This is the book every person should read, unless they are a vegan. And even then unless they are militant anti-carnivores they should have it in their home or give it out to their meat-eating friends.

I recently purchased the River Cottage Book of Meat for a friend who is a lover of all things meat, but also a wonderful cook and collector of cookbooks. This is the note I received on his receipt of the book:

Since receiving Grill It!, my husband and I have tried several recipes and all have them have been fantastic. Bobby Flay breaks each recipe down to simple steps and all recipes tried thus far were easily accomplished on a weeknight. We highly recommend this book for all those who enjoy to grill.

A delightfully intriguing, simple, and elegant collection of recipes and techniques. Unlike some of the reviewers, I see little or no problems getting the ingredients or reasonable substitutions. Pig's head, tripe, tongue, etc just go to a Mexican or Asian market. I may not be able to get rocket but I know I can get nasturtium leaves and flowers (also peppery greens) from my backyard. Most of the shock seems to come from the ingredients we all used to eat, and may still eat if you have had ground meat products. Honestly where do you think it all comes from? Ninety percent of these recopies can easily be made without any searching for ingredients. Most of the rest need a little bit of searching, pre- planning or pre-orders from a meat or fish market...or even a good counter at your neighborhood grocery store will do special orders with a down payment of some kind. Having been part of a group that does historical medieval reenactments (yes SCA) I can tell you even in this day in age you can get much of this stuff easily. There are no true exotics in here. If you don't have exactly what the recipe says any search of internet cooking sites can give you substitution charts and http://www.foodsubs.com/ is a personal favorite. Live a little. Try something more like what we ate when we had to use ALL the animal, because we couldn't afford to waste anything...and you might find it tastes not only good, but better than the more commonly found fare in your supermarket prepackaged, precut, preped foods and meats section.

I have learned so much about this art of cooking from this book. It doesn`t just provide the basic to smoking but also includes recipes. From making your dry rubs to BBQ sauces to perparing the meats, It`s all here. This book will never rest around our house.

I am just getting started in sausage making and was looking for a guide for making sausage at home. After reading all the reviews here, I purchased this book. It is a fairly large volume and includes a lot of detail on equipment, meat selection, meat handling, spices, recipes and techniques. There are many recipes for most of the types of sausages that readers would be interested in. The batch sizes are pretty large for the home sausage maker but can be scaled. There is a lot of detail on smoking and smoking equipment. The reason that I gave this book 4 stars instead of 5 is that in my opinion, it is a bit too detailed for the average home sausage maker. Much of the book deals with details that a meat processor may need to know but not needed for the average home sausage maker that is only going to process a couple of pounds of meat at a time. That being said, the recipes are straightforward and should be easy enough for anyone to follow.

I got the book to make bratwurst for an Okotberfest we were having and was nervous about making sausage for the first time. The book's instructions were very clear and easy to follow. I'm looking forward to trying many of the other sausages in the book!

One of the most comprehensive books I've ever owned on the subject. This book covers everything from how to sharpen a knife to skinning and butchering deer, rabbit, squirrel, pheasant, quail, and coon. There are also several recipes in the back for each of these animals. Good pics, good information, good book.

The book contains excellent photography making it most helpful; the problem I found with it however was the example shown for field dressing the deer. In my opinion opening the carcass from chin all the way through the crotch area is absolutely wrong. A much better way is discussed in the book entitled, "Butchering Deer" by John Weiss.
Dressing and cooking wild game is an excellent book in all other aspects and would have rated five stars if this area was correct.
