Sumptuous San Francisco Food 4 out of 5 stars.
13 of 16 people found this review helpful.

I am surprised that this book has not been reviewed before...I have been to Farallon for lunch today as part of San Francisco Dine-About-Town promotion, where a set 3 course lunch costs just $19.95 during the month of January. This is one of the top sea food restaurants in town and I was not disappointed. Both the food and the decor were outstanding. I enjoyed my lunch so much that I went and bought the book from the near by Borders Bookstore on Powell Street.

Tonight, I put the book to test and invited few friends over to dinner. After a hard days work in investment banking, together we prepared Rosemary-Seared Prawns with Saffron Risotto and Roasted-Beef Vinaigrette with Pea Shoot Salad. It took a long time to prepare the food but the result was a sumptuous dine in with friends. What a way to relax! I gave this book only four stars just because the menus are very complex and time consuming but well worth the effort. I'll definitely visit the restaurant again.

Editorial Review:

Since Farallon opened in San Francisco's theater district in 1997, patrons of this critically acclaimed restaurant from across the country have given its innovative "coastal cuisine" rave reviews. Now, executive chef and co-owner Mark Franz has compiled the recipes that have taken the culinary world by storm. The Farallon Cookbook will take serious home cooks on an undersea voyage, indulging in such ocean delights as Peeky-Toe Crab with Truffled Mashed Potatoes or Rosemary Seared Prawns with Saffron Risotto. Seafood is not Mark's only specialty. He's also famous for his succulent Braised Veal with Lobster Tails and savory Roasted Quail Stuffed with Armagnac Laced Prunes. This handsome volume--as stunning as the restaurant itself--is packed with tips from the chef, techniques to simplify the recipes, and an irresistible selection of desserts from Farallon's celebrated pastry chef Emily Luchetti.

The experts on seafood reveal (some) of their secrets 4 out of 5 stars.
12 of 12 people found this review helpful.

I once worked conveniently down the street from a Legal's Restaurant, which was a good thing, because everyone who visited me had to make a pilgrimage to the mecca of seafood restaurants.

I have to admit, their fish and chowder was excellent So if you are far from a Legal's, you can reproduce some of their famous fish recipes with this book, which I might add costs about the same as a lunch there.

Yes, the clam chowder is in here. So is important advice on how to store fish you buy. You won't be able to reproduce everything at Legal's, and if your local fishmonger has less than top quality fish, the flavor will also suffer. Still, a good book on fish and if you only could have one book on fish cooking, this is a good choice.

IF It isn't fresh, it is not Legal! 5 out of 5 stars.

Editorial Review:

Mystic Seaport in southeastern Connecticut is the home of all things about New England and the sea--including great seafood cooking. Every year tens of thousands of people visit Mystic to see the fishing boats and ships, tour the 18th-century coastal village, and sample great seafood.

Now here is Mystic Seafood, with more than one hundred great seafood recipes, both historical and contemporary, simple and elaborate, for oysters, clams, lobster, shrimp, cod, flounder, tuna, swordfish, and many other types of fish. Some of the recipes come from famous chefs and restaurants in the Mystic area; others were developed by the author, who is editor of Taste of the Seacoast magazine.

Vintage photos of tall ships and scenes from New England's seafaring past are interspersed with the recipes, and sidebars--on such topics as the role of fishing in Colonial America, how to prepare a classic clambake, and the lobster's peculiar culinary history--make this not only a great cookbook for anyone who loves seafood but also a perfect sourvenir of Mystic Seaport.

Fabulous! 5 out of 5 stars.
0 of 0 people found this review helpful.

This book's recipes are fabulous, easy to prepare and family friendly as well. The photography and layout are wonderful. When paging through this book you will feel inspired to try every dish. Another aspect of this cookbook that I really like is that most of the ingredients are readily available and even though it has a gormet "feel" to it, the recipes are easily prepared. Although I've always felt I'm a pretty good cook, I've struggled with confidence in the "fish department". Now that I have this book I feel much more assured of a good outcome. I've also adapted some of the recipes to ocean fish and they work great.
In-fisherman and chef watson did a great job with this!

Editorial Review:

Lucia Watson - author, James Beard Award Nominee, perennially popular Minneapolis, Minnesota, chef and owner of Lucia's Restaurant - has been that columnist since 1990. Lucia's recipes always are as simple and easy to use as they are delicious. Here she offers more than 50 contemporary approaches to classic recipes, covering the gamut from deep-frying and stir-frying to baking and sauteeing.

Editorial Review:

America's top chefs present delectable and ecologically sound seafood recipes.

Earth's oceans were once thought to be inexhaustible sources of food, but we now know that they cannot sustain the demands we are placing on them. Overfishing has led to the depletion of once abundant fish and shellfish species. Yet seafood is a healthy and desirable choice in our diets. So what is an ecologically conscious, seafood-loving cook to do?

Carole C. Baldwin and Julie H. Mounts have solved the dilemma. Rather than suggest avoiding consumption of seafood for conservation purposes, they present an array of U.S. seafood species to choose from that are fished or farmed in an ecologically sound manner. Furthermore, they have assembled delicious recipes from America's top chefs based on these species: try Alice Waters's Dungeness Crab Salad with Meyer Lemon, Endive, and Watercress; Mario Batali's Atlantic Mackerel in Scapece with Lemon Thyme and Sweet Peppers; or Sautéed Soft-Shell Crabs on Asparagus from Jacques Pepin.

By diversifying our seafood consumption, we can lessen the demand for problematic species and distribute the burden among a broad spectrum of well-managed stocks—and still prepare delicious meals. Beautifully illustrated with 25 color illustrations by Charlotte Knox.

Editorial Review:

This delicious compilation is cooked with a roux of raconteur Howard Mitcham's wit and served with a side dish of jazz history and lyrics. As an appetiser, Mitcham traces the development of the cuisine that made New Orleans famous and the history of the people who brought their native cookery to the melting pot that makes New Orleans a living gumbo. For the main course, he puts together a cornucopia of local delights that are ready to prepare in any kitchen. A dazzling array of photos, foods, and far-out folklore, spiced up with titbits of jazz history and lyrics, comprises a seafood cookbook that celebrates the world-famous cookery of New Orleans. Howard Mitcham offers more than 300 enticing dishes, from crab gumbo and shrimp-oyster jambalaya to barbecued red snapper and trout amandine. Mitcham traces the development of sophisticated Creole cooking and its rambunctious country cousin, Cajun cooking, with innumerable anecdotes, pictures, and recipes. Along the way, he offers a list of substitutes for hard-to-find seafoods, a bibliography, and a guide to the best mail-order seafood markets in New Orleans.
