I bought this book for my mom year's ago when I was a kid...some 20 years ago. The blueberry, pumpkin and cornbread muffins are a family favorite. I have my own copy now, and always have an extra or two to give out as gifts.

A friend lent me this book three months ago and I kept making excuses for not returning it. In the end, she came for lunch, and feeling guilty I thought I would just write out my favourite recipes, and ones I wanted to try ... an hour later and I was still writing! She came for lunch (I served Corny Bread, my favourite so far) and during dessert I was STILL writing. She felt so bad, she told me to keep it longer. She also suggested I tried Amazon, and here I am and have ordered all the books in the series, plus copies for some of my friends. This is the best Bread Machine Cookbook. It is simple, with no uneccesary information. The joy of Bread Machines is that once you have done a couple of recipes from your Instruction book you can cook anything and don't need to be told the same information over and over again. I love every recipe I have tried so far from this book. Everyone with a bread machine should have one!

As an atheist I was wary of this book, but I actually enjoyed reading Curry's stories and Jesuit histories. The recipies are fantastic - well written and all have been successful so far. The only complaint I have is that the font in the recipies is too small, especially the fractions! Great book, great author.

I will never forget when I stumbled upon this cookbook. It was laying on a table at the Tulsa Public Library and since I was currently interested in the Jesuits and their Cathlocism (I'm married to a New Testament major) I picked it up. I had been selling my egg bread loaves to neighbors and as a new bride, hadn't any other cookbooks than the Better Homes and Garden, thus was interested in more recipes. After reading it cover to cover, I squeezed the money out of our meager college budget, I bought this book as soon as I could afford it. I have a great deal of affection for this book as I have baked from it for over eleven years and have had nothing but success and a great deal of raves from family and friends alike on the results.

Since I always save my five stars for a book that's a good buy for the frugal at heart, I can recommend it for no other reason that it is a bargain as it is really full of useful bread recipes. For example--it covers cornbread (three kinds including Johnnycake), Irish breads, wheat breads, all sorts of rolls and buscuits, starter breads (sourdough for Dummies, trust me), potato breads and even Jewish breads! I consider this an essential book for anyone who enjoys breadmaking, even if you only use a breadmaker.

I'd like to remark on the one reviewer's disparaging of the text and his saying this book has errors: I have yet to find one and as for the text, I absolutely love it--they are short sweet asides about the history of bread in both the Catholic church and world in general. His personal asides are insightful and inspiring, my personal favorite being the story he tells about first joining the Jesuits where he was assigned to managable portions of butter for the kitchen off of a huge block that was delivered to their residence. It was a menial job, and as a youth, it made him angry, naturally, and proved very frustrating because he had to use a wire to do it. Doesn't sound like a big deal until you realize Brother Curry only has one arm! An older brother chided him and said that if he couldn't handle the butter, then he'd never move on to greater things. A wonderful lesson that's stuck in my head--cut the butter first with whatever you're given!

And if that's not a good enough review to get you to buy the book, I'd like to point out that the profits from this book go to support Brother Curry's work with the handicapped: he runs a full-fledged bakery in New York for people with handicaps in order to teach them a trade, and also runs The National Theater Workshop for the Handicapped as well--so resist the urge to buy it used! Buy this book--you won't regret it as a baker and you certainly won't mind the good karma. (Catholic karma, at that!)

Too Much Sugar & Commercial Yeast - Too Few "Secrets" 3 out of 5 stars.

Secrets? Vat Secrets?

It is really quite simple to make a loaf of bread. The greatest challenge for professional and striving artisan home bakers is to be able attain consistency; to factor in and accommodate specific needs of that day's dough, be they changes in ambient temperature, humidity, ripeness of poolish or biga or sourdough, and the tolerance of dough during fermentation.

I purchased this book with the expectation of finding baker's percentages, generous use of specialized pre-ferments, in addition to a heavy reliance on naturally leavened indirect methods. I also rightly expected professional "secrets" as the title implies.

Jeffrey Hamelman, author of BREAD remarked that he used to marvel at his ability to make acceptable loaves one day, and then wish he could hide his loaves the next. Secrets of a Jewish Baker is a book of practical, empirical, and intuitive information that uses packaged yeast (as many as three packages per recipe), volume measurements (cups and teaspoons), and will not contribute much to bakers aiming to expand their knowledge beyond today's flooded bread book market.

I should have known better than to fall for come-on titles like, "Secrets of a ......." yet I was still annoyed when his "secrets" such as the one for producing a rich mahogany-colored rye, is the addition of coffee, cocoa, or molasses. All of which impart their own alien flavors along with the color benefits they provide. In the case of selecting molasses for bread color, that ingredient also contributes considerable sweetness that is uncharacteristic of traditional sour rye.

Unlike Nancy Silverman's bread recipes using baked potatoes to great result, Greenstein's potato breads rely on boiled potatoes. Aside from the tendency of boiled potatoes to become gooey, they also contribute inconsistent quantities of hydration to the already vague formula: "a small or medium potato".

This 1993 title would have been far more conducive to my needs today if the author remained true to his original bakery formulas, provided actual "secrets" to his readers, and did not re-write his methodology to over simplify his recipes and production techniques for non-bakers.

The added sugar content in food (vegetables, breads, entrees) is often a regional and ethnic preference. I was born in Los Angeles and as such, I disfavor added sugar in my foods, particularly breads and vegetables. This book uses far more sugar and commercial leavening than is acceptable to my preference.

Overall, this book's content which also includes many quick loafs is very disappointing.
