Not enough yeast 2 out of 5 stars.
5 of 5 people found this review helpful.

Here's the problem with this book - too little yeast. I own a Zojirushi bread maker that's excellent. The accompanying recipes work out fine. However, for every 3-4 cups of flour, Zojirushi recommends 2 tsp of yeast. For the equivalent amount in this book, the authors recommended about 1. Every loaf turned out bad until I upped the yeast. I can't figure out what the authors were thinking.

Very nice book...lots of recipes! 4 out of 5 stars.
1 of 1 people found this review helpful.

I got this book as a gift with my new Cuisinart bread machine and so far I really like it. I have made cinnamon-raisin bread as a Christmas gift which was a huge hit and pear loaf which was fantastic for toast in the morning, and both recipes turned out fantastic.

I don't have a problem at all with the different colors of type in the book but I have very bright lights in my kitchen. I can see how they would be a problem but they don't bother me.

Honestly, the reason for the four stars is because they included bonus chapters on soups, stews and sandwiches. I know that is not a big deal but I wanted a book with bread machine recipes, not anything else. Just kind of weird. Plus, they seem to deal a lot with thirds in the butter quantities which is kind of strange and hard to guestimate since the stick of butter has marks for tablespoons.

All in all though, a great book and I can't wait to work my way through it. I would definitely recommend it to others!

Editorial Review:

More than 375 recipes keep fresh loaves of scrumptious bread in the pantry.

By varying seasonings and ingredients, custom bread making is easy and fun.

Two bonus chapters on Soups & Stews and Sandwiches offer more recipes and suggestions for enjoying delicious homemade breads.

Recipes, from sweet to classic, suit all tastes.

Basics chapter answers frequently asked questions.

Every Single Recipe in this Book is Terrific! 5 out of 5 stars.
20 of 20 people found this review helpful.

Every single recipe in this book is amazing-- they are all wonderfully balanced and do not call for hard-to-find ingredients.

The collection features a good blend of exotic, gourmet, health, and American-traditional dishes (with a touch of flair, of course!) Check the index under sample pages for listings.

Instructions are straight-forward and easy to follow, however there are no pictures or diagrams to help (but for most people, the written instructions will be sufficient.) The book helps you develop a sense of intuition with cooking, sometimes the techniques are open-ended.

This is among the best and unique recipe books I have.

Editorial Review:

In a friendly and informal style, Ed Brown presents the recipes that have made the kitchen at the Tassajara Zen Center famous for more than thirty years. "Ordinary food for ordinary people" is the way Brown once described his approach, but there's nothing ordinary about these culinary offerings. From appetizers to desserts, the over two hundred recipes use the freshest ingredients in ways that will tantalize the palates of everyone from down-home vegetarians to the most discriminating gourmet cooks. The recipes are interspersed throughout with line drawings, photographs of the center and its environs, and Brown's own poetry. This revised edition includes twenty-nine new and four revised recipes, new photographs, and a new introduction.

The best of all worlds. 5 out of 5 stars.

There's something for everyone in here! If you're a lover of Mexican food, you'll find dozens of simple, delicious, and authentic recipes. "Mom's White Enchiladas" is already an all-time favorite of mine. If you're looking for Mexican-influenced dishes with a extra twist, you'll find all kinds of wonderfully inventive hybrids, like the "Tex-Mex Meat Loaf" or the "Southwest Lasagna". And if you're looking for something completely different to do with tortillas, stepping out of the Mexican territory, you'll find the most creative (and tasty) ideas for snacks, appetizers, even desserts - you name it, they've got it. It even includes kid-friendly fare, and it's quite vegetarian-friendly as well.

This is also, by far, one of the most practical cookbooks I've ever used. From the Helpful Hints at the very beginning, to the clear and concise directions throughout all the recipes - even the spiral binding (hey, it makes a big difference, being able to lay it flat) and plastic cover; they all add up to make this an easy and essential addition to your cookbook shelf.

Editorial Review:

101 Things to Do with a Tortilla takes this delicious and nutritious staple of so many countries and brings it into the mainstream with family-friendly recipes for breakfast, lunch, dinner, and more. Tortillas are a no-fail recipe ingredient, and Stephanie Ashcraft and Donna Kelly show that tortillas aren't just for Mexican food anymore!

There is no love sincerer than the love of food. - George Bernard Shaw 5 out of 5 stars.
17 of 18 people found this review helpful.

Somewhere in the past year or two I have developed a real yen for scones. We used to have a tea house and various coffee houses in my city that served them, and I would occasionally buy one when the mood hit. Then all of a sudden my city was sconeless. I couldn't get a scone to save my life. I drove to every coffee place and bakery I could find... nothing. So I decided I'd make my own. I added this book to my Amazon wish list and my husband bought it for me for Christmas. Since Christmas I have been a scone making machine. As I type the air is filled with the heavenly aroma of fresh out of the oven Apple Oatmeal Scones.

I have made several of the recipes and everyone has been easy to follow and wonderfully delicious.

Table of Contents:
Metric and Imperial Conversions
Introduction: Ensconced in Scones
Sweet Scones (examples: chocolate chip orange, gingerbread, raspberry filled almond)
Savory Scones (examples: hearty grain, potato bacon, rye caraway)
Spreads (examples: curd, clotted cream, maple butter)
The Perfect Tea (the authors guide you through some tea time etiquette and ideas)
Index

A few of my favorite recipes:

Blueberry Coffee Cake Scones - it has a streusel topping
Cheese Scones - Cheddar and Parmesan cheese with a dash of red pepper. I served it with chili one night.
Apple Oatmeal Scones - with apples, dates, oatmeal and molasses it's a hearty scone and a great on the go breakfast.
Citrus Curd - I love lemon curd and this recipe takes it to another level with a bit of orange juice and peel.

The recipes call for you to place the scone batter on a buttered 8-9 circle on a cookie sheet, then cut the scones yourself, then bake, and if necessary re-cut. I also received a scone pan for Christmas and I would highly recommend it. The baking temperature and time does not change and the amount of batter is perfect for the pan.

My only gripe about this book is its size, about 5 1/2 x 5 1/2 inches, and the binding; it's next to impossible to keep the page open face up. I like my cook books to be able to remain open for easy access. Other than that this is a fantastic little book and I plan to keep on making a scone a day.

Editorial Review:

Do your cakes collapse, soufflés slump, cookies crumble, and fruit pies fail? For those living at high altitude, baking can be a challenge at best, or a total disaster. More than thirty-four of the fifty United States, plus many Canadian regions, have cities and towns at altitudes of more than 2,500 feet, yet there are hardly any cookbooks that address the special needs of these local bakers. Until now. Award-winning cookbook author Susan G. Purdy has finally written the first-ever foolproof guide to high-altitude baking.

Purdy has actually "gone there and done that," staying as long as it took to bake these recipes to perfection at five different locations -- and elevations -- across thecountry. In Pie in the Sky, Purdy leaves behind old conversion tables, disproves many oft-repeated calculations and adjustments, and presents reliable recipes in their entirety for each altitude. She takes out the tinkering and guarantees success at any height.

In addition, she explains the hows and whys, gives tips and hints for problems specific to every altitude, and generally demystifies the subject of atmospheric obstacles that cause favorite recipes to flop. Whether they live in the eastern mountains or the far west, in Boston, Massachusetts; Boone, North Carolina; or Santa Fe, New Mexico; home bakers as well as experienced chefs will love the wide range of easy-to-make treats including Mile-High Lemon Meringue Pie, Coconut Cake with Coconut Icing, Paradise Peak Chocolate Soufflé, Vail Lemon-Poppy Seed Loaf, Celestial Challah, and Sour Cream Streusel Coffee Cake.

Every recipe was tested at sea level (Connecticut), 3,000 feet (North Carolina and Virginia), 5,000 feet (Idaho and Colorado), 7,000 feet (New Mexico), and 10,000 feet (Colorado) and can be used at these elevations or any points in between.

Best book on baking sourdhough breads! 5 out of 5 stars.
1 of 1 people found this review helpful.

I am pretty new baker. I have most of the books out there now (maybe about 15 bread baking books or more) and I can say that I have baked consistently amazing loaves of bread from this book. They are all sourdough, and most of the breads take 2 days from start to finish. So, if you are looking for some quick bread recipes this is not the book for you. If you are looking to learn a lot about artisanal sourdough bread and want to take the time to bake breads better than some of the best bakeries out there - then BUY THIS BOOK!

Best Sourdough book ever 5 out of 5 stars.
1 of 1 people found this review helpful.

My mother was given this book when I was 15, and never took a second look at it. That summer, I used the instructions in the book to make my first sourdough start and baked some of the most delicious breads I had ever tasted. Years later, it's still my favorite bread book.
I wouldnt recommend this for anyone who dosnt already know how to bake bread, but anyone who wants to learn to make better bread should definitely get this book.

Editorial Review:

Silverton, who hails from the renowned Los Angeles bakery for which this book is named, goes back to square one in Breads for the La Brea Bakery: the yeast. While commercial yeast may work, using it doesn't really get to the essence of good bread or good bread making. Her book describes the two-week process required to create a starter the old-fashioned way. Once that is done, there are breads, pretzels, bagels, and a host of other good things to bake.

Not so many cooked panini 3 out of 5 stars.
1 of 1 people found this review helpful.

We got this because it was a "suggested buy" to go with our Cuisinart Griddler. We were expecting recipes for cooked panini, but very few of these are. The recipes look delicious, the photos are gorgeous, but it wasn't really a good companion for our new appliance.

Disappointed would be generous 1 out of 5 stars.
1 of 1 people found this review helpful.

To say I was disappointed in this book would be a generous statement. The author(s) apparently wanted an elitest book geared towards the "natural is good" movement, i.e free range chicken eggs, etc. Also, they seemed to try and hide a crosteni/bruschetta book in the garb of a panni book; very few grilled panini recipes. It is a diservice to recommend this book with a panini press.

Simply put: I'm returning it 1 out of 5 stars.
1 of 2 people found this review helpful.

This book was incredibly disappointing. Not ONE recipe in it looked worth-while. After reading the reviews of all the books, this one seemed to have the most positive response. But I wasn't impressed at all. In fact, I think I realized that the trick to a good panini is simply coming up with your own creations. You don't really need recipes to tell you how to make a good panini. Don't waste your time with this one.
