I'm a professional vegetarian chef and with out a doubt this ranks as probably my favorite "ethnic" cookbook, if not just one of my all time favorite cookbooks in general.

This is quite simply a beautiful book of wonderful Moroccan recipes written by a Moroccan-born American. Kitty Morse was born in Casablanca and now is a food and travel writer living in Southern California. Kitty has been returning to her homeland yearly to lead tours-- most recently a chef's tour of her favorite Moroccan restaurants. This book includes traditional Moroccan recipes that have been tailored to allow preparation in an American kitchen. The photography by Deborah Jones is first rate. From cous-cous to harira soup, this book will help those who are not vegetarians realize they're not missing anything

I spent a lot of time deciding on which of the two companions to food to purchase. Given that the Penguin Companion was half the cost and by the same author, it won out. I was surprised though, when I held the book in my hands to read at the bottom of the front cover "Originally published as the Oxford Companion to Food." Although I am glad I am getting the quality and authoritativeness the Oxford series provides, it sure would have made my decision a lot easier to have known this bit of information.

The Oxford/Penguin companion is a terrific encyclopedia of foods. Davidson's essays are very readable and enlightening. Like all of the Oxford companions, it is a 5 star read.

I recently got a waffle iron, but the recipe included with the appliance was disappointing to say the least. I borrowed this book from the library because I have been very pleased with German's bread machine books and thought I would test some of the recipes to see if the book was worth adding to my collection. I shouldn't have worried! I could have bought it outright and saved myself a little time! We have tried the Sweet Butter Waffles (they are as heavenly as they sound) and the Peanut Butter Waffles (also very yummy and popular with the kids as well). In addition to the fabulous recipes, German also gives detailed information on waffle making in general (how much batter to use, how to tell when the waffle is done, etc.) and how to adapt recipes if you want to make pancakes instead. She even gives you "permission" to just mix everything together at once if you don't want to take the time to separate the egg (and I can tell you from personal experience, the results are just as delicious!) If you love waffles, or if you've always wanted to make them but were too chicken to try, this is the book for you!

The author has gone to great lengths to make up waffle-able recipies. I really enjoy the carrot-raisin and the oatmeal banana waffles. They freeze wonderfully! Give a copy of this book with a waffle iron to newlyweds!

I did not care for waffles until my daughter bought me a waffle iron this past Christmas. So, my search for recipes (I never made them before) began. I found Ms. Greenspan's recipe for Spicy Ricotta Waffles on the the foodtv.com site and they were so delicious that I looked up info on the book on Amazon. Thank goodness! The author covers all areas, from appetizers to desserts. She also includes dips, spreads, oils, etc. Delicious recipes. As another reviewer noted, yes, give this cookbook with a waffle iron to newlyweds, but also to any and everyone who likes waffles. I love this book! You can even make toasted cheese sandwiches in your waffle iron - did you know that? I didn't!!

April Moon's cookbook captures the essence of what it means to be nourished by the Flying Biscuit Cafe, an anchor in its neighborhood and the primary reason Atlanta's suburbanites "outside the perimeter" even know where Lake Claire/Candler Park is located.
The recipes for simple, nutritious comfort food all have a delicious twist. Moon even knows what ingredients to combine with collard greens so that my husband, who doesn't otherwise stomach collard greends, relishes each bite.
That she shares her recipes -- yes, even for her famous biscuits, albeit with hesitation -- is a gift to all who no longer live close enough to enjoy the meals AT the cafe, but will for years savor the chance to bring the scents and flavors alive in our own kitchens.

Fabulous book, fabulous cafe, fabulous food! Since leaving Decatur in 1999 I haven't had to miss all my favorites - I just make them at home. Oh, the Exceptional Eggs, they are to die for. My kids gobble up the Turkey meatloaf. And, now that I'm in VA, I use my locally grown apples every fall to make a gigantic batch of the Cranberry Apple Butter to give as holiday presents each year - to rave reviews. You'll have to tweak the recipe to yeild much more, but it's very much worth the effort.

This book is very nice physically, it has great pictures but lacks valuable content. There are a few classic recipes like eggs benedict, but the rest of the recipes are not worth it. If you are looking for good techniques, you wont find them in this book.
