This is a fabulous, informative, and useful resource! 5 out of 5 stars.
8 of 9 people found this review helpful.

This book is that rare treat--a cookbook that is historically and culturally informative, stimulating to the taste buds and to the eyes, beautiful to behold, and filled with clear, accessible, and engaging instructions on how to make some of the most sumptuous, delectable, and easy recipes ever to have found their way into print. There is something here for everyone, from the novice to the experienced chef (really!), with recipes for a wide variety of tastes, budgets, and needs, from simple clear soups to hearty meals-in-themselves taken from the gamut of the Italian social and geographical landscape. The author goes to great lengths to ingegrate historical and cultural information of Italy into her instructions on how to prepare these dishes, and also lets her reader know where variations and experimentation are called for, thereby making this one of the most flexible and adaptable cookbooks around. But the book's greatest strengths are its astonishing gustatory rewards embedded in virtually every one of its 130 recipes, for despite the clarity and precision with which the reader is introduced to the various dishes, no one could anticipate from reading alone just how marvelous these soups will taste. They are extraordinary and are sure to make every occasion in which they are used a culinary event. If you are looking for a cookbook that will remain open and in use, rather than on the shelf, this is the one!

Chicken and Dill Soup 5 out of 5 stars.

I have made the Chicken and Dill Soup recipe for our family and also for 2 sick friends. It helped "cure" these two wonderful ladies of their respiratory illnesses. I really do believe it has medicinal qualities.

I have also made the carrot soup which is delicious. And, I have made the 4 cheese Fettucine Alfredo, also, very rich and delicious. A little serving goes a long way!

Soups? 1 out of 5 stars.
6 of 10 people found this review helpful.

I was in the Tsunami in Thailand. This isn't for sympathy, just perspective. I lost a collection of cookbooks that spanned over 30 years of selection. Now I'm living in Bangkok, ordering new books. Everyone knows you really only need three books: "The Joy of Cooking", "Mastering the Art of French Cooking" and James Beard's "American Cookery". Since they are very hard to find over here in Thailand, I elected to order them on-line from Amazon. While doing this, my attention was drawn to another cookbook by James Beard, "Soups". What a disappointment. "American Cookery", 877 pages with 19 pages of soup recipes was $15.72. "Soups" by James Beard and undoubtaby numerous staff was $7.16 for 63 pages and a whopping 35 recipes. The recipes are the usual and could have been written in an afternoon. What a rip-off. I love Amazon but when you can't feel, touch and open the book, sometimes you just don't know. Shame on James Beard for allowing this little hackneyed book to go to press with his name on it.

Editorial Review:

Recipes in this series have been culled from James Beard's past cookbooks, many no longer published. Soup lovers will welcome this deliciously varied collection--heavy or light, thick or clear, provocatively spicy or comfortingly creamy, bean soups and chowders for winter or consommes and Scandinavian fruit soups for the warm days of summer. 25 illus.

Editorial Review:

In this volume from the Williams-Sonoma Lifestyle Series, Joyce Goldstein, the award-winning San Francisco chef, guides you in making and serving outstanding soups. Organizing her 45 recipes into 10 three-course menus, she shows how to compose soup-centered meals, from a Thermos and Basket Picnic to an Elegant Dinner Party, each offering soup, a salad, and dessert. Goldstein favors soups with ethnic roots, like a cold Lithuanian Borscht splashed with raspberry vinegar. She also has a fine creative touch that's evident in the Roasted Squash Soup with hazelnuts, a colorful and warming broth.

Accompanying each recipe is a handy pointer for ensuring soup perfection. For Asparagus Soup, Goldstein explains that using spears past their prime can give a grassy taste--this can be balanced by adding a dash of cream.

Reassuringly, the recipes are not overly taxing, but they do involve "real" cooking, such as the long simmering of dried beans. The results, though, including Spanish Pumpkin and Bean Soup, are just rewards for your efforts. Finally, Richard Eskite's splendid photos illustrating how to present each soup at the table are so full of life that you can taste them. --Dana Jacobi

A great sequel to "Nuevo Latino" 4 out of 5 stars.
4 of 4 people found this review helpful.

The perfect compliment to Douglas Rodriguez's "Nuevo Latino" book. This new book reintroduces us to the latin style of cooking present by Mr. Rodriguez. A must for those of us who enjoy and love soups. The extensive fare of soups and stews are hearty enough to be the main dish in any meal. The book provides an good introduction to the style and background to the cooking style. Each of the recipes is preceded by a short but highly interesting description of the dish and some of its ingredients. The instruction are simple and easy to follow.

If I have to point out a flaw, and I do find one, its the book's presentation. This book's content is so good why isn't the actual book so. "Nuevo Latino" is stunningly presented as a hard cover book but "Latin Ladles" is not, it is only available in paper back form. This is why I gave it 4 stars.

Editorial Review:

Rodriguez is the chef and owner of Manhattan's Latino Patria restaurant. In this text, he presents 80 authentic soups and other one-pot meals from Central and South America and the Spanish-speaking Caribbean.

A big 5 5 out of 5 stars.
12 of 12 people found this review helpful.

I urge you to buy this book or at least look at it. It is a beautiful book. Charming in style with beautiful images. But the best part is that it is not just a rehash of old recipes, or recipes congured up to be different. When you eat one of these soups, there is a depth to the flavor, and you could think you were in France. I commend the author for preserving these old soups.

Editorial Review:

Soup has a prominent seat at the table of everyday French cuisine, & an incredible variety has evolved over time, with cherished family recipes handed down from generation to generation. Each comforting bowl can be as simple as a humble Chicken, Ham, & Sausage Kettle (Potee Champenois) or as elegant as a savory first course of Poached Oysters in Potato-Leek Cream (Soupe Locmariaquer). Rothert uncovers these recipes & reveals an intriguing culinary history. This comprehensive cookbook with 80+ recipes is rich with glorious photos illustrating the lush countryside, quaint villages, & overflowing marketplaces, & is sprinkled with evocative quotes that offer an intimate look at the French way of life. Spectacular!
