"Cookies" is almost synonymous with "Mrs. Fields" and that's what attracted me to this book. I expected Mrs. Fields' recipe for her famous chocolate chip cookies to be revealed -- unfortunately, it isn't. The recipes are standard cookie recipes, with an emphasis on chocolate chip types. There's even one recipe that calls for the use of all kinds (semisweet, white, bittersweet) in one cookie. What I like are the pictures. The cookies look just like the ones I make at home and that, to me, is reassuring. I also like the straightforward way in which the recipes are presented. They all look simple and easy to do. The book encourages and gives one the confidence to go into the kitchen and bake.

Go ahead. See if you can say "big fat cookie" and not smile. I dare you.

I asked Elinor Klivans, noted Maine pastry chef and author of "Big Fat Cookies" (Chronicle Books) how she got the idea for her beautifully photographed, irresistibly cookie-licious cookbook.

"I was working on my last book ("Fearless Baking") and someone asked, "What do you think you want to do for your next book?" and without thinking about it, `big fat cookies' came out of my mouth, and I thought, yes, that's the one I should do."

With Valentine's Day only a kiss away, what could be better than giving some big fat cookies to the one you love, but try to choose just one recipe from this stunning, new book. I double dare you.

If chocolate be the food of love, bake on. For the Chocolate Chip-Stuffed Cookies, two mammoth chocolate chip cookies are stuffed with even more chips for a "now, why didn't I think of that?" chocoholic's dream. And how does Klivans produce a cookie firm enough to stand up to this chocolate overload? "I use all brown sugar rather than the usual granulated and brown sugar combination, plus cold eggs and only slightly softened butter, rather than the usual room temperature," she revealed.

Were you the kid that loved to make mud pies? Then the Chocolate-Covered Chocolate Chip Cookies" (aka "Mud Balls") are for you. "You bake these wonderful chocolate chip cookies, and when they're just cool enough to handle but still quite warm, you squish them into balls and refrigerate them," Klivans explained. "Then for the shiny chocolate coating, instead of tempering the chocolate, which is really tricky to do, you just melt chocolate with a little oil and dip the cookie balls in that mixture and refrigerate until firm. They look like giant truffles. For parties I even cut them into quarters."

Oh, did I mention - these are really big cookies! "Most of the cookies call for 1/4 cup of batter each," she noted. "I like to use an ice cream scoop. Then the cookies are all uniform and you just go down the line."

Because of their size, these cookies need to be baked longer, so most call for a lower temperature than you may be used to. "Cookies are a quick-baking item, and there's only a short interval between a perfectly baked cookie and an overbaked one," she cautioned. "And because of their high sugar content, they burn easily, so check the bottoms with a spatula to be sure they're not getting too dark Better to risk breaking one up than to ruin the whole batch. You can always eat that broken cookie!"

Why not bake some Heart-Shaped Butter Shortbread cookies for your Valentine. "These are sturdy cookies that hold their shape," said Klivans. "Cornstarch, unlike flour, contains no gluten and makes for a more tender cookie. As an option, add a teeny drop of red food coloring to a little of the glaze to turn it pink. Then drizzle the pink glaze over the white for a marbleized effect. I don't like to fuss with decorations for hours. These are so easy and really pretty too."

There are thousands of cookie recipes out there already, and probably hundreds of cookie recipe books. What makes The Good Cookie different, and worth making room for, is Tish Boyle. Food editor of the magazines Chocolatier and Pastry Art & Design, Boyle uses her experience as a pastry chef to update, improve, and choose between all those thousands of recipes for classic and best-loved cookies. She also includes recipes contributed by other excellent pastry chefs she's met, and for the remainder she relies on her own creative genius.

With over 250 recipes to choose from, Boyle makes the task much easier with mouth-watering introductions that describe in detail the appearance, texture, and taste of every cookie. The chapters are organized by technique, but the recipes are reorganized in an ingenious index by occasion or use: Ship Well, For Grown-Ups, Over-the-Top Chocolate, Bake Sale Bonanza, and the like. I like this book very much, and recommend it highly. It is a rare combination of 2 things that I enjoy every much: rich and fattening cookies, and recipes that work.

This book has 475 cookie recipes that have all been thoroughly tested by the test kitchens at Better Homes and Gardens. As such, every recipe I have ever done from this book has worked the first time through. With this many cookies, you are sure to find a recipe that fills the bill, and you will find rarities such as rosettes, cookie gun recipes, and pizzelle. There were some that I did not like, but that is not because the recipe was faulty, but because I just didn't like the cookie (this is especially true of the some of the bar cookies). This is also a handy book if you have youngsters who want to help you make cookies: the recipes won't fail you, and there are several "smiley face" sort of cookies that will appeal to children, and also many bars that are easy to do, even for children.

Also commendable is the format. The book is plastic spiral bound, which means that the book lies flat on the table when you are trying to do a recipe from it. Each recipe has a full page devoted to it, meaning that the text is nice and large and easy to read, and the recipe is nicely spread out over the printed page and not just jammed into a corner of it.

There are a few problems:
1) the most aggravating of which is side-bar mania, that is the placing of important information about techniques, ingredients, and equipment in random places throughout the book where you will never find them when you need them.
2) The actual introductory material on how to bake cookies in general in the first chapter is rather scanty. If all the above mentioned side-bars where collected and put into the first chapter, it might make for a decent primer on cookie making.
3) at one point, the authors suggest that you boil dried fruits in brandy on the stove. This sounds like a good recipe for a kitchen fire.
4) the chapter on bar cookies, in a side bar, admonishes you to always use the correct size pan. By my count, however, the chapter uses 5 different pan sizes, and you are unlikely to have all of them. Would it have been that much trouble to standardize all the bar recipes to one or two pan sizes?
5) this book had its share of marginal recipes: those that used mixes or store-bought cookie doughs, plus all those that have oats and/or dried fruit in them.
6) The flour measurement is spoon-and-sweep, but this important information is buried in a section titled "What makes cookies too dry?"

It has the following chapters (the chapter titles were too cute by half): Cookie Basics, Sweet Spoonfuls, Heavenly Hand-Shaped Cookies, Mold and Pressed Shapes, Slices of Delight, Rolling Pin Favorites, Fabulous Filled Cookies, Simple Shortcuts, Best Bars and Brownies.

This is another great book from elinor klivans. All of her recipes have clear instructions and give excellent results. I have made the cookie dough cheesecake and hot brownie sundae - both easy and very delicious!!! One drawback is that the print of the ingredients list is very light and small - somewhat difficult to read and requires double checking.
