There's something for everyone in here! If you're a lover of Mexican food, you'll find dozens of simple, delicious, and authentic recipes. "Mom's White Enchiladas" is already an all-time favorite of mine. If you're looking for Mexican-influenced dishes with a extra twist, you'll find all kinds of wonderfully inventive hybrids, like the "Tex-Mex Meat Loaf" or the "Southwest Lasagna". And if you're looking for something completely different to do with tortillas, stepping out of the Mexican territory, you'll find the most creative (and tasty) ideas for snacks, appetizers, even desserts - you name it, they've got it. It even includes kid-friendly fare, and it's quite vegetarian-friendly as well.

This is also, by far, one of the most practical cookbooks I've ever used. From the Helpful Hints at the very beginning, to the clear and concise directions throughout all the recipes - even the spiral binding (hey, it makes a big difference, being able to lay it flat) and plastic cover; they all add up to make this an easy and essential addition to your cookbook shelf.

I think this is a very interesting book, and the foreword answers why:
"I first learned to love this bread while visiting the Community of the Ark, a utopian society founded in France by an italian disciple of Gandhi. On my return home, a friend tought me how to make the same bread - or pretty close. Some further experimenting ended up with the method in this booklet."

I need to pay attention so that I don't write in this review more than this book's content. Ok, I'm exaggerating a bit, but this is a brochure with 16 pages, left-side pages contain only some decorative drawings, and on the other 8 the writing is rather big and covers only 60% of the surface, so it feels very airy. I'm not saying this is good or bad, just that's the way it is.
The book is basically a simple recipe - how to make a tasty and natural bread just using whole wheat, salt and water. You don't need any yeast - that's the special part, the yeast-like micro-organisms are being collected from air (which means that the taste depends on where you live and make the bread).
It is named "sour" because there is a stage where you let the yeast "eats" the gluten (wheat sweetness), the result being a pre-digested (and more sour) and tasty product, easier to assimilate, especially by people who otherwise have a gluten allergy. Sourdough breads are healthier than other breads.
He explains how it works, where you can make variations (he even suggesting some ideas) and ends up explaining that until 150 years ago this was he way bread was made, but commercial baking had people stop carrying their own yeast and made them buy it (or even buy the entire bread).
It's easy to make bread, now I know it first hand, and actually it was the first I made any kind of bread. If I did it (with a yummy tasty result), then anyone can do it.

Except to making whole wheat bread, I was new to bread making, and never really understood yeast. I bought two books, this one and Artisan Baking by Maggie Glezer. I like both books but I prefer this one for the detailed pictures, and the explanations, the DVD is also very useful to actually the whole process. I found that both books complemented each other when trying to understand the yeast, poolish, starters, etc. But I still had to search on the web to get a good understanding of starters, fermented dough, biga, poolish and what the difference between them is... if there is one.
My first sourdough bread ever made was perfect, which is impressive, but I made mistakes on both my 2nd (starter misunderstanding) and 3rd recipe (oven heat problem)... But for me that is what makes baking interesting.

Here's the problem with this book - too little yeast. I own a Zojirushi bread maker that's excellent. The accompanying recipes work out fine. However, for every 3-4 cups of flour, Zojirushi recommends 2 tsp of yeast. For the equivalent amount in this book, the authors recommended about 1. Every loaf turned out bad until I upped the yeast. I can't figure out what the authors were thinking.

There are so many tasty recipes in the book. It also gives recipes for both 1.5 and 2 lb loaves of bread. Along with that they also put a lot of extras in there.

Biggest Book of Bread Machine Recipes (Better Homes & Gardens) I purchased a Zo bread machine from Amazon.com and tried four (4)times to purchase a bread machine book from them. Finally on the fourth attempt they sent me the book UPS and it was delivered to my door. I gave Amazon both my street address and my billing address, a P.O. Box. When I made the purchase I of course opted for the super saver on the shipping and Amazon opted for the USPS (United States Postal Service). Some items i ordered were sent UPS and i received them on my doorstep. I didn't know the Post office would not deliver to my home shipping address when I have a P.O. Box. With the street address on the package the post office refuses to deliver and returns the package to sender as "Undeliverable as Addressed". They apparently can only recognize the P.O. Box. I didn't know that but, Amazon.com should have; they are in the mail order business. After a lot of cussing, swearing and volumes of e-mail between Customer service and myself, they finally shipped the book via UPS (United Parcel Service) and I received the book last Monday.

I have read the book COVER TO COVER, and we have made four of the recipes from the book. Three turned out very well, one didn't. If you buy this book you should know the recipes all seem to call for a very substantial cut in the amount of yeast and salt used, compared to the two books that came with my bread machines. So far I have only one complaint with the recipes in this book; it doesn't give a yeast adjustment for using QUICK yeast and the rapid feature on your machine. If you use Quick yeast and the Rapid feature on your machine, you will need to increase the amount of yeast used. Otherwise, nice book, with a lot of information and a lot of very interesting recipes for both the 1 1/2 and 2 pound loaf to play with. Using Bread Machine Yeast and staying with the recipe we got a very well shaped and tasty loaf, and we are happy. Enjoy!

This book was incredibly disappointing. Not ONE recipe in it looked worth-while. After reading the reviews of all the books, this one seemed to have the most positive response. But I wasn't impressed at all. In fact, I think I realized that the trick to a good panini is simply coming up with your own creations. You don't really need recipes to tell you how to make a good panini. Don't waste your time with this one.

I'd like to counteract the unfair criteria of some of the other reviews. 5 out of 5 stars.

Many reviews of this book complain that it was recommended as a companion to a purchases of a panini press or sandwich maker, and I can see why they are disappointed. Amazon has many strengths, but the quality of its recommendations is not one of them. These reviews are helpful in letting purchasers of sandwich makers know that this book doesn't have many of the grilled meat and cheese sandwich recipes that many people are looking for.

I wish, however, that so many of these reviews didn't give the book one star and lower its rating, because it's a lovely book with ideas for simple, delicious toppings and fillings for grilled bread. These are recipes that would be appropriate for a light lunch or supper, for appetizers, or for cocktail parties. Many of the recipes feature lemon, capers, olives, oregano, hot pepper flakes, and garlic, adding flavor to vegetable fillings or small amounts of fish, chicken, or cheese. The recommendations that ingredients be organic, cage-free, etc., are not nearly as frequent as some disgruntled reviewers would have you believe, and of course you are always free to use ordinary grocery store fruit, vegetables and eggs.

There are also some sweet recipes. I love the recipe for Baked Fresh Fruit Bruschetta: sliced nectarines baked on bread with a little butter and sugar, served for breakfast with caffe latte.

This is the version of the book published for the trade, not the standard or student version. It is a good book for anyone in the baking profession. The book has a cd included also with software that will track supplies for reordering, volume, recipes, etc. Each recipe is written clearly with ingredients listed as well as different options for scaling, presentation and make up suggestions. Anyone can benefit from the information and formulary in this book but the target audience is clearly the professional. It is a good reference volume for bakers and pastry chefs.
