The book goes over the information quite thoroughly. However, there are a few things that can be improved upon. The book only mentions one method of doing things while there are actually several that make more sense.
The answers in the back of the book help you check your work, but it does end up being a crutch that you lean on (once you figure out there are answers there).
A lot of good information, even if it is a high-school level book used in colleges.

Hi, I would like to tell you how much I enjoyed the Business Math book. The book was so fun and easy to catch on to that before I knew it I was done. This book is thick so you would think it would take you months to do but it dosent.The book is designed as a teacher first they explain the work and give you examples then you do the work and refer to the examples as you would a teacher so thank you for writing this book Colman Goozner.

1) Overview of Topics Addressed
For graduates of the Culinary Institute of America (CIA) who are about to enter the professional world, this book is an easy way to brush up on basic mathematic skills before entering the job market. This 383 page book covers math topics such as addition, subtraction, multiplication, division, fractions, solving percent problems, statistics, business graphics, and measurement systems English and Metric. It helps the student compute business records and transactions such as invoices, purchase orders, stock records, and time cards. Students can also learn to calculate the wages of employees with true-to-life word problem scenarios. For example, "Jack Green is paid $7.25 an hour for a 40-hour week plus time and a half for overtime. Last week he worked 45 hours. How much was his gross pay? Green worked 40 hours of regular time plus 5 hours of overtime". By practicing word problems that are realistic to the profession, this book helps people with basic skills in the restaurant industry.
2) How the Topic Relates to the Hospitality/Restaurant Industry
The hospitality/restaurant industry, according to the CIA Course Catalog 2004-2005, is an "industry that generates an estimated $440.1 billion in annual sales in the US." This book provides chefs a review of fundamental math skills which are imperative for running successful restaurant businesses. It teaches checking and accuracy methods, as well as shortcuts in business computations. "Anyone working in the business world must have a thorough knowledge of multiplication. When you are given the number of items purchased and the price of each, you find the total cost of the purchase by multiplication. Discounts are found by multiplication, as are sales taxes". It provides a practical review of applications to the business world. "Division is widely used by both businesses and consumers. In installment buying, the monthly payments are calculated by using division. When merchandise is purchased in quantity, the unit price is found by division". By using step-by-step explanations and exercises based on forms used in business and word problems drawn from actual business situations to reinforce skills, this book presents case problems from retailing, purchasing, management, and finance which are directly transferable to the hospitality industry.
3) How the Information is Useful to Me as an Executive Chef
This information will be useful to an aspiring executive chef like me because I will be responsible for all aspects of managing the kitchen and kitchen personnel. As an executive chef, I will have to ensure the proper handling, storage, quality preparation, and presentation of all menu items. I will also have to have a thorough knowledge of coordinating the purchase of all labor costs and develop profitable menus. "Many business transactions involve fractions, or parts of units. Many items are sold in pounds or fractions of a pound, in dozens or parts of a dozen. Hourly wages are computed with fractional parts of hours, and overtime pay is usually figured an 1 1/2 times the regular rate". I have to understand the fundamentals of mathematics in order to maintain and control food and labor costs. It is a useful book for the CIA student or graduate because it covers all areas of business mathematics. It starts with decimals and whole numbers. Like building blocks in the CIA curriculum, the book brings students along, bit by bit, through fractions, percents, statistics, and equations, to specifics of business-related mathematics applications such as payroll, discounts, markup/markdown, interest, credit, depreciation, inventory, insurance, and taxes. Procedures, rules, and formulas are broken down. I recommend this book to anyone in the restaurant/hospitality industry professional because it is easy to follow.

Another fine book by Schaum's outline. For anyone who has lost touch with the world of statistics, this book is a must read. It has clear definitions, examples and complicated explanations if you wish to dig deeper. I recommend this book to all college students, undergraduate and even MBA students. For financial analysis, marketing, and social research, this book is wonderful.

Most of the content deals with "easy" math...+, -, x, etc. Most textbooks have directions that don't really explain anything. This book has very easy step-by-step instructions, and Examples to help understand them. I recommend this book to anybody who wants to learn -- or relearn -- how to reconcile a bank statement, figure interest on a loan or payment, figure out the due-date on a 90-day loan, etc.

from fractions to compound interest 4 out of 5 stars.

The text proceeds from basic level maths to give the reader a solid grounding in what is needed for an undergraduate or perhaps high school level business course. When I say basic level maths, it really does. By commencing with a chapter devoted to manipulating fractions. I do find the chapter a little curious. Given that the intended reader is at least in high school, the chapter should be totally unnecessary. This also applies to another early chapter, on writing decimals and fractions as percents. Primary school stuff. Grades 3-4 roughly. A typical high school student should reasonably have this down pat. Or maybe some do not, given the wide variance in today's schools and in students' preparation. Still, if I had been the author, I would have omitted these 2 chapters.

A chapter on taxes uses a US Internal Revenue Service Form 1040 as a good relevant example, to motivate the reader. It has the salutary effect that if you understand the chapter, then it can remove some of the dread and mystery of doing taxes.

Another chapter, on risk management, educates the reader on different types of insurance, like for cars or life. Also useful for many readers, as they are quite likely to need car insurance and one day life insurance.

The maths starts to get a little more involved, when simple interest is replaced by compound interest. Several important applications use this, including when you have an annuity. By this time into the text, a calculator would certainly be handy.

The maths covered here is basically everything up to, but not including, calculus. The chapters have problem sets and some answers, which helps the book's suitability as a school text.

Although published in 2007--a year during which the Real Estate Market took a significant nose dive-- The Real Estate Math Handbook: Simplified Solutions for the Real Estate Investor proves effective for serious investors, including any current survivors of the recent slump who had enough capital to stay in the game. Others who may find this book useful: individuals who currently own or wish to purchase a home, amateur students of mid-level to advanced mathematics, and prospective graduate students preparing for the Graduate Record Examination (GRE).

A comprehensive, mathematical tour-de-force; this book explains the A, B, C's of Basic Mathematics, Interest, Investment Mathematics, Real Estate Mathematics, Income Property Valuation, Financing Mathematics, and related Excel Functions. A stellar introduction by Ken Lee, a Real Estate Broker, Author and Guru, excites and informs the reader. Since Lee includes a detailed description of each chapter's contents, readers can either opt to work through the book start to finish, or select and study certain chapters of interest.

Strong aspects of this book include: clear, detailed explanations of complex mathematical concepts; corresponding tables of information and data; demonstrations of how to apply some of the mathematical principles described; and the Appendices, which include excellent quick references. Readers will also find the chapter on Excel functions a useful and efficient time saver. Otherwise, each chapter of the book is significantly lengthy; readers should allot several hours to work through each of them. Also, the book does not contain any practice exercises (besides the examples, which already reveal step by step instructions and answers), which might have aided the reader in immediately applying the skills that he or she learned from the book. is a must have for anyone serious about becoming a Real Estate Investor, and is highly recommended reading for anyone who currently owns or plans to purchase a home.

An elementary approach to a college class 1 out of 5 stars.

I am teaching a business math class and was issued this text book by the college. While reviewing the book I found it to be more confusing than helpful. I found the majority of the ideas presented in the book to be of common knowledge. Rather than presenting the concepts in the book in an analytical manner, the author uses a personal narrative to convey the ideas. The author introduces new concepts with successive chapters, but does not explain how these concepts are derived. The author explains concepts at face value, rather than explaining how the concepts come about and how to apply them to other situations outside of the ideal situation. The first 6 chapters or so, out of a total of 22, are a review of basic math skills starting with addition and subtraction of whole numbers and continue to basic uses of percents. In addition to those 6 chapters, more of the successive chapters become redundant and are not presented in a logical order. Integrated into the text are numerous amounts of extraneous articles that are meant to reinforce the underlying point, but instead simply add bulk and distraction to the text.

I found that the concepts of the book are poorly presented and are not explained thoroughly. I would STRONGLY recommend not using this book, especially for a college level business class. A person with little to no everyday business experience would find this book to be very simple. In my opinion this book is primarily geared to a 9th grade level education in a public school system and not a college level class.
