Cake mixes are undoubtedly convenient, but do they produce good cakes? They can, says Anne Byrn, author of The Cake Mix Doctor, if you know how to tweak them. Doing this involves the addition of ingredients to enrich the mixes and flavorings to enhance and, in some cases, conceal questionable tastes. To prove her point, Byrn offers more than 175 recipes for mix-based cakes and other desserts, including formulas for frostings that, Byrn maintains, must be made from scratch. The results are convincing; readers interested in satisfying, dependable desserts prepared quickly and with little fuss should welcome the book.

Beginning with a useful discussion of cake mixes, their history and composition, and an outline of the mix-transformation battle plan, the book then presents the recipes in chapters such as "Chocolate Cakes," "Cake-Mix Classics," "Special Occasion Cakes," and "Incredible Bars and Comforting Cookies." Among the most successful offerings are Deeply Chocolate Almond Cake with Chocolate Cream Cheese Frosting, Banana Cake with Quick Caramel Frosting, and Lemon Buttermilk Poppy Seed Cake. the pics are very inspirational. tried 2 of the cupcake recipes - white & kahlua. they turned out beauitful... light & fluffy. haven't tried the other recipes though. but after trying the 2, am convinced tt the rest will be equally good. the only set-back - most recipes listed are not for the tight-budget minded.

I bought this book (quite expensive) and was so excited about trying the recipes. I read from beginning to end, and decided these cakes must be awsome. Boy OH BOY! I have been baking for awhile with great results, but these recipes were a disaster. Horribly dry, buttercreams tasted like whipped butter. No matter what liquers you added they still tasted horribly bland. The PERFECT ALL AMERICAN CHOCOLATE CAKE was any but perfect. All I did was waste my time, money, and great ingredients. The cakes were dry dry dry and did I mention BLAND. Even when you added the syrup it was still awfull. I am really suprised to see how many people thought this book was any worth anyone time.

Similarly trustworthy, and reflecting their years of kitchen experience, The King Arthur Flour Baker's Companion offers over 400 recipes for all kinds of basic and up-to-the-minute specialties--from pancakes and waffles to muffins and quickbreads; from coffee cakes, pizzas and crackers, to hearthbreads, cakes and cookies, including two complete chocolate chip recipes, for soft and crispy kinds. This is one of those books that no baking kitchen should lack--not only for its comprehensive repertoire and recipe dependability, but for the intimate ease with which it fulfills its promise. What this means, partly, is that technical information is perfectly pitched to ensure relaxed understanding, offering neither too much nor too little detail. My son bought me this book for Mother's Day. I love it. I love the background stories behind the recipes. I made the Cream Cheese Pound Cake this past weekend. Everyone loved it!

I took this book to my mom's house and we chose two cakes to bake - the Red Velvet and the Thibodeaux Chocolate Doberge. My mom is a serious baker who rarely allows store-bought desserts or bread into the house, so I knew she would be a good one to test out this book with. The Red Velvet cake was not terribly impressive. Our cake had a soggy, fallen middle, yet managed to be over-baked around the edges. I could also taste the chemical flavor of the red food coloring, but that could just be the brand I used. The frosting was delicious.

The chocolate cake itself was delicious, but the recipe indicates a 300 degree oven. On our first try, baking the layers at 300 for 40 minutes in 8-inch rounds (instead of 9), resulted in raw cake. We purchased 9-inch rounds as the recipe called for and baked the next cake at 350 for 30-35 minutes. All of the other recipes in the book call for a 350 oven, so I'm not sure why this one was 300. 350 worked much better. The filling turned out to be delicious - essentially a chocolate pudding. The frosting did not turn out at all, and seems like a strange recipe for frosting. After following the instructions, chilling the frosting overnight then attempting to beat it into something that could be considered frosting, we ended up with a very runny (but tasty) concoction. We made my mom's recipe for a chocolate buttercream frosting that's not too sweet and it went perfectly with the cake.

I am looking forward to trying more recipes from this book. I think the caramel cake and the oatmeal cake will be next...
