Editorial Review:

From the best-selling author of Tapas: The Little Dishes of Spain and The Foods and Wines of Spain.

Unless they have traveled to spain, most Americans have never tasted a really good paella. What passes for paella at restaurants and even in cookbooks here is a pale imitation of the real thing, the vibrant Spanish rice dish that marries the robust flavors of olive oil, garlic, tomatoes, and pepper with short-grain rice, broth, and meat, fish, or vegetables. Penelope Casas is here to restore the glorious paella to its rightful place as a grain-based meal that will gratify the senses as well as be the centerpiece for easy, elegant entertaining.

Casas presents sixty different fascinating paellas, some traditional, some her own creation, showing how easily some of the preparation can be done ahead of time with supermarket ingredients. She includes a superior collection of tapas, the Spanish meal starters, two dozen simple desserts, and a handful of broths and sauces. Her passion for paella, her clear directions, and her creative pairings of fresh ingredients make this unusual cookbook a winner.

Editorial Review:

An eye-opening look at aquaculture that does for seafood what Fast Food Nation did for beef.

Dividing his sensibilities between Epicureanism and ethics, Taras Grescoe set out on a nine-month, worldwide search for a delicious—and humane—plate of seafood. What he discovered shocked him. From North American Red Lobsters to fish farms and research centers in China, Bottomfeeder takes readers on an illuminating tour through the $55-billion-dollar-a-year seafood industry. Grescoe examines how out-of-control pollution, unregulated fishing practices, and climate change affect what ends up on our plate. More than a screed against a multibillion-dollar industry, however, this is also a balanced and practical guide to eating, as Grescoe explains to readers which fish are best for our environment, our seas, and our bodies.

At once entertaining and illuminating, Bottomfeeder is a thoroughly enjoyable look at the world’s cuisines and an examination of the fishing and farming practices we too easily take for granted.

Editorial Review:

The cow. The most industrious animal in the world. A beast central to human existence since time began, it has played a vital role in our history not only as a source of food, but also as a means of labor, an economic resource, an inspiration for art, and even as a religious icon. Prehistoric people painted it on cave walls; explorers, merchants, and landowners traded it as currency; many cultures worshipped it as a god. So how did it come to occupy the sorry state it does today—more factory product than animal?

In Beef, Andrew Rimas and Evan D. G. Fraser answer that question, telling the story of cattle in its entirety. From the powerful auroch, a now extinct beast once revered as a mystical totem, to the dairy cows of seventeenth-century Holland to the frozen meat patties and growth hormones of today, the authors deliver an engaging panoramic view of the cow's long and colorful history.

Peppered with lively anecdotes, recipes, and culinary tidbits, Beef tells a story that spans the globe, from ancient Mediterranean bullfighting rings to the rugged grazing grounds of eighteenth-century England, from the quiet farms of Japan's Kobe beef cows to crowded American stockyards to remote villages in East Africa, home of the Masai, a society to which cattle mean everything. Leaving no stone unturned in its exploration of the cow's legacy, the narrative serves not only as a compelling story but as a call to arms, offering practical solutions for confronting the current condition of the wasteful beef and dairy industries.

Beef is a captivating history of an animal whose relationship with humanity has shaped the world as we know it, and readers will never look at steak the same way again.

The book could have gotten more in depth with the subject of butchering, but overall it is still a good book for the novice butcher. I am no novice, but still picked up a tip or two.

Somewhat decent but lacking overall 3 out of 5 stars.
6 of 6 people found this review helpful.

Janet Fletcher's "Cheese & Wine," is a decent compendium of the major Western European and American cheeses of the world but is somewhat lacking in basic information to make this is a must-buy. For starters, it is disappointing that only (approximately) half of the 70 cheeses listed in the book are accompained by photographic images. For a book that purports itself to be a good starting point for cheese novices this lack of visual information is a serious mis-cue. Another point that was disappointing was the lack of any pricing info on the assortment of cheeses. Even the most cursory inclusion of the general pricing for each item would have been greatly welcome. That being said the photos that are included are all spectacular and it goes without saying that the overall construction and layout of this tome is extremely well-done and very handsome throughout.

Editorial Review:

From the best-selling author of The Cheese Course comes a new guide to enjoying one of the most basic yet sophisticated culinary delights: cheese and wine. Janet Fletcher leads readers on an international tour of 70 cheeses, exploring the best wine pairings and serving suggestions. From Oregon's autumnal Rogue River Blue to aromatic Brin d'Amour evocative of the Corsican countryside, cheese lovers will savor the range of textures, flavors, and colors. Featuring mouth-watering color photography and detailed, informative text, this collection of cheeses and the wines that go with them will inspire perfect pairings.

Yummy! 5 out of 5 stars.
3 of 3 people found this review helpful.

I love this book! I'm new to juicing and some things I didn't think I could handle drinking, but the author did a good job making everything sound so yummy! I really love how she organized the fruits. It's nice to go into my kitchen and see that I have a pineapple I need to use and then have several recipes to go with it. My husband is most likely thinking it's going to end up on the shelf untouched like the rest, but I think this is definately a keeper :)

Editorial Review:

Juice bars are all the rage, but making the drinks at home is an easy — and less expensive — way to sustain a smoothie habit. The Big Book of Juices and Smoothies features 365 healthy, delicious recipes, many of which can be prepared with nothing more than a blender. Each drink is rated for its energy/immune boosting properties, detoxifying qualities, and skin enhancing abilities, while an at-a-glance nutrient profile lists vitamins, minerals, and phytonutrients. Juice plans, such as a "detox weekend" or an "immune-boosting week" round out the book.

Very Unhappy With This Book It has None Of The Main Roll Recipes 1 out of 5 stars.
9 of 13 people found this review helpful.

Today I received this book it has none of the main sushi roll recipes (spicy tuna roll, normal california roll, hawaiian roll, tiger roll, dynamite roll, pizza roll, crunchy shrimp rolls, etc. etc. etc.) mainly vegitarian rolls, and sashimi.

It does have nice pictures too bad it doesn't have good recipes. I am very disappointed with this book and am returning it.
