You should have some knowlage of baking if you buy this book. I do, and found it has excellent, clear photos of finished products. The recipes are easy to follow and explained well. Nestled in the book are 1 page articles and photos of amazing pastry shops around the world. There are breads, coffee cakes and scones that anyone could master, but as for the rest of the book - do you own a pastry bag? The photos alone are worth it.

excellent 100% rye bread recipes 5 out of 5 stars.

I'm allergic to wheat and spelt, but I can tolerate rye and some other grains. Most baking books either have wheat in every recipe (and I mean *every* recipe), or else they are completely gluten free (yech.) Easy Breadmaking for Special Diets contains a wealth of recipes for *everyone*. There are many that contain wheat or spelt; there are also many that are totally gluten free. There are vegan recipes, yeast-free recipes, etc--truly something for everyone. For me, there are some excellent recipes that use 100% rye flour, that have turned out beautifully in my bread machine. I never thought I'd get to eat a good sandwich again but this book has proved me wrong.

I was very disappointed in this book. Not enough sourdough starters for the average cook. For instance, "Peach Leaf Starter", "Hop Starter", etc. The book was not worth the price. Unless you want unusual recipe's, don't get this book.

Bad title.
The recipes within are not true (pure) sourdough. They all, but one, contain lots of dry yeast.
There are no pure rye or wheat starter recipes given nor are they even mentioned let alone discussed
Her starters are: Beer, Hop, Ginger beer, Peach leaf, raw potato, cooked potato.
Recipes are for MASSIVE amounts...4 to 6 1lb. loaves. Impractical, for me anyway.
Lots of fats and eggs (4 to 13!).
A few ingredients I've never heard of nor seen in any store, such as maple syrup cheese, maple-honey syrup, hickory smoked cornmeal, spiced peaches, rice polish.
Recipes just weren't appealing.
Also this is an old book. 1967, 1983

Only recommended if:
You have 6+ kids who all eat sandwiches everyday, you have no fear of high fat and cholesterol and aren't looking for, nor care to learn about, pure sourdough startes/recipes/methods.

If you are looking for a great bread book, which covers pure sourdough as well as yeast spiked, and is up to the minute on techniques in fermentation etc to bring out the best in the flour and other ingredients get The Bread Baker's Apprentice By Peter Reinhart. I've made 10 different breads from it and they've all turned out terrific.

Biggest waste of $35 I've ever seen ! This was a required text in school , and approximatly 25% of the formulas were completely unusable. It was if this character wrote these recipes off the top of his head without the slightest concern for whether they worked or not.I shudder to think how many copies of this waste of paper have been sold to culinary students and the general public alike.

I also had to purchase this book for culinary school. While this book can be difficult to understand, the quality of the instructor has a great deal to do with the user's comprehension of the subject matter. I find this an excellent book and continue to use it today (because I know how to make it work for me).

NOTE: The formulas in this book work, provided you have had proper instruction in how to use them, and in how to use Baker's Math to increase and reduce the yields.

It has been several years (since the original Silver Palate Cookbook) that I've come upon a new cookbook of REAL interest. Author Sharon Winstein is indeed a kindred spirit to all who take pleasure in sharing food with family and friends! Her recipes are engagingly written with interesting side notes that are both touching and informative. It's obvious that this book has been a gracious labor of love by an EXPERT cook. Among the pile of books on my shelf, I keep grabbing this one! I consider it a treasure! Also a tribute to the book, I've given it recently as a gift to "non-cooking" friends (not actually thinking that they would make something) and they have surprised me with excellent results!!!

This cookbook leaves no question unanswered. It feels like the author is right there by my side, helping me make these recipes. Each recipe has a detailed version with every step explained, and a short version for quick cooking. And the food is delicious and healthy, wonderful for family or entertaining. The cheddar-chive muffins and the vegetable chili are reasons enough to buy the book. The veggie-feta sandwich is light and delicious. The Asian salad with chicken is a super party dish. Buy this book!
