide. When Fish Fly offers Yokoyama's cohesive strategy for achieving world famous results for owners, managers, and front-line workers alike. Once you understand the generative principles behind the World Famous Pike Place Fish Market you, too, can develop a culture that leads to excellent employee morale and legendary customer service.

Well-balanced, lively, informative, and entertaining 5 out of 5 stars.
19 of 20 people found this review helpful.

One of the things that struck me most about this book is that it seems perfectly balanced. By this I mean that it covers all the general business angles of running a coffee bar, but it never loses sight of its coffee-oriented focus. While there's certainly plenty of information that people running other businesses would find useful in here, you'll never find yourself thinking that you could have gotten the same information out of a more generic business or restaurant business guide. Everything focuses on the particular application of principles to the unique issues and problems that face the owner and operator of a coffee bar. Even when discussing cross-promotion and various forms of publicity the book discusses things that are likely to work best with your products and services.

You won't just find information in here on business plans, licensing issues, equipment, suppliers, staffing, and publicity however. There are guides to roasting beans (in case you want to create your own blends, or just want to understand what you're buying), creating a wide variety of coffee drinks and related treats, and cultivating repeat customers.

In addition to the vast wealth of information, the attitude with which this book was written is fantastic. It's practical yet positive, realistic yet optimistic. It livens things up with a dry wit yet never allows the humor to get in the way of the information it's trying to convey. It will make you excited about even topics like marketing your business without ever coming across as empty cheerleading.

I quite enjoyed reading this book, and have to firmly remind myself after reading it that no, I really am not the kind of person who can go out and start such a business. Because after reading all of this handy and fascinating information, the prospect is delightfully tempting!
