Great Recipes! 4 out of 5 stars.
10 of 13 people found this review helpful.

This is a great book that mixes many recipes with short stories about the history of and antics that go on at International Chili Society contests. Also includes a number of "celebrity" recipes and many others. Would get five stars, but there are no pictures of the finished dishes to guide you by--I like to know what what I just tried to cook at least looks correct!

Editorial Review:

Features hundreds of chili recipes, including those of twenty-eight award winners, celebrities, politicians, and professionals, and offers accompanying ideas for corn bread, side dishes, libations, and desserts. $25,000 first printing. Tour.

Editorial Review:

Dark winter days and long frosty nights send a special message to the palate, a craving for something hot, hearty, and redolent of childhood comforts. Soup is perhaps the most primal of foods--even more so as, in the twilight of the century, we look wistfully over our shoulders at a simpler, more communal time. And soups and stews, their popularity soaring, are tailor-made for harried cooks of the nineties: one classic pot can streamline a wealth of exotic ingredients, a few succulent staples, or leftovers we can't bear to waste. All are displayed in the luscious color photography of Soups and One-Pot Meals.

From the master creator of the award-winning cookbook series that starred The Chocolate Bible and The Pasta Bible comes an array of soups and one-pot meals from thirty-one countries--Norway to Laos, Croatia to the Caribbean. Thick and creamy or tangy and translucent, its 100 recipes run the gamut from Pepper Soup and Lemon Soup to Irish Stew, from Miso Soup to Cold Elderberry Soup. Soups and One-Pot Meals is a supremely satisfying mouthful and eyeful of a book, an enduring gift for cooks of all persuasions.

New Food Combos for Stews 4 out of 5 stars.
3 of 3 people found this review helpful.

I find myself pulling this book off the shelf again and again. My family really enjoys the Old-Fashioned Beef Stew with Coffee which is easy to make. The Curried Vegetables with Chick-Peas & Raisins is also good. This week I'm trying Shrimp Curry with Mango and Pineapple. If you're looking for some new ways to make one-pot or crockpot meals, this is the book. Can't say I'll ever make Venison Stew with Armagnac & Prunes, but you might have a call to do so.

A smorgasbord of stew 4 out of 5 stars.

Organized my major ingredient, Wyler's "Simply Stews" offers 100 one-pot meals with international flair.

There are variations on traditional fare - Beef Stew with Coffee and Buttermilk Dumplings, Corned Beef and Cabbage with recipes for herbed mustard sauce and creamy horseradish sauce, Spicy Chicken Creole.

And there are more exotic dishes - quick cooking Indonesian Chicken in Coconut Milk with Lemongrass and Vegetables, Korean Braised Short Ribs, Ragout of Mussels, Grilled Corn and Tomatillo Stew, Vegetable Stew with Spicy Peanut Sauce.

Each recipe includes, storing, reheating and freezing tips.

This is an excellent book, with clear instructions. 5 out of 5 stars.
12 of 12 people found this review helpful.

Although I have only tried 3 of his stew recipes so far, plus a biscuit recipe, I can't wait to try the rest. His short ribs for example, are wonderfully ungreasy because you take them out of the cooking liquid and finish them in another pan. Some of the other recipes look like they may require a little too much butter or oil - like the chicken fricassee, but the flavors are great. Most of his vegetable recipes seem a little skimpy for dinner, they're more like side dishes, which is too bad. I wish he had included more information about the different stew words he uses - what is a burgoo? But now I know what a bog is - and it sounds delicious.

Editorial Review:

This is the food of America.from Cincinnati 4-Way Chili to New England Hot Pot, from Georgia Ham and Black-Eyed Pea Stew to Curried Fish Kettle.and it's simple, savory, and satisfying. James Villas has collected from home cooks around the country more than 150 recipes for homey, comforting stews that demand a place on any table, no matter where you live. You can use anything from pork, chicken, beef, and game, to fish and shellfish, and even vegetables, beans, and fruits to create these sumptuous stews that will disappear as soon as they're served. The stew is an American classic, and Stews, Bogs, and Burgoos proves that they're simple to make, convenient to serve, and always delicious to eat.

Great meals! 5 out of 5 stars.
4 of 4 people found this review helpful.

After looking at several cookbooks on low-fat cooking, I bought this one and a few others from other authors. I've always loved soups and stews, but have never been much of a cook. This author's book was the best I tried.

I've made many of the recipes in this book and have liked all of them. The meals have all been low-fat and low-sodium, but because of the well-chosen seasonings and flavors, are very tasty and satisfying. The key to the recipes is the choice of seasonings. The recipes have blended low-fat and low-sodium ingredients into wonderful combinations.

All of the recipes are very different from each other, giving me a wide variety of meals. I also appreciate that the book shows color photos of many of the meals, and all the recipes have the calorie count, fat amount, sodium amount, etc. shown.

Because I've liked all of the recipes I've tried so far from this book, I've also bought most of the other books in this same series and have been pleased with all of them.

Editorial Review:

Homemade soup--there's nothing like it. Recognizing that most of us would prepare it more often if we knew the basics, How to Make Soup offers a succinct tutorial. In fewer than 100 pages it provides illustrated, step-by-step instructions for preparing favorite soups and chowders--recipes, tips, and information that all cooks can use.

Stating that soup, which seems the improvisatory dish, has its own rules, the book then offers chapters on soup-making fundamentals and a wide range of soup recipes, from chicken, beef, and French-onion formulas to those for puréed brews, chowders, minestrone, and more. Core recipes are presented with variations--for example, readers learn how to make an exemplary chicken noodle soup, then how to recast it with orzo and spring vegetables, or with shells, tomatoes, and zucchini. Throughout, underlying techniques are explored and illustrated (such as preparing tomatoes for cream of tomato soup), and sensible tips abound (save Parmesan rinds for making minestrone, for example).

A true primer, the book is part of the Cook's Illustrated Library series. Like the magazine, the books are dedicated to presenting tried-and-perfected recipes and cooking techniques in a concise, approachable way. --Arthur Boehm

My review praises the book. 5 out of 5 stars.
12 of 12 people found this review helpful.

No matter how much I praise this book, I can not give it enough credit. I am in a low fat soup club at work, and my collegues raved over all the soups I have made. I am very fat and this book has helped me to lose 200 pounds!!!

Editorial Review:

Is there anybody who doesn't like soup? Tasty and satisfying as a steaming potage might be, all too often our favorite soups are also high in fat and calories--there's a reason why they call it cream of mushroom soup, after all. But lest you think low-fat soups mean giving up flavor, think again. In 100 Low Fat Soup and Stew Recipes, author Corinne T. Netzer whips up a veritable cornucopia of delicious variations on a very popular theme. There's Easy Crabmeat Stew--weighing in at only 4 grams of fat--and Curried Zucchini Soup with Creamy Topping (4.5 grams of fat). There's comfort food, such as Split Pea Soup, and elegant dishes such as Scallops and Vegetables in Wine and Fish Stock. There are even dessert soups--how about a bowl of Asian Fruit Soup with Lime and Mint? Whether you're counting your calories or just trying to maintain a healthy lifestyle, 100 Low Fat Soup and Stew Recipes helps you stay fit--and satisfied.
