5 of 5 people found this review helpful.

I am an Interior Design student and found this book very helpful in completing a hospitality design. It provides a breakdown of the areas of the hotel, the different types of hotels, and the type of customers that use them. It really helped me in laying out the floor plan. There are also some awesome color pictures of fabulous hotels in the world. I highly recommend for anyone interested in hospitality design.

Editorial Review:

A new edition of the "bible" for design, planning, and development in the hospitality industry. As its predecessor has done for the last fifteen years, this book will serve as the "go-to" guide for architects, planners, and developers involved in hotel projects. It offers an overview of the industry; in-depth analysis of emerging trends; the latest how-to; and essential design, planning, and development criteria. 250 illustrations. The previous edition was published under the title Hotel Planning and Design.

Excellent resource for anyone in or interested in "the biz" 5 out of 5 stars.

I own a pretty sucessful bar in Santa Barbara California and decided (about a year ago) to try my hand in the Restaurant Business.

Before I could turn back, the lease was signed, money was coming in...there was no escape. I was pretty terrified.

I decided to learn everything I could about design, management, success' and failures. The principal way I did this was to order an armada of books about the business. In all I think I bought roughly 20 books. Most of them were somewhat helpful, but none of them approached the value of this fine book.

Chronicling almost 3 dozen successful cases from such diverse business' as China Grill and Farallon, every aspect of the business is covered - design, capitalization, management organization, revenue and profit - FANTASTIC.

I can't recommend this book any higher. It was an enormous help to me in putting my new restaurant together.

bittersweet tinge 4 out of 5 stars.
6 of 6 people found this review helpful.

Nichols gives a nostalgic retrospective on the long live and prodigious output of Wayne McAllister. In no small part, the book walks the reader back through the last 60 years of urban commercial architecture in the southern California region. McAllister lived a very long time, and he was responsible for designing iconic landmarks that at least in the hazy afterglow of memory, epitomise a classic time.

The book is replete with many photos and illustrations, the cover being an example of the latter. The most common image, if not exactly the most enduring, is Bob's Big Boy. I remember in the early 80s, when I arrived in Los Angeles, how these fast food restaurants and their mascots were everywhere. Even getting a cameo role in Terminator. Alas, as the years wore on, the Bob's Big Boys got steadily deprecated. Not many left.

Another type of McAllister's work has also fallen into the tar pits of history. He designed many of the drive-ins that dotted Los Angeles. And which were an indelible part of many teenagers' experiences. Sadly, most are long gone, brought down by the VCR and its successors. At least in the book, you can see several as they once were, at the peak of their glory. Actually, no matter how pretty the architecture, the sound was often bad, the food dreadful, the movies second rate and the nearby cars often had loudmouths.

Great book. But for some readers old enough, there is a certain bittersweet tinge to all this.

Editorial Review:

The work of late commercial architect Wayne McAllister (1907-2000) is responsible for much of the character of Southern California today. His Fred-and-Ginger nightclubs and glinting-steel-and-blazing-neon circular drive-ins brought Hollywood to life. His Sands Hotel in Las Vegas became the home of the Rat Pack; the mythology of Frank Sinatra, Dean Martin, and Sammy Davis Jr. owes a great deal to the swank glamour of the Copa Room and the Sands Hotel, one of McAllister's finest.

Formica in Context 5 out of 5 stars.
35 of 36 people found this review helpful.

Alan Hess has produced a significant analysis of 50s architecture and design. The title suggests that Hess' focus lies in coffee shop architecture; however, the book is in fact much more diverse. Social trends in post-war Los Angeles, such as automobile and housing design, do much to provide context for Hess' assertions and observations. This is the true value of Hess' work. He does not provide a simple nostalgic or anecdotal look at the overly-regurgitated 50s; rather, he seeks to provide a thoughtful analysis of an indigenous American architectural style. Ultimately, Hess seeks to defend a style that remains either maligned by proponents of "higher" architechtural forms, or reduced to simple nostalgia and trivialization. Hess succeeds admirably in this pursuit. This book is recommended for all who require a more thoughtful and contextual analysis of American popular culture, history, and design.

Editorial Review:

The euphoria about the future that followed World War II permeated the outlooks of architects, who, influenced by Frank Lloyd Wright and with ready access to remarkable new construction material and building techniques spawned by the war technologies, faced the intriguing prospect of redesigning the post war world. Initially the futuristic designs were outrageous, and detractors labeled these structures the Googie School of Architecture after a particularly outlandish coffee shop in Los Angeles. Googie would seem far from outlandish today as those once controversial design elements have become commonplace in both commercial and residential architecture. Author Alan Hess traces the evolution of these early post war designs in a lively yet learned essay profusely illustrated with both color and black-and-white photography. Googie:Fifties Coffee Shop Architecture is a nostalgic trip back to the Fifties and a look forward at the architectural future.

Excellent and practical guide. Invaluable reference work. 5 out of 5 stars.

A friend purchased this book for me one Christmas. As a facilities consultant with several projects a year relocating commercial organisations, it's probably the most useful book I've had the pleasure to use - the forms are comprehensive and can be adapted for specific requirements. A worthwhile buy for anyone in this field.

good book. wrong title 2 out of 5 stars.
3 of 3 people found this review helpful.

This is a nice book for viewing bars that have already been designed. However, I wanted to actually design a bar and this book didn't help me with that at all. Good book. Nice pictures. But if you are looking to actually design a bar, then this book will not help. This book would have been more accurate if it were titled "the world's best designed bars."

Editorial Review:

Features 100 bars, some freestanding, others in nightclubs, hotels, and restaurants. This title contains photos illustrating the creative use of lighting, atmospheric decor, fixturing, high-tech visual effects, and floor treatments.
