I've been using this cookbook for about a month, making mostly salads (it's late summer), and am pleased with the recipes so far.

I have been cooking longer than I'd like, and for health reasons we eat chicken often. So I was pretty desperate for some new ideas, and am pleased with these recipes.

The salads are imaginative and delicious, and best of all the recipes WORK without me having to fiddle around much. (So often you have to guess what the writer or food stylist actually meant for you to do, or they leave out a critical step, or you just know you have to add more garlic.) I look forward to the casseroles and soups this fall.

It's not the very BEST cookbook I've ever used (that might be the Sarah Leah Chase Open House cookbooks or the New Way to Cook). But I feel it deserves 5 stars because it is so practical and helpful. Thank you Mr. Rosenfeld.

No wonder it's a hard to find book ... Superb recepies .... 5 out of 5 stars.

I think I saw the author on one of the talking heads morning programs preparing some chicken wing recepie, which then made it difficult for me to find the book anywhere later in the day.

Now that I have had a chance to, of course, get the book and try some of the recepies I can certainly attest to the reason it was hard to get. WOW ... even though we may all have fallen into the pit of deep frying wings and buying buffalo wing sauces at the local Piggely Wiggely .... this book will blow out all of your chicken wing pre-conceptions ....

There are suaerbraten wing recepies, hoisin sauce recepies, sour cream recepies and so on and so forth, all of them exquisite, and a taste sensation. The recepies are very varied in the basic prep of the wings and most do not take that many steps. There are a multitude of flavours to choose from ranging from the dark sweet brown sugar glazed wings to spicy Eastern wings made with chutney or hoisin sauce to tangy sour European style wings.

The 'Desert Fox Wing' recepie (page 79) for example, uses orange juice, lemon juice, olive oil, garlic, lemon and orange zest, rosemary, thyme, oregano, cardamon, cumin,tumeric and of course salt in the preparation of the marinade .... WOW .... how many chickens did they have to kill just to get that list of ingredients .....

The book has a few B&W pictures on how to prep the wings but they have no pictures of dish presentation... I can understand that since all you really need is just a roll of paper towells and a beer ... Some of the recepies have a history or a restaurant tied to them and some, I guess, are just from the author.... The book is 203 pages long and I would estimate then that it must have well over 130 recipies

Like I said ... don't expect this book to be picked up on the cheap but do RUN and buy a copy ..... then call me and invite me over for wings and a beer ... LOL

This is a pretty good book. There are a variety of recipes for beef (including steaks, roasts, ground), pork, poultry (primarily chicken, but some quail, duck, etc), lamb, and veal. The Williams-Sonoma publishers are masters at selling pictures to the audience and getting you to buy the book based on the picture (hey, they sold me! :) ). Each recipe is accompanied with a beautiful picture of the dish. Sometimes the pictures have side dishes in them that look equally appealing, but there is no recipe in the book for the side dishes (so the title is strict: this is only meats and poultry). There also is a small section in the front for creating sauces that are used in the dishes. I have made a few of the beef recipes and the chicken sausage fettucine with white wine (amazing and VERY quick to make), and have been happy so far.

My only major qualm with this book is that many of the recipes are geared for grilling. I know WS has other books on grilling, and this book seems to encompass many of the recipes. I do love grilled foods, but living in a small apartment, I don't have the luxury of firing up the grill like others may have. Most of the recipes that require grilling also have instructions for broiling or searing/grilling indoors, so you can likely still make the recipe--it probably just won't taste as good. Overall a good book for the money. However, it seems like a good portion of these recipes are in other WS cookbooks, so if you already have some WS meat, poultry, and grilling books (I do not), this may not be for you.

Part of the series, Chicken offers 40 recipes that reflect the company's signature good taste. The book presents a wide range of delicious chicken dishes, from classics like Fried Chicken with Herbed Buttermilk Crust and Chicken Cacciatore, to quick supper delights including Spicy Chicken and Basil Stir-Fry, to company dishes such as Chicken with Shrimp Paella and grilled specialties like Thai Chicken with Lemongrass, Garlic and Chiles. Also included are one-pot specialties such as Chicken with Andouille Gumbo and a chapter that puts basic roasted chicken to great second-day use in dishes like Warm Chicken and Couscous Salad. If it is incomplete in any way, it is only that the editors have not included poultry recipes from absolutely every culture in the world familiar with the birds. But with this book tucked under your wing, you can check out poultry recipes in cookbooks from all corners of the globe and know exactly how to get the results you want. Thanks to the Cook's Illustrated magazine test kitchen, all possible contingencies have been exhaustively covered.

There are 38 chapters in this book, starting with a guide to buying poultry (the more expensive birds are better than their commercial sisters) and ending with a note on smoking. You won't even get to Chicken Salad until chapter 23. You will find nearly 500 recipes, the perfect roast turkey among them. There are 300 pen-and-ink illustrations demonstrating everything from carving a bird to getting the pit out of a mango. Want to know which is the best canned chicken stock? The best countertop deep fryer? The best roasting rack? The best way to sauté chicken cutlets? It's all in here, in meticulous detail. That stir-fry that has always given you trouble? It's a thing of the past. Always felt intimidated by duck? Forget about it.
