Editorial Review:

No kitchen cabinet is complete without a box of Bisquick. For nearly 70 years, the familiar yellow box has been a staple for biscuits, shortcakes, and quick dinners. Updated for the millennium, Betty Crocker's Bisquick Cookbook is filled with old favorites, such as Cinnamon Streusel Coffeecake and Oven-Fried Chicken, plus new recipes for the likes of Rhubarb Meringue Torte and Thai Chicken with Spicy Peanut Sauce.

The cookbook is divided into seven sections, including such standards as "Best-Ever Breakfasts," "Savory Snacks and Breads," "Family-Pleasing Dinners," and "Delicious Desserts." There's a whole chapter on Bisquick's famous Impossibly Easy pies, featuring savory items such as Taco Pie, Salmon-Asparagus Pie, and--a favorite with the kids--Mac 'n' Cheese Pie, in addition to Coconut Pie (the very first Impossible Pie), French Apple Pie, and Mocha Fudge Cheesecake. Calorie watchers should check out the "Favorites Made Lighter" recipes, which use Reduced-Fat Bisquick. There are recipes for Hearty Chicken and Potato Dinner, Southwest Tamale Tart, and Chocolate-Cinnamon Sundae Cake, all with half the fat of the original Bisquick dishes.

If you have little helpers at your elbow, Betty Crocker's Bisquick Cookbook is a great introduction to cooking. Flip to "In the Kitchen with Kids" and make Jack-o'-Lantern Pizzas for dinner followed by Banana S'mores. There's even a Bisquick-based play dough and squiggle paint recipe (just for playing; no eating, please). Every recipe has an accompanying picture and a Betty's Tip to help you out. Whether you want to whip up a batch of biscuits or make individual Italian Sausage Pot Pies, dinner is only minutes away. --Dana Van Nest

Not so many cooked panini 3 out of 5 stars.
1 of 1 people found this review helpful.

We got this because it was a "suggested buy" to go with our Cuisinart Griddler. We were expecting recipes for cooked panini, but very few of these are. The recipes look delicious, the photos are gorgeous, but it wasn't really a good companion for our new appliance.

Disappointed would be generous 1 out of 5 stars.
1 of 1 people found this review helpful.

To say I was disappointed in this book would be a generous statement. The author(s) apparently wanted an elitest book geared towards the "natural is good" movement, i.e free range chicken eggs, etc. Also, they seemed to try and hide a crosteni/bruschetta book in the garb of a panni book; very few grilled panini recipes. It is a diservice to recommend this book with a panini press.

Simply put: I'm returning it 1 out of 5 stars.

This book was incredibly disappointing. Not ONE recipe in it looked worth-while. After reading the reviews of all the books, this one seemed to have the most positive response. But I wasn't impressed at all. In fact, I think I realized that the trick to a good panini is simply coming up with your own creations. You don't really need recipes to tell you how to make a good panini. Don't waste your time with this one.

Great Recipes Marred By Poor Editing 4 out of 5 stars.
2 of 2 people found this review helpful.

The recipes have all been tested in Tate's Bake Shop over the years and are great. Unfortunately, the book has been badly edited. Recipes may be missing an ingredient (Toffee Pecan cookies don't tell you the quantity of pecans required---it's one cup, chopped), boilerplate lines sometimes appear inappropriately ("grease and flour two baking sheets" where only one is required, etc.).

But it's worth struggling through. And call Tate's Bake Shop if you need help.

I love this cookbook. I have a copy and have bought several for friends and family as gifts. Haven't made a recipe that wasn't excellent yet!

Limited 3 out of 5 stars.

I collect cookbooks, so I couldn't pass this up. It's short, but my reason for purchasing was every recipe must be really good. I think I made one recipe so far, and it was good. Nice pictures. Quite specialized, not for a general, all-in-one go to kind of sweet book.

Editorial Review:

"Good bread is hard to find and easy to make," says Dan Leader as he draws you into the ancient world of traditional bread baking. Unlike any other bread book, Bread Alone will provide you with a comprehensive guide to creating—at home—the country-style breads that have consistently captured the imagination and the taste buds of the world.

In a richly told tale, Leader chronicles his crossings of America and Europe to locate the most vital ingredients at the source, to learn from the methods of the world's great bakers, and to perfect their traditional techniques. His recipes are ones that have been used for centuries: large sourdough ryes, rich and dark raisin pumpernickel loaves, real French pain au levain, big round wheats with walnuts, crusty baguettes, high and airy breads, and more. Made from organic, stone-ground grains, these breads are slow-leavened, hand-shaped, and baked to perfection on heated baking tiles. As you read through the recipes, you can almost smell the ancient aroma of baking bread. And as you begin to bake, you will learn the importance of the primary ingredient in great bread: your own observations.

These are some of the breads and techniques you will master:

  • In the chapter "Becoming Bread," you will learn to identify and shop for the highest quality flour available. And you will seek it out because you'll taste the difference.

  • Making a poolish will become second nature to you as you master the Learning Recipe: Classic Country-Style Hearth Loaf and its delicious variations.

  • Whatever your schedule, there is a bread for you. In the chapter "Straight-Dough Breads: Traditional Breads for a Modern Life-Style," you are shown how to start and finish a recipe in five hours, or morning-to-night, or night-to-night.

  • You will bake sourdough bread in its many forms. By gently introducing the concept of sourdough—how it is made, how it is maintained, and how to get the best flavor from it—Leader demystifies it and makes it accessible to you.

  • Discover the wonders of rye bread: From the dense and chewy Finnish Sour Rye to the fragrant Danish Light Rye, everyone's tastes are served.

  • The mystery of pain au levain, French for "bread from a sourdough or wild yeast," unfolds into an understandable, user-friendly process. From My Personal Favorite Pain au Levain, a typical large Parisian loaf, to Pain au Levain with Pecans and Dried Cherries, the "Family of Traditional Pain au Levain" includes some of the best loaves baked around the world.

  • A perfect baguette is a beautiful thing. From shaping to scoring, you will learn how to make the authentic French baguette at home.

  • The purpose of an organic certifier—find out how and why one farmer becomes dedicated to his role as land steward.

  • Brioche, Chocolate-Apricot Kugelhopf, Panettone, and Semolina Sesame Rolls are a few recipes you will find in "A Family of Breads Inspired by Traditional French and Italian Breads."

  • Finally, when a quick bread is all you have time to bake, you will find recipes for such delights as Vanilla Bean Butter Loaf; Dried Pear, Port, and Poppy Seed Loaf; and Provolone Sage Corn Loaf.

Bread Alone is the bread book that cooks and bakers have been waiting for. From the wheat fields of the Midwest to the hot and steamy boulangeries of Paris, you will travel the long and delicious road to flawless bread baking. You will emerge a better baker and with a deeper understanding of what it takes to make perfect loaves. Bakers entertain you with stories of their love of baking (even in the most adverse situations). Bread Alone is the bible of bread books and a must-have for bread lovers everywhere.

Superb Treatment of a Broad Culinary Topic. Buy It! 5 out of 5 stars.
28 of 31 people found this review helpful.

`Flatbreads & flavors, A Baker's Atlas' is Canadian culinary photographer / writers' pair Jeffrey Alford and Naomi Duguid's second book, which is easily more useful to the average foodie and reader than their last two expensive culinary travelogues, `Mangoes & Curry Leaves' and `Hot Sour Salty Sweet'. While this book covers a broad geographical range, like the `big' books, it maintains its high level of quality and focus by concentrating exclusively on the subject of flatbreads and dishes that are most commonly served with these flatbreads in their `natural habitat'.

While Alford and Duguid seem to have inherited the style of the great culinary travelogue, `Honey from a Weed' by Patience Gray, they have their own twists on this style which makes it all their own. One difference is that while Gray does a fair amount of reflection on the whys of local techniques, her observations are not systematic. They are more in the line of archeological observations. Since Alford and Duguid in this book, are dealing with the single technique of baking flatbreads, this focus give them the opportunity to give us an excellent tutorial on bread baking technique, including the use of modern appliances in the making of traditional flatbread recipes.

The authors take their `Atlas' approach seriously, as each chapter addresses a particular geographical region and opens with a map locating the center of traditional production for each type of bread. The eight regions are:

Central Asia, primarily Iran, the `...stans', and Tibet with lots of yoghurt and kebabs.
China, Vietnam, and Malaysia with dipping sauces, pancakes, and roll-ups.
India, Nepal, and Sri Lanka with chutneys, curries, and lentils galore.
Eastern Mediterranean, or `flatbread central' with pitas, matzos, Bulgar wheat, and dips and wraps.
Morocco, Tunisia, and Ethiopia, with mostly accompanying dishes.
Armenia, Georgia, and Azerbaijan, the home of Lavosh
Europe, from Italian pizza to Scottish oatcakes
North America with tortillas, crackers, and salsas.

While this would seem to be a rich subject, the authors don't spend much time reflecting on why flatbreads are so important in some parts of the world and less important in others. In Asia, it seems that it is the only kind of bread they make, while in Europe, it's definitely a sidelight. I hypothesize that flatbreads are important where there fuel for ovens is scarce and the native peoples are or were at one time primarily nomadic.

It is just a bit surprising to see how many different bread recipes use yeast. One would think yeast requires a nearby brewing industry, but natural sourdough type yeast is free for the asking and a lot easier to manage on the road than chemical leaveners, when the nearest 7 - 11 is 7000 miles away. But, all the recipes have been modernized and none actually use natural sourdough yeasts. All yeast doughs are made with `active dry yeast', the kind you have to bloom in warm water, but which will keep for years in their little foil packets. The other side of the coin is that there are a fair number or yeastless recipes, especially India's skillet breads, where the leavening is the action of heat and water in the dough, very much like unleavened matzos, except that matzos is made in an oven. So, if you can't tolerate yeast and you are tired of buttermilk biscuits and Irish soda bread, this book may be a great ticket to enriching your range of tolerated breads.

One thing this book does not do is be a complete source on those flatbreads which are so dear to our French / Spanish / Italian backgrounds. If your primary interest is with Pizza, go to Peter Reinhart's `American Pie' or some other treatise on pizza by your favorite Italian cookbook author. If your primary interest is in tortillas, get Diana Kennedy's `From My Mexican Kitchen'. But, if you like these things and want to find the their flatbread cousins, this is your book.

This book is simply all around excellent, and certainly deserves its James Beard Cookbook award. It makes me wish Alford and Duguid would stick to their single subject surveys instead of boosting their photographs business with the richly pictured , `Mangoes & Curry Leaves' and `Hot Sour Salty Sweet'. Their other books on rice and home baking are similarly delightful and should be in every foodie's library.

Editorial Review:

An amazing cookbook that travels to the furthest reaches of the world to celebrate flatbreads with over the recipes for a myriad of breads, including Afghani naan, Mexican tortilla, French fougasse, Middle Eastern pita, and Armenian lavash. Hungry for something to go with all that bread? The authors include another 150 recipes for traditional accompaniments. How about a Scandinavian smorgasbord, tomatillo salsa with arbol chiles, Nepali green chile chutney, Ethiopian beef tartar, or Yemeni stew?

The basic bread book that lasts 5 out of 5 stars.
2 of 5 people found this review helpful.

I have been baking bread, or attempting to, for thirty years. I still need this book. I seem to always give them away, so when I want the recipe for the apricot bread, or the girlfriend getter walnut-onion; I must call an ex or buy another. I can stand on my own, from experience, on the yeast breads for the most part. But the quick breads in this book stand out in my memory. That is what I need this book for. When I tell people that I bake bread, they ask me "do you have a bread machine?", I reply" I am a bread machine!".

The Cuisinart large capacity processors will do the Pita recipe in this book in less than a minute, kneading and all.

I haven't tested many more recipes with modern appliances that appear in this book.
I believe that I could adapt them all.

We all have fond memories of a favorite dessert our grandmother or mother used to bake. It’s these dishes that give us comfort in times of stress, help us celebrate special occasions, and remind us of the person who used to bake for us those many years ago.

In Heirloom Baking, Marilynn Brass and Sheila Brass preserve and update 150 of these beloved desserts. The recipes are taken from their vast collection of antique manuscript cookbooks, handwritten recipes passed down through the generations that they’ve amassed over twenty years. The recipes range from the late 1800s to today, and come from a variety of ethnicities and regions. The book features such down-home and delicious recipes as Brandied Raisin Teacakes, Cuban Flan, Cranberry-Orange Cream Scones, Chattanooga Chocolate Peanut Butter Bars, and many more. Accompanying the recipes are stories from the lives of the families from which they came.

The Brass Sisters have taken care to update every recipe for today’s modern kitchens. More than 150 photographs showcase the scrumptious food in full-color detail. Finally, the Brass sisters encourage each reader to begin collecting his or her own family recipes in the lined pages and envelope at the back of the book.
