Great American Answer to Tapas and Mezes 5 out of 5 stars.

James Villas is an old school culinary writer. He was a friend and confidant of both James Beard and Craig Claiborne. He was born and raised in North Carolina and many of his books have featured Southern cooking subjects and styles. This book is no exception.

The book is an almost perfect follow-up to his last effort, `Crazy About Casseroles' in that both books deal with a single subject which is at the core of both Southern and American cooking styles. I am especially fond of single subject cookbooks, whether the subject is a style of dish like gratins and casseroles or an ingredient like potatoes or eggs. Therefore, the score of this book starts with a score in my mind of four (4) stars instead of three (3) before I even read the first page.

The book's subject can be divided into two major topics. The first topic is basic biscuit techniques, covering all the variations in flour, leavening, fat, oven temperature, and dough versus batter. The second topic deals with how to apply all those various techniques to sweet and savory additions.

Techniques are covered in Chapters on `Biscuit Basics', `Plain Raised Biscuits', and `Drop Biscuits'. The greatest virtue of basic biscuit technique is its simplicity. This does not mean a person can make good biscuits, much less make good biscuits on the first try, after reading a single recipe that gives no insight into biscuit subtleties. The first batch of biscuits I made a few years ago was from Jim Villas' mother's recipes he published in his memoir `Between Bites'. I confess that the process had me puzzled, sticky, and a bit disappointed, even though I am sure I followed the instructions to a tee.

Part of the puzzle may be due to the fact that making biscuits is a lot more like making pastry than it is like making bread. While bread is vigorously kneaded to develop gluten and the starting mix of ingredients is often warm to accommodate the yeast or other organic starter, biscuits are worked with cold ingredients and low protein (soft) flour. The dough is worked hardly at all and is cut into disks while the fat is still in oatmeal flaked globs. Sounds like pastry to me.

As I have had a fair amount of experience with various recipes from both Southern bakers and baking experts, I can say with confidence that Mr. Villas knows his stuff when it comes to biscuits. I thoroughly endorse his recommendation to use a brand of Southern soft flour such as White Lily. I only have two disappointments with the discussion of techniques. First, Villas describes a classic Southern method of biscuit making wherein the cook empties an entire 5 pound bag of flour into a bowl, adds wet ingredients, salt, and leavenings, and creates a ball of dough in a depression in the dough. Yet, Villas does not give us the recipe for this technique. He doesn't even explain why he doesn't give a recipe. I know there are still serious Southern cooks who use this technique, as I saw one demonstrate the technique on Martha Stewart's show about a year ago. The second disappointment is that he has no basic recipe where the only fat is butter. I have used such a recipe by Nick Malgieri with White Lily flour and buttermilk, and I find it as good or better than Villas' mother's recipe. Otherwise, I think the coverage of biscuit techniques is tiptop. Were I writing the same thing, I may have included a table comparing the recipes. This may facilitate one's personal experiments in the technique. I would also argue that basic biscuit technique is a better starting point for adolescent bakers than the drop biscuit technique. I don't think drop biscuit technique is easier and the basic technique is more versatile.

The second main subject of the book is what you can do with biscuits and biscuit dough. This can be divided roughly into four areas: sweet additions, savory additions, scones, and biscuits as pastry. Appropriate to the title of this review, the range of variations possible in biscuits gives me the idea that a home entertainer can give all their books on French and Spanish and Italian and Greek `little bites' recipes a rest and spend several months experimenting with hors d'ourves / antipasti / tapas / Mezes based on biscuits. As soon as I write this, I confess that even the lightest biscuits may be a bit heavy to stand alone among the martinis and margaritas, but I do suggest that you give the pizza and foccacia a rest and give these recipes a try. As biscuits, like chowder, are very close to being a true American invention, they are perfect as part of American cooking menus.

While I am often surprised at how new many kitchen techniques such as baking powder are, I am also often surprised at how old some methods are. Many techniques such as cooking in a bag and using packaged dough as stew topping are touted as new ideas based on marketed products, when actually the techniques are centuries old. Such is the case with using biscuits as a topping for pot pies and casseroles. Villas raises the veil from our eyes in revealing the historical sources for these old biscuit techniques.

I liked this book a lot and I recommend it to anyone who wishes to master biscuits and who may find a gold mine of quick, relatively easy recipes with a big `wow' factor.

Highly recommended. Intermediate skill level.

Can there possibly be anyone left in the U.S. who hasn't heard of Mollie Katzen? Or if not Mollie herself, at least her first cookbook, the now classic Moosewood Cookbook? Few writers have reached so broad an audience with a healthy-cooking, pro-vegetarian message. Ms. Katzen's latest effort, Sunlight Café, turns breakfast into a healthy, fulfilling showpiece meal, a morning sanctuary for assembling the day. She explains how to do this, no matter what your time crunch or disinclination might be. And in an introductory essay called "Breakfast for Metabolic Health," she explains why.

There are chapters in Sunlight Café devoted to beverages, fruit, grains, muffins and the like, eggs, potatoes, breakfast vegetables, griddle foods, puddings, etc. Katzen takes the time and space to explain how to scramble eggs, how to enrich scrambled eggs, how to augment scrambled eggs, and how to achieve the world's creamiest scrambled eggs. Does that sound comprehensive? Well, the entire book has been written that way. Nothing has been left out. Not sure how much water goes with a cup of brown rice, or how long to cook the grain? Katzen supplies the all-encompassing chart. It's one of many, and worth the price of the book. Among the 350 recipes you'll find easy, delicious baked goods to make ahead and eat at your desk (Katzen is not out of touch with the working world). If you have looked for great muffin, coffee cake, cobbler recipes, this book has them. I'm pretty picky about recipes but I have found some great ones in here. I made the blueberry coffee cake and it was so easy and delicious. The banana bread was great and I can't wait to try others. I'm going to check out her other one!

So far all the recipes I have tried have been a huge success. The organization is simple, as are most of the recipes, so it is fairly easy to turn out a tasy breakfast with little effort. Like another reader, I am looking forward to checking out the author's other B&B cookbook for more great recipes! Make sure to check out the apple cider syrup in this one, it smells fabulous and tastes even better!

You may think you know what's inside this book simply because it's about "breakfast food," but trust me, you don't. While "Morning Food," by Margaret Fox, does indeed contain many scrumptious recipes for traditional breakfast favorites - waffles, pancakes, muffins - each dish has been crafted into something especially unique and inviting. Hence you find yourself with delicious, easy-to-follow recipes for "Mocha Walnut Wonder Muffins," "Pumpkin & Ginger Pancakes" and "Cindy's Cherry Chocolate-Chip Scones," all delightful twists on old time faves. However, more than this, "Morning Food" suggests dishes that one may not usually associate with early, or even mid, morning meals. I certainly wouldn't have thought to serve "bun bun noodles with spicy peanut sauce" for the first meal of the day, but after taking a chance and following Fox's suggestion I now have a new take on the whole business of morning eating.

"Morning Food" is a beautifully presented, well-bound book with a generous number of photographs and helpful kitchen tips. Fox introduces you to the finer aspects of bread baking and discusses the history of schnapps (brandy distilled from fermented fruits) in approachable, friendly language. Her relaxed, comfortable style teaches you not to worry about mistakes and how to develop a repertoire of favorite dishes. Did those first few crepes not come out as hoped? No problem, freeze them then use the crepes later, cut into strips, as a garnish for soup. In every respect, Fox makes you feel like she's an old friend who has invited you into her kitchen, where she happily shares her hard-won kitchen wisdom.

Chapters include: Cereals & Fruit; Muffins, Cookies & Biscuits; Pancakes, Waffles, French Toast & Crepes; Sandwiches & Soups; Side Dishes & Salads; Spreads, Sauces & Dressings; Entrees; Desserts; and Drinks. My favorite sections include the chapter about Bread & Scones and the Coffee Cakes chapter. Here I found delightful recipes for cinnamon-rolls, cinnamon-raisin bread, poppy seed yeast bread, yogurt coffee cake and chocolate-filled coffee cake. While these recipes may sound familiar, my husband is still raving about them, as are our friends. The yogurt coffee cake was a particular favorite, with people marveling at the subtle flavor and perfect texture - moist, yet firm, with a little give, like the best muffin you've ever had except in cake form. I recommend this book without reservation: if you are breakfast lover, if you enjoy great food, add this one to your collection.

This cookbook is great !!!! i borrowed it from a friend and never gave it back (bad!!!) but it really is a great source for entertaining. Fanstastic and easy recipes. A good way to impress your friends with your cooking. Also what i like is they usually have serveral recipes for similar dishes so lets say you want to make scalloped potatoes - you can look at them all and then kind of use the info to make your own variation with the pieces of the recipes you think sound good. Also it is good if you are doing theme parties. I love asian cooking we were having a party where i needed to bring an asian salad - they have like 5 different types. and they arent what you would expect. Note this is just not breakfast foods - all types of cooking are in this book and from all types of us regions.

Whatever type of fare you have in mind you'll find something good in these pages. The Manyard's have done all the work. State to State(including Alaska and Hawaii) they have found us some great recipes from Country Inns and Bed and Breakfast's from all over the country. With more than 1700 homestyle recipes you really get your money's worth.

You can go state to state(without leaving home) and try something new and different, or find some of your old favorites that you've been longing for.
There are two indexes to check through. You can check by city, or by food. For a good look at what's inside, the book, click on the 'Look Inside" link to several pages to browse through.The recipes range from meals as simple as Biscuits and Eggs to the more exotic tastes like Veal Scallops with Gorgonzola Sauce. You'll find several different ways of making the most everyday things, like French Toast, depending on what State or Regional taste you're in the mood for that day!

There's an additional perk to this cookbook as well. If you want to get out of your own kitchen and do a little traveling, you will find a little description as well as the addresses and phone numbers for all the Inn's used here, on the pages with their own recipes.In some cases there are nice little sketches of the lodgings as well.

I use this cookbook more than any other in my kitchen. although I haven't loved every single thing I've tried, it is stained and sticky with the remnants of some terrific recipes(some of my favorite pages are in worse shape than others!). Everytime I look through it for a new idea I find one. I love it! You will too.

So have fun, eat hardy and try to get someone else to do the clean-up.....enjoy...Laurie

I saw a pre-release for this book sometime ago, and quickly put in an advance order for it with Amazon. The thought of a whole book given to pancakes and waffles seemed like a lot of fun to me.

Honestly, when it came and I opened up the box, I was a little disappointed. I was expecting a hardback with good binding. Instead, this was a paperback with a white comb binding. However, my disappointment quickly dissolved as I began looking through the book. The pages are suitably glossy, and most of the recipes are accompanied with a nice photo of the finished product.

Most important, however, was the variety of the recipes. An easy hour with this book and I already knew more about the world of pancakes than I had gained by cooking and flipping them for 30 years. Traditional recipes are provided. But there is also ample coverage of pancakes with non-traditional flours, such as chickpea. The savory recipes almost balance out the sweet ones, providing a lot of opportunities to make these for lunch or at meals when one wants something other than a pile of fluffy sweets.

I really enjoy this book and do not regret pre-ordering it one bit. The variety and instruction provided is truly eye-opening.

Plan what you want to make beforehand for you could get stuck for quite some time just trying to decide which of the tasty recipes to follow! This book, as those who have tried the Nitty Gritty books will know, is packed with recipes and variations on the classic, now somewhat boring, breakfast staple. On top of that, there are numerous pizzelle recipes (similar to a waffle cone for those that don't know), which I have not found in abundance anywhere else. There are also lots of recipes for toppings and syrups for the waffles and fillings for the pizzelles so you are not just left with plain old Mrs. Butterworth's! Great addition for anyone who loves breakfast foods and wants to expand from the package mixes!*** I have to add that we are now in love with the eggnog waffles! Sounds odd but they are totally good!

I have a collection of over 200 cookbooks, if I had to get rid of them all but one this book would be the one I kept. Volume two would be my next choice.

This is the BEST cookbook ever. I have soooo many cookbooks and it seems like this is the only one I ever actually use. Unique recipes, most easy to prepare. My guess is that one of the reasons bed and breakfast inns are so popular is the food... now make it at home too. Buy this book it's great!

This is a great cookbook. I own many, many cookbooks and can always count on finding a wonderful recipe in this book. I actually bought it as a gift because I already own volumes I and II. It is also fun to read about the various B&B's around the country. One minor issue--when you find a recipe you love, you need to remember the name or mark it because the recipes are listed by name and are sometimes difficult to find. For instance, I made some cheese blintzes and couldn't find them the next time I wanted to make them because they are listed under "Eva's Cheese Blintzes". I didn't occur to me to look under "E". I find this somewhat illogical. However, I highly recommend this book! Every recipe I have tried has been marvelous!
