but unfortunately, most of the cheeses I tried to look up were not among the more than 300 described here. I gave this to my brother as a gift and we took it along to the local Central Market in Dallas. Most of the cheeses we were interested in couldn't be found in the book. Recommended, but with reservations - the descriptions of the cheeses that are actually in the book are truly mouth-watering.

Not quite what I thought I was getting. Could use more pictures, it always helps to see what you are making. I was expecting more unique ideas for cheesecakes. It is more a collection of classic and basic recipes. It does have some good tips and ideas for different type of crusts.

I received this book as a gift almost 20 years ago. Now I purchased the book for my daughter. Although I still read and try other cheesecake recipes I find that I end up resorting to old faithful. This book will never let you down.

Unique Recipes At Reasonable Cost 4 out of 5 stars.

This isn't a fancy book with color photos, in fact the only color photo is on the cover, but it does contain some good old fashioned recipes. There are many variations presented for chocolate and vanilla ice creams, some not requiring any cooking. There are exotic treats such as caramel, banana chocolate, maple walnut and even butterscotch royal ice cream. There's even ice cream recipes that are based on instant pudding and one on jello!

The author covers a brief history of ice cream and covers each of the main ingredients as well as why they're needed.

Negatives:

All of the recipes make about a gallon so you'll have to size them down if your machine can't handle a full gallon. Luckily Ice Cream recipes can be successfully sized down.

Many of the recipies do require cooking of some sort.

Also some recipes use "rennet tablets" something that I'm not familiar with.

----------- Overall this is a good basic book with some unique ice creams at a fantastic price.

The father of one of my closest friends is French and their family, on special occasions, has traditional raclette dinners. The dish raclette--a warm cheese dish--is thought to have originated in Switzerland where farmers and herdsman would make a meal of cheese melted by campfire or hearth, scraped over potatoes and pickles. Whenever eating with my friend's family, we would eat those same traditional foods: racelette for the cheese, several kinds of hams, boiled potatoes, cornichons, and onions.

Loving the communal, largely cook-it-yourselves meals, I bought a raclette grill. But, I had never been in charge of the meal's preparations so with it, I purchased this little book sight unseen. It is fabulous. I'd give it six stars if I could. Not only does it provide useful tips, like how much food to make per person, including how much cheese you should buy for each person attending the dinner; how to care for and clean your grill; how to contain the scent of the raclette party (lots of cooking cheese) and what to do afterwards if you are unsuccessful (among other suggestions, an orange studded with cloves); what to do with the leftovers (if any!); and a simple but very valuable how-to guide for the host or hostess, but it also provides excellent recipes.

The recipes are organized into categories--fruit and veggie, meat, and seafood--and suggest different kinds of cheeses to accompany each, in addition to the traditional raclette. The book also include recipes for the grill, which I had never, confessedly, used at my friend's house. One of the grill recipes that I tried was grilling some polenta on the top grill while heating tomatoes, olives, sliced garlic, and fresh basil ribbons with cheese on top in the dish underneath and then putting the melted mixture on top of the grilled polenta -- extremely tasty and a fun alternative to the traditional raclette ingredients. In fact, it's the fun-alternative-to-the-traditional that is the book's strong point and makes it valuable. It also suggests beverages (alcoholic and non-) that complement the different recipes well, and has a few interesting recipes for side dishes and sauces.

This little book helped me throw one of my most successful and stress-free dinner parties. The suggested amounts were nearly perfect, I was prepared for the meal the NIGHT BEFORE (unheard of), the food was excellent (and cooked by the GUESTS!), and I could enjoy my guests without having to run in and out of the kitchen. Buy this book with any raclette grill and you'll have one of the best and simplest family meals or dinner parties around.

The only downside is that the book isn't longer.

I don't understand the negativity. The other review reads more like something you'd hear from a jealous competing writer or publisher rather than a reader--which makes me very suspicious of his/her motives.

I, on the other hand, found The Cheese Lover's Companion to be factual, thorough, and written in a very engaging manner. I know cheese (but am always eager to learn more), and I feel the level of detail in this book is spot-on (and the production quality is fine). If you love cheese, I think you would find this title an indispensable part of your library. Highly recommended!

Try this cookbook FIRST if you are allergic to Milk!!! 5 out of 5 stars.

I work full time, I have 2 kids, I don't have time to make all sorts of substitutes and marinate stuff for hours. This is simple, easy to follow book with results that are really tastey. INCLUDING DESSERTS!!! The whole family ate these reciepes no questions asked! They didn't even know that they were eating dairy free until I told them a week later. I have yet to have one reciepe flop!!
Some of the manufactures of subst items she lists are A LITTLE outdated, but we all know to check labels and I still found her tips very useful. I had been adjusting to not eating at all when in doubt, with this book I am starting to explore more in milk free cooking because I have less doubts.

As for "Cooking Without Milk: Milk-Free and Lactose-Free Recipes" Light a match and just burn your cash..not worth the paper it's on. I mean...Do you really need a recipe for a peanut and butter sandwich?

I learned to make cheese with this book, so it couldn't be all bad, but I found myself going to the internet to check out proportions that looked wrong, going to another recipe in the book when the one I was using said, "Add salt," but there had been no salt in the ingredients list (I assumed that I could use the amount listed in another 2-gallon recipe), and making Muenster with no starter culture since it was not listed in the ingredients or referred to in the process description. I got cheese, but it sure wasn't like any other Meunster I ever ate. Wasn't too good, and an experienced cheese maker told me you have to use a starter culture in Meunster.

The book gave equivalents in some recipes (rennet tablets vs. liquid rennet / powdered starter cultures vs. fresh cultures), in others it gave only one and in some it didn't tell you which it was listing. If anyone made the Colby first and put in three ounces of powdered starter culture, you would have an expensive cheese to say the least. Also, I checked with my supplier and found out the 1/2 tsp. mesophilic starter culture the author lists in two-gallon recipes was twice what is necessary, which cranks up the cost a good bit. But now I know and I'm buying only half as much starter culture.

I am puzzled when I read these good reviews. Did they just do a batch of chevre or cottage cheese and call it quits? If you follow these recipes exactly, you will have many failures.
