This book from owners of the Al Forno Restaurant in Providence, is a must for pasta lovers. Recipes are straight forward and easy to prepare. Ingredients are listed in shadow boxes and each recipe is prefaced with anecdotes, explanations and other comments that make it seem the authors are talking to you in your kitchen. There are sections on preparing pasta with various ingredients, such as with seafood, vegetables, and various meats. This book truly does cover all you ever need to know about pasta.

Braising--cooking food slowly and at low temperatures in a closed pot with a little liquid--produces deeply flavorful food. Molly Stevens's All About Braising is a definitive exploration of this soul-satisfying approach to food. With 125 simple recipes for braises of all kinds--from meat and poultry through seafood and vegetables, plus a thorough anatomy of technique (Stevens explores oven versus stovetop braising, for example)--the book will please cooks at every skill level. Most importantly, perhaps, it will send them to the kitchen to prepare enticing dishes such as Braised Endive with Prosciutto, Whole Chicken Braised with Pears and Rosemary, Duck Ragu with Pasta, and Veal Shoulder Braised with Figs & Sherry. Braises can also taste as good or better the next day, and Stevens supplies advice for second-day service. Included, too, is an "Opinionated Pantry" which, besides exploring relevant ingredients, expresses Stevens's ongoing commitment to using only the best and freshest available.

Throughout, Stevens's offers sensible, rewarding counsel. "If it comes down to a matter of cooking or not cooking dinner for your family," she says, "I recommend buying commercially raised chicken [as opposed to locally produced or other naturally raised poultry]. If you want to learn to smoke foods, this is the book! 5 out of 5 stars.

This is probably the most complete, detailed book available on smoking food. It's not a barbecue book, it's a smoking book. Written by Warren Anderson, a food enthusiast and long-time food smoker, It covers both cold and hot smoking and includes detailed instructions for building your own smoker, or using commercial smokers. Warren shares everything he has learned through years of smoking food. A chapter covers smoking woods, where to get them and the characteristics of different types of woods. The chapter on cures and marinades covers brines, dry and wet cures, and marinades. Detailed recipes and instructions are included for making smoked bacon, ham, pastrami, jerky, cheese, turkey, fish, shellfish, sausage, nuts, and even smoked Peking duck. It's interesting that the Publisher's Weekly review is critical of the book for being TOO detailed. According to Publisher's Weekly, the descriptions and techniques "read like a technical manual, although Cook's Illustrated fans might welcome the excruciating detail. Though directed toward nonprofessionals, this book isn't likely to please armchair chefs." So, if you are an "armchair chef", this book may not be for you, but as Publisher's Weekly says "for those who plan to make a habit of smoking food, Anderson delivers". If you are serious about smoked food then this book is for you.

This extraordinary cookbook, Classic Indian Cooking, amounts to a complete course in Indian cuisine. Elucidated by over 100 line drawings, it systematically introduces the properties of all the basic spices and special ingredients of Indian food, then explains the techniques employed in using them, always with the help of comparisons to familiar Western methods.

It is immediately obvious that Indian food is rich and varied, yet not difficult to prepare. The cooking principles are basic and wellknown. The utensils needed are few and simple. As Julie Sahni says, "If you know how to fry, there are few tricks to Indian food." Every recipe has been especially designed for the American kitchen -- practically all the ingredients can be found in any American supermarket and there are scores of time-saving shortcuts with the food processor and handy directions for ahead-of-time preparation.

Following a lively and absorbing introduction to the history of India's classic Moghul cuisine, Julie guides the cook through the individual components that make up an Indian meal. The ultimate guide for making your own jerky! 4 out of 5 stars.

Compared to general-use cookbooks, those with a specific focus, such as this one, are directed at a narrower audience. They tend to be tougher to write because the consumer who picks it up expects more than a mere compilation of recipes. Mary Bell delivers!

Her first chapter covers the where's, why's and how's of jerky, even including its background history. She continues by going into more specific topics of preparation and storing the chewy morsels, covering a variety of methods and equipment which may be employed to achieve a variety of results.

What follows are about 100 pages of recipes. I was amazed to see how many different kinds of foods may be preserved this way. Sure, I've been making beef jerky for years, usually with a teriyaki marinade...and for variety, I'd add garlic this time, maybe curry powder the next. Who would have thought to write a jerky cookbook? I'm glad Mary did, though.

Don't get me wrong. If I'd given it a little thought, I would have come up with the idea of substituting pork or poultry for the beef. But never would I have considered using ground meat...or believe it or not, vegetarian jerky.

A few years ago, my husband and I were driving up the California coast, enjoying the scenery and the quaintness of the region, not to mention the clear blue waters of the Pacific near the Oregon border. Every few miles, we would see signs advertising little country stores that sold salmon jerky. We were intrigued enough to stop and sample some and wound up buying a bag to munch on while we drove or to eat at roadside tables in the forests of Northern California. Well, that had been our intention. It was so good, we polished off the bag fairly quickly. Unfortunately, we saw no more of these businesses the rest of our trip.

I've been looking for a recipe for this delicious snack ever since. I've done web searches, posted requests in a number of food newsgroups, asked friends, and talked about it to everyone I knew, but I came up with no way to duplicate it. Finally, I got Mary's book and there it was. (Can you tell how excited I am?) Not only salmon, but she also covers trout, cod, tuna, catfish, halibut, sole and other small panfish.

Vegetarian jerky? Sure...and you'll be amazed at what she's come up with. We're not just talking about vegetables, either.

And to finish it all off, here's a grabber for ya...jerky desserts!

No pictures and very few illustrations, but you don't miss them in this book. Matter of fact, I imagine all the jerky would start looking alike after awhile.

The format is great: easy to read, with the ingredients listed in boldface slightly larger than the instructions, and each recipe includes a little sidebar that enhances its corresponding dish, either informationally or via interesting anecdotes.

Very nicely done and highly recommended.
