The encyclopedic Rick Stein's Complete Seafood is particularly welcome. Not only does the British chef's book offer 150 attractive recipes and step-by-step instructional color photographs--it classifies the world's seafood in a thorough, approachable, and up-to-date way. This is no small accomplishment. Fish classification is notoriously vexed; local usage can result in multiple names for the same fish--one person's dolphinfish is, for example, another's mahi mahi--or dozens of different fish with the same name. Grouping seafood by anatomical distinctions, such as billfish (which includes swordfish and marlin), as well as by family, helps create a clearer picture; and color illustrations, plus a valuable chart that delineates common, Latin, and family names, as well as home-region, further elucidates what's what and where.

In addition, the oversize book's technical illustration, which delves far beyond the usual guide to filleting, skinning, and the like, is an informative trove. Preparing flatfish for broiling and for deep frying are two examples of this thoroughness that also covers baking whole fish in foil; butterflying raw shrimp for broiling; and preparing raw, smoked, and, cured fish, among other key methods. The central section of the book is devoted to Stein's recipes, which range from the simple and direct, like Baked Sea Bass with Roasted Red Pepper, Tomatoes and Anchovies, and Sautéed Soft-Shell Crabs with Garlic Butter, to the more dressy, such as Fillet of Bass with Vanilla Butter Vinaigrette and Mussels en Croustade with Leeks and White Wine. Offered with suggestions for using alternative fish types, the formulas also help readers make sense of seafood’s bounty--and to find recipes based on market availability. So surprised to just unwrap my amazon.com box and find The Best 50 Salad Dressings book. With shipping it comes to almost ten bucks for this postcard-size book. While I am sure I will enjoy making all of the salad dressings, someone should make a note for potential buyers that this book is not a typical size paperback. It's very small.

Great for vinaigrette lovers (not so much for creamy dressing lovers) 4 out of 5 stars.

This little book is cute and easy to use. It has a few creamy recipes in the beginning, but most of the book is devoted to vinaigrettes. I was personally hoping for more creamy recipes, but this will still be a useful tool. I look forward to trying the Avocado Dressing, the Italian Buttermilk Dressing and the Creamy Curry Dressing.
I would wholeheartedly recommend this for people who love vinegar-based dressings.

From the guidelines for gathering medicinal plants to instructions for tincture preparation, Joyce Wardwell conveys her love and respect for herbs. She comes from a long line of herbalists: her great-great-grandmother Jane learned the herbal craft from the Ojibway in Minnesota; Jane's mother was condemned for witchcraft and her husband was hung for it during the Salem, Massachusetts, Witch Trials. But there's nothing to fear from the Remedy Book: recipes are made primarily from the 25 most common herbs, and instructions are so clear they're nearly foolproof. The flu, insomnia, colic, menopause, and sore muscles are all covered.     My fiance and I are saving for our wedding, so this year we are using Gifts in a Bag - Dips to make our Christmas gifts for firends and family. I "test marketed" the Mexican Fiesta Dip to a group of her friends one evening and the bowl was empty when everyone left. I guess no-one liked it.

    We set up packets of three different dips and a bag of chips for each giftee! We chose the Herb Dip, Garlic and Chive Dip and the Mexican Fiesta Dip.

    The great thing about this series of books is that you can make each gift and personalize it. We made personalized tags with our pictures and funny names for the dips, like: Kiss Me Quick Garlic and Chive Dip. I think that if the reception to the dips is anything like the test groups reaction then we've got another winner with the Gifts in a... Series. (Last year we made Gifts in a Jar - Cookie mixes for Christmas. Those went over really well.)

    Betty Crocker doesn't believe in waste, and that includes space. Just look inside the front cover of her Best Chicken Cookbook. There you'll find 10 "Fast and Easy" chicken dinner entrées and five "Quick Main Dish Chicken Salads." You start with four boneless, skinless chicken breasts that you then flatten, and 20 minutes later you serve something along the lines of Pesto Chicken, Pecan Maple Chicken, or Fajita Chicken. Or Oriental Chicken Salad. Or Raspberry Chicken Salad. Inside the back cover, you'll find eight Moist Poultry Secrets (wrap tightly during storage; don't undercook chicken--it's tough and rubbery) and a table of nutrition facts.

    The seven chapters of Best Chicken Cookbook are "Super Express ... Thirty Minutes or Less"; "Stir-Fries and Skillet Meals"; "Baked and Roasted Chicken"; "Great Chicken Classics"; "Fire Up the Grill"; "Salads, Sandwiches, and Pizza"; and "Soups, Chilies, and Chowders." The "All About Chicken" section that introduces the book is just that: everything. Learn safe handling, boning, cutting up, flattening, the different types of chicken, stuffing, thermometers, etc. There are roasting timetables and microwave tables and tips on carving.

    Every recipe is a textbook example of brevity. Betty Crocker believes in the sanctity of the 3 x 5 recipe card. Both prep and cooking times are listed, as well as the number of servings you can expect. The nutrition breakdown for a single serving completes each recipe so you know exactly what the calories and the fat numbers are like. And every recipe is faced by a full-page color photo of what the finished dish looks like.

    Anyone--good cook and new cook alike--can pick up a copy of Betty Crocker's Best Chicken Cookbook and, with the right ingredients on hand, put a flavorful, nutritious meal on the table in a half-hour in most cases. This book will be a place to start for some cooks. More experienced cooks will find ways to trim time from their cooking chores. --Schuyler Ingle
