A Bread Machine Must Have 5 out of 5 stars.
33 of 33 people found this review helpful.

In the 3 years I've owned my bread machine, I seldom used it. That was because everything I'd made was disappointing. Since buying this book the machine now gets used every other day. The recipes are wonderful & turn out perfect every time. The book tells you how to convert your favorites (which is great if you're an old do-it-all-by-hand bread baker like me). And the substitutions section is really helpful if you'd like to modify the recipes or use your favorite ingredients. Everyone I know has an unused bread machine sitting around & since I've told them, enthusiastically, of the success I've had using the book, they're using their machines again (and asking me what the book says!). Guess I'll be ordering more copies as gifts!

The tops for bread machine bread 5 out of 5 stars.

I am not a bread maker, but my son loves bread so I decided it would be worth it to get a bread machine. I was pretty lukewarm about the loaves it was turning out until I got this book. This book is amazing, just knowing about the "peek and poke" method helped my bread 100%. The recipes are fantastic and I can guarantee my loaves will turn out 98% of the time. I also own the "More Bread Machine Magic" which is fantastic, but if you just get one book get this one. For someone that didn't know beans about bread I can now turn out beautiful and tasty loaves. If you are an experienced bread maker you may already know a lot of the info in this book, but for the novice or previously disappointed bread machine owner this book is tops.

Editorial Review:

Round, thin, and made of starchy batter cooked on a flat surface, it is a food that goes by many names: flapjack, crêpe, and okonomiyaki, to name just a few. The pancake is a treasured food the world over, and now Ken Albala unearths the surprisingly rich history of pancakes and their sizzling goodness.
Pancake traverses over centuries and civilizations to examine the culinary and cultural importance of pancakes in human history. From the Russian blini to the Ethiopian injera, Albala reveals how pancakes have been a perennial source of sustenance from Greek and Roman eras to the Middle Ages through to the present day.  He explores how the pancake has gained symbolic currency in diverse societies as a comfort food, a portable victual for travelers, a celebratory dish, and a breakfast meal. The book also features a number of historic and modern recipes—tracing the first official pancake recipe to a sixteenth-century Dutch cook—and is accompanied by a rich selection of illustrations.
Pancake is a witty and erudite history of a well-known favorite and will ensure that the pancake will never be flattened under the shadow of better known foods.

Recetas Magnificas 4 out of 5 stars.
10 of 10 people found this review helpful.

This is a fabulous, very authentic cookbook, covering Central America and the Yucatan. It is truely a wonder. The recipes bring back fond memories to my husband who is Salvadoran. Very traditional favorites. This book is out of print and extremely hard to find. I found mine at the public library. It appears I was the only one taking it out. In fact I took it out so many times that I asked the librarian if they would be willing to sell it to me. I think the book spent more time in my kitchen than in the library. The librarian gave it to me for almost nothing and in exchange I made a donation to the book fund. (There is one other copy in the South Central Wisconsin Library system so others can still check it out). If you love comida tipica, this book is for you. Don't hesitate to pick up a used copy here from Amazon... It is well worth the investment! Buen provecho. Saludos a Copeland Marks.

Delicious Recipes 5 out of 5 stars.
14 of 19 people found this review helpful.

Making bread using the bread machine to make the dough makes much better bread than the machine. This book is just perfect. The first bread stuffed with cheese/herb we made is better than delicious.

No basics 3 out of 5 stars.
1 of 9 people found this review helpful.

I was disappointed with the book because it did not have enough basic bread recipes. If the book only had recipes for a few more basics (simple white, wheat, etc.), it would have been more useful. I like the 4 flour cup recipe sizes. A good book, but not exactly what I expected. I look forward to trying some of the specialty breads in this book.

The sixth book in the Bread Machine Cookbook series taps the creativity of the baker. It includes complete directions and illustrations for making a large variety of hand-shaped breads. Traditional breads, international breads and finishing touches are irresistible.

Gorgeous illustrations and clever historical fiction! 5 out of 5 stars.
8 of 9 people found this review helpful.

Being a children's illustrator myself, I am often pretty critical of children's book illustrations. But the moment I picked up this book I had to have it. Robert Papp's soft, atmospheric oil paintings beautifully depict life in Philadelphia in 1777 with great detail and emotion. Maddy Rose is a believable character, from her red stockings to her adorable chin. Trinka Hakes Noble does a brilliant job of transporting the reader back in time to the tense climate of the Revolutionary War. There is suspense, joy and sorrow equally depicted in text and in pictures. This book would make a perfect gift for a child who has interest in history, but also for a girl who needs a heroine. This book is the kind that is passed down from generation to generation. Congratulations to the writer and illustrator.

Great recipes and easy to follow 5 out of 5 stars.
15 of 17 people found this review helpful.

Just received the book today, and read through it. The book is quite easy to read. I've been looking at several clay and masonry books, and really like this one. It even gives directions on building an adobe oven, which I really would like to do (but, in the middle of winter, in Wisconsin, that isn't going to happen). I'm planning on making it a school project with my homeschooled daughters this next summer. I was hoping there would be a few more pictures on showing how to put the oven together, but, I think I can figure it out. The recipes really have got my attention and can't wait to try them out, too.

Informative 4 out of 5 stars.

This is a book with simple instructions, easy to follow, that will help the lovers of good European breads to experience the real flavor and enjoyment of baking the old fashioned way in an adobe and brick oven built in their own back yards.

Editorial Review:

Twenty years since its first publication, From a Baker's Kitchen remains the very best single introduction to foolproof professional-quality home baking. Gail Sher—the first head baker of the celebrated Tassajara Bread Bakery in San Francisco—created more than 100 clear, foolproof, and wonderfully varied recipes, divided into two basic categories: yeasted breads, ranging from white breads to whole-wheat, rye and specialty-flour breads (including recipes for rolls and buns as well as loaves); and quick breads, covering corn breads, spoonbreads, biscuits, tea cakes, batter breads, gingerbread, and muffins. Sher also covers every ingredient: grains, leaveners, salt, liquids, shortening, eggs, and "embellishments"; equipment; and most originally, methods and principles of breadmaking, with a special discussion of her ingenious "sponge" method, which no less a baker than Rose Levy Beranbaum (The Bread Bible) has praised as crucial to her own understanding of bread baking—and which remains the most effective technique for creating flavorful bread. Over 100 drawings are also featured in this reset new edition of the all-in-one classic baking book.

Wonderful for the beginner (a self-study course) 5 out of 5 stars.
5 of 5 people found this review helpful.

I purchased a previous edition in '99 from a used bookstore. Looked like an excellent book although I was a bit put off by the measurements (oh boy, not measurements AGAIN! I hate math) Up until then, I'd only used a measuring cup, and not very well at that. I was not a culinary student. So I read a bit of it, got discouraged and put it down. But I've held on to it over the years. Besides I wasn't serious about baking, just the usual sweet potato pie or peach cobbler (my standard southern fare). Recently I decided to step it up a bit, dusted the book off and opened it up. WOW, what I've been missing all these years. I've read the chapters, studied the calculations and formulas, and purchased a scale, oven thermometer, regular thermometer, mixer, and a few other things. Because of all the baking I've been doing lately, I began to sell my goods. Business has been great. My pumpking pie is the best my customers have tasted. And when my cookies spread or are crunchy or soft, it's because I've controlled the recipe and the baking process. The recipes are perfect, spot on, and when I replicate the instructions in the beginning of the chapter, I get consistent results. Many times my customers say they don't eat sweets, because they are too sweet, but I have not had this problem here. There are a few techniques I wish I had an instructor to demonstrate to me, but for the most part, I've been doing quite well through trial and error. I'm working on chocolate now.

I recommend this book to anyone who understands or who wants to understand that the kitchen is a science lab. Makes me wish I'd paid more attention in math while I was in school!!. Good luck!
