I love an exotic salad. I collect specialty cookbooks. Ergo, "Simply Salads" is now an integral part of my collection.

Not without good reason! Right on the cover, Jennifer Chandler announces that her cookbook contains "more than 100 delicious creative recipes made from prepackaged greens and a few easy-to-find ingredients." My goodness, who could ask for more, but I did. I wanted proof. Let's walk through the book. (When I get a new cookbook, I start at the beginning and leaf through every single page, stopping at certain recipes to read for difficulty and ingredients. Oh my, but I want to try so many recipes from this book.)

This introductory chapter displays all the packaged greens, a standard list of kitchen aids needed, and pantry items. The first recipe is "Steakhouse Wedge Salad" and what a gorgeous photo (Every single recipe has a close-up photo of the salad). By the way, each recipe comes with a homemade dressing, but, of course, store-bought can be used. Here's a Wilted Spinach Salad with mushrooms and an egg-based dressing.

The book is arranged by categories of salads. The two recipes above come from the Greens chapter. Others are the various meats, Fruit, then Beans, Grains, Rice & Pasta, next Slaws, and the additional Dressings chapter. Let's continue our flip-through: Grilled Romaine with mandarin orange slices and toasted almonds with a green goddess dressing. Does it look great! Black and Blue Chicken Salad (Bleu cheese and blackened chicken), Prosciutto and Melon Salad, Beef Tenderloin Salad with Horseradish Dressing (yogurt, sour cream, horseradish, and mayonnaise--sounds heavenly, yes?), and Grilled Lamb and Tabbouleh Salad for a Middle Eastern flavor.

Try this one: Seared Salmon over Mixed Greens (Spring Mix, feta crumbles, dried cranberries, and candied pecans with a Raspberry Vinaigrette. Isn't this a wow?) Or two of my favorite ingredients: Butter Lettuce with Smoked Salmon, capers, and Dill with Lemon Vinaigrette.

From the Vegetable chapter: Warm Fingerling Potato Salad (you gotta love fingerlings), the fabulous Caprese Salad (tomato, fresh mozzarella, and basil with balsamic vinaigrette), Meze-in-a-Minute Platter--you will love this (Romaine lettuce, tabbouleh, hummus, dolmas [stuffed grape leaves], black olives, and tiny pita wedges.

So many of these salads are so summery. My personal favorite (and that was a difficult choice) is Mango, Avocado, and Cilantro Salad made with Spring Mix and chopped red onions. Just think of those flavors and textures. I wonder if I threw in a few boiled shrimp? This fruit chapter offers so many tempting recipes: Orange and Fennel Salad, Watermelon and Argula with feta and toasted pine nuts, Arugula with figs, pancetta, goat cheese.

With summer coming, a book like this, with choices and ingredients acquired ahead, coming home from work and making any of these divine salads will make your evening fresh and refreshing. Feed the kids hot dogs and put on a movie in the den. If the husband insists on meat, grill a chicken breast. Now you can have a relaxing meal on the patio with a bottle of wine or chilled tea. Let your day unwind with "simply salads."

Long gone are the days when people created their salads by purchasing a head of iceberg lettuce and a head or romaine, cutting up a tomato and a boiled egg and adding some wishbone dressing. Today anyone can create a delicious gourmet salad by picking up one of the hundreds of bagged salad mixes available and adding ingredients to create masterpieces such as:

  • Mandarin Chicken Salad with Toasted Sesame Vinaigrette
  • Classic Caesar Salad with Herb Croutons
  • Spinach Salad with Roasted Cherry Tomatoes

Each salad has dressing recommendations and recipes, menu ideas, and nutritional information. The book contains recipes for more than 100 salads and dressings.

Another Solid Book from Lou Seibert Pappas 4 out of 5 stars.

I have enjoyed other cookbooks by Lou Seibert Pappas (Creme Brulee; Ice Cream & Sorbet; Coffee Cakes) so I ordered this without first checking it out in a book store. It did not diappoint.

The first several chapters provide very helpful background about choosing, storing and cooking squash as well as listing the types of squash (both winter and summer squash varieties).

Many of the recipes are novel and are delicious-sounding pairing of ingredients that I haven't seen in other cookbooks (and I have a lot). More than half of the recipes are accompanied by a beautiful full-page color photo. As a vegetarian, I found many recipes I want to try but the Entrees chapter also includes a nice selection of recipes for meat eaters (from chicken to lamb, pork to fish).

Chapters include Breads and Breakfast (rosemary-polenta pumpkin muffins, zucchini-golden raisin quick bread, pumpkin-orange waffles with hazelnut-maple sryup butter); Soups, Salads and Sides (butternut squash-pear bisque, roasted butternut squash polenta with fried sage, goat cheese-stuffed squash blossom and heirloom tomato salad); Entrees (five-spice pork tenderloin with pumpkin half-moons and red grapes, grilled chicken breasts stuffed with zucchini and goat cheese, chayote stuffed with lamb and pine nuts); and Desserts (cranberry-pecan pumpkin drop cookies, candied ginger-pumpkin creme brulee, pumpkin cheesecake with gingersnap crust, caramel-glazed pumpkin date bars).

As you might expect, pumpkins are the most popular squash used throughout the book and appear in nearly half of the recipes. Other squashes featured include butternut, spaghetti, zucchini, chayote, kabocha, and acorn. Several recipes let you choose the winter or summer squash to use but, don't worry, there is a list from which to choose.

This would be a wonderful hostess gift in the fall if you are a guest for dinner or a weekend.

Buttercup or crookneck pattypan or sugar pumpkin squashes and pumpkins are delicious additions to muffins breads soups salads pastas entrées and sweets. Just as good in the morning as at night the recipes in this beautiful cookbook include such gems as Cranberry-Walnut Pumpkin Coffee Cake Grilled Chicken Breasts Stuffed with Zucchini and Goat Cheese and Five-Spice Pumpkin-Ginger Cake. With 40 wonderful recipes a glossary of the types of squash basic cooking instructions and useful tips on how to buy and store them these versatile delicious gourds make for year-round goodness.

Goldmine! I'm very picky, and love this little book. 5 out of 5 stars.

Well, first off, I'm prediabetic and have a sensitive system so I don't think I would have searched for stevia unless I had to. My instincts are to seek out 100% natural herbal sweeteners over the chemicals that are otherwised pushed on us.

I've thumbed through stevia (and general diabetic-friendly) recipe books in book stores and have been disappointed in the recipes that mostly try to overdose on fat and other sugars (concencrated white grape juice etc.) to make up for the lost sugar. I cringe when I pick up a recipe book that uses Maltitol or Xylitol or Chemic-it-all etc etc.

This book has healthy fun recipes that use stevia sensibly, within reason and within its limits. The author seems to have really done a lot of test-kitchen work and found ways to make stevia blend easily into foods. I went through on the first sitting and put post-it notes on at least 15 pages. Unusual for a recipe book.

I like the spiral binding also. On anything other than a cookbook I find it annoying, but having to crack the binding of a cookbook just to get it to lay flat (and it never does) is no good. The spiral-binding here is perfect.

I'd only wish there to be photographs included (there are a few simple line drawings for decorative effect) but I know that adding photographs adds greatly to the cost of the book production so I'm grateful that the cost is low instead. My monthly book budget can get out of hand otherwise.

The stevia recipes use unsweetened applesauce here and there for a replacement of the bulk of the sugar. A lot of whole wheat *pastry* flour, which I'll have to look for but I understand the health and recipe value of it.

The *type* of Stevia one uses is important, of course. The little coffee-shop stevia packets have a lot of filler inside, so one can't use those. Pure Stevia Extract powder (85-95% Glycosides) as is sold in bulk, or found at Trader Joe's (as noted by the author) is used throughout the book, as well as an alternative Green Stevia Powder (minimally processed, ground green stevia leaf). A small few of the recipes make use of your 1/8 and even 1/16 teaspoons, so have those handy.

Here are a few of the recipes I've got lined up to try: a great granola recipe that doesn't depend on a honey base, Oatmeal Banana Bread, Roasted Squash Onion & Cheese Pie, Fudgy Brownies (uses some butter and yogurt, btw), Chocolate Chip Cookies, Moist Banana Cake, Cream Puffs, Apple Nut Crisp, and a few more.

I was happily surprised to find more than just dessert recipes. The author has included many other basics (sauces, cake frostings, main dishes, beverages) that I hadn't thought of.

I'm going to keep this one in my cupboard and just snag recipes here and there from other sources, online and in the bookstore. This is the book I want to actually own.

First off, you're going to need two copies of this book: one for the kitchen and one for your glove box. One for the kitchen and one for the road!

Becky Mercuri, as in all her other fine books, has once again gone above and beyond in her quest to document the historical authenticity, modern day excellence, and (with apologies to A.B.) just plane ol' good eats!

The Great American Hot Dog Book does for hot dogs what hot sauce did for the lowly chicken wing: it takes the common and turns it into the exceptional! No matter your station in life, you'll never be able to look down your nose at the hot dog ever again! The recipes that Ms Becky has researched, tested, and then included in this book will see to it that you won't!

She has done a great job of providing us with the knowledge and recipes that examine and celebrate the various regional differences and preferences for hot dogs across this great land of ours. And there are some undeniable difference, for sure. Just ask any hot dog vendor in Chicago for ketchup on your dog and see what happens...

This is a great book on a great American tradition.
