I bought this book and the Ben and Jerry's book to go along with my new ice cream maker. Ben and Jerry's is great if I want something quick, but nothing beats the taste of some of the custard style ice cream and the sorbet recipes in this book. This is the "fancier" side of ice cream. We'va also enjoyed making some of the mix-ins and containers (like meringue nests) in this book.

This is an awesome book of recipes for ice creams, sorbets, sherberts, granitas and misc. other things that have to do with ice cream. It is a well put together collection and the author's writing style is not only interesting but downright fun...almost as fun as tasting the finished melting masterpeices that he describes. This book gives you all the essentials, the basic must-have ice cream recipes and then it goes on to include recipes that are imaginative and sound absolutely sinful. I really like that most of the recipes don't require ingredients that are hard to find or never heard of. I also like that the author tells you when to use specific high quality ingredients that make a difference in the end product and that are actually worth your time and money to use. These recipes are simple yet elegantly luscious. This book has expanded not only my waistline but also how I think about the possibilities of frozen confections.

In Baking with Julia (Child, of course) and Desserts by Pierre Hermé, Dorrie Greenspan gave voice to other baking experts while ensuring their recipes worked. Now, in Baking: From My Home to Yours, she steps fully onstage with a collection of 230-plus immediately attractive recipes ranging from breakfast sweets, cakes, and tarts to puddings, custards, ice creams, and crisps. This is homey, eminently doable baking that encompasses the more familiar, like sugar-topped molasses spice cookies, pecan sticky buns, and lemon tart, but also includes the temptingly original, such as Devil's Food White-Out Cake, Coconut-Roasted Pineapple Dacquoise, and Toasted Almond Scones. Her cookie selection, which offers the standout Chocolate Malted Whopper Drops, is particularly good, as is her brownie group, a mini-chapter featuring a very edible espresso cheesecake variation.

Greenspan knows her stuff, of course, but it's her droll, anecdotal style (readers learn, for example how a chocolate cake got her fired) and her recipe-making expertise that sets the book apart. Fo better scientific understanding, see "Understanding Baking" by Joseph Amendola.

Current CIA baking instructors are in the process of replacing this book as it's not the best teaching instrument because the science is ignored and factually incorrect at places. All of this from a current student.

This book is a must for a savory kitchen. My staff uses the recipes out of this book constantly. A nessasary part of a professional kitchen mise en place. I had to buy a second copy because the first one is worn out.

This book is a little pricey, but you get what you pay for. I am getting into the chocolate business and have a recent certificate in chocolate making. Of all of the books I have read on chocolate making, this one has the best lay out and photographs. The how to sections are easily read for the amateur but very comprehensive for those wishing to read further.

As a culinary student, my chocolates and confections class instructor relied heavily on this book to teach us recipes and techniques. My team has yet to fail in any of our candy making endeavors. :)

Part food-porn, and all instructional, if you're serious about making the best ganaches, chocolates and confections, look no further. This book is absolutely indespensible.

the pics are very inspirational. tried 2 of the cupcake recipes - white & kahlua. they turned out beauitful... light & fluffy. haven't tried the other recipes though. but after trying the 2, am convinced tt the rest will be equally good. the only set-back - most recipes listed are not for the tight-budget minded.

vanilla vanilla cupcakes disappointing, but other recipes good 4 out of 5 stars.

I've tried the red velvet cake (made them into cupcakes to fill that craving) with the cream cheese frosting. These were fabulous! I keep the frosting in a bag in the refrigerator and eat them when I have the urge. (I keep the cupcakes in the freezer and defrost when the craving strikes.) They are very light and fluffy and were the best "from scratch" cake I've had.

I just baked this morning the vanilla vanilla cupcakes with signature frosting and, after just moments ago tasting one, was disappointed. It turned out dense and with a strange subtle taste to them that I suspect was imparted by the self-rising flour. I've never used self-rising flour and was shocked to find salt among the many ingredients in the flour. The cupcakes just tasted a little funny, and even a tad salty despite my using less than the recipe called for (again, maybe the flour??). The frosting was a little sweet for me. Perhaps adding some cream instead of all milk would have mellowed it a tad. I usually make my frostings with some cream for consistency and taste.

I read the cautionary reviews that these turn out great for baking novices and disappointing for those with lots of baking experience. I'm an avid baker, and so this was unfortunately a correct predictor in my case. I'll keep trying the others, but will continue to hunt for another recipe.
