I love this book. Not just for the recipes but for the clean design and beautiful photographs. Everything about this book makes you want to use it over and over.

I do have one word of caution. Her miso soup recipe calls for you to boil the miso. She makes an effort to explain how beneficial miso is for your health but unfortunately, boiling miso destroys all of the good enzymes.

Add it at the end by turning off the heat, mix in your miso, and wait a few minutes before serving. Heat activates the enzymes but, again, boiling will destroy them.

Aside from this small detail, it is one of my favorites amoung my vast collection of cookbooks.

If you are a soup lover, this is the book for you. Simple to follow instructions and, generally, easily obtained ingredients. Every recipe I've tried has been excellent, and it includes a wide variety. This is not a "gourmet cookbook" but the results look great when served and won't take all day for you to make them. Only improvement would be if it was bound so it could lie flat.

This is certainly a comprehensive book on soups. I am yet to try any of the recipes at the time of this review, however, I could not help notice that if you are not totally familiar with American cooking ingredients, you may find yourself somewhat lost at times. Here's an example, "cannned chicken" along with a few other ingredients, but in saying this I am more than prepared to learn about them. Unfortunately, this book does not have a glossary section, although it does have a brief conversion section on the very back page (with the most common conversions). I have tried googling for subsitutes for these items but have been unable to find any substitutes. So there are possibly some recipes I may never get to try due to this, which is a shame.

This book also mixes both imperial and metric measurements on some of it recipes, which is confusing to say the least.

It certainly does have a wide variety of soups, even quick 30 minute soups (although, these do utilise canned soups to quicken the cooking time). I am impressed with the inclusion of recipes for larger quantities ie; serves 10 or more. These are particular good for dinner parties.

Even though, I feel this book would benefit from an informative glossary section explaning food substitues for non American buyers, I would certainly NOT AVOID BUYING THIS BOOK due to this. I guess this is a common problem in reality when purchasing books from other countries, if only the publishers could see this and make the books more universal (now wouldn't that be nice).

This is an excellent book for the beginner. The recipes are simple and easy to follow. I've made a few recipes from this book and they were wonderful! A must have book if you love soup whether you are a beginner or not.

So far I've had this product for a month and everything turns out so nice. My husband is a "meat and potatoes" kind of guy and he has really enjoyed many of the soups as well, as they are filling and tasty! I'm a big fan of all cooking light cookbooks and also purchased their Slow Cooker Recipes book at the same time as this one and it is equally as delicous and quick to prepare. For anyone who likes quick, easy, healthy, or unique - you will enjoy these two books.

I like to give these soup gifts in a jar to expecting parents just before the baby arrives so they have a ready-to-go homemade meal on hand. I also add a California Corn Bread jar to go with the soup. I also like to include the canned items that need to be added like canned tomatoes, chicken, etc. to make it as easy as possible for them. These jars would make a great welcome gift to a new neighbor or to someone with a cold or recovering from the flu or other illness. I think it's just such a unique gift that is very useful and tasty, too!

When I retired from teaching high school, I made gift jars for 11 support staff people who made my job easier - secretaries, guidance staff, attendance office staff, etc. They were thrilled. My favorites are Creamy Cheese Soup and Cheesy Potato Soup. I decorated the lids with circles of fabric and attached the recipe cards with raffia. Easy to do and a nice way to say thanks for 33 great years!

I love soup, but I don't like to spend all day making it. Maryana has "boiled down" every recipe to the simplest yet tastiest way to make it. Try the Sunriver Soup for company...it is delicious. I have had this book for over a year, and have made over 20 of the recipes...they have all been fantastic. Both of the Gumbo recipes are super, the seafood one is divine. The Gazpacho is perfect, and I love the Mexican Chicken and Corn soup too. I like how she doesn't require a million and one ingredients but just selects the perfect combination of spices for each soup.

I'll admit..I'm mainly a soup person only in the fall and winter months when it's cooler and you don't mind a nice pot of soup simmering on the stove for several hours. Soup and winter just goes together even though this book contains many lighter receipes that can be enjoyed all year round.

This is a follow-up to the Big Book of Casseroles and contains receipes for over 250 soups, stews, and chowders. Some very elegant soups perfect for a formal dinner party to go along with stick to your ribs soups for tailgating before a big game. There's old classic favorites such as Chicken Noodle, Motzah Ball and Clam Chowder to go along with more exotic soups such as the Thai Ginger Chicken Soup and Spicy Cuban Pork Stew. One of my favorites is the Chicken with Buttermilk Thyme dumplings which is just fantastic in the dead of winter like it is now. There are several potato soup recipes which I absolutely love including the baked potato soup.

The recipes are fairly simple to make and most of the ingredients are availabe from the grocery store but a few will require a visit to a gourmet food store if you really want to do it right. This book is a soup-eaters dream!

Mollie Katzen's Recipes: Soups is produced in an interesting format. It's a small ring-bound book tucked into a board sleeve so it'll sit well on a shelf. Once you take the book out, you move a couple of things around, tuck one thing into another, and you end up with an easel. The idea is that you set it up so it only takes up a few inches of counter-space and your recipe ends up standing up in front of you, making it easy to read while you cook.

In this it works fairly well. The angle is fairly steep, so you'll need to set it down on a perfectly level surface or risk pages falling closed on you. I also felt that this worked better for cooking than for looking through the cookbook to find recipes, which was a bit more awkward. And once you've set it up as an easel, it'll never quite collapse back all the way again; while you can slip it into its sleeve to fit on a shelf, at least, it's still a bit awkward to work with in other ways. Other folks might find this format perfect; it just didn't quite work for me.

The handwriting font is attractive, but when it comes to cookbooks my personal preference is for something plain and clear. There are no photos, but I tend to think photos are pretty unnecessary with soups. The directions are clear and simple; these are not overly complex recipes.

The table of contents and index are quite handy; the ToC lists recipes in order, while the index lets you look for things by ingredient, both of which are useful.

It seemed to me that the flavors in these soups weren't balanced entirely well. Some seemed under-seasoned while others seemed over-seasoned. The spices in the curried squash soup smelled to-die-for while cooking, but the soup was flavored strongly enough that I found it a bit unpleasant, and that's unusual for me (I'm a flavor junkie!). I also found some of the soups didn't reheat very well (without mentioning this in the directions), which is a tad unusual for soups.

The soups aren't vegan, as a number of them use dairy, but it would be simple enough to substitute soy products and the like.


If you're die-hard looking for a source of healthy, vegetarian soups, this is certainly a good option. As a cookbook in general, however, I'd say it's good but not great. On the other hand, many of the things I wasn't so fond of will be taste-dependent.

Mollie Katzen has given vegetarian cooking style and pizzazz, and this Salad book is no exception. Her new book presents salads and antipastos as a main meal using fruits, vegetables, beans, cheeses, nuts, pastas, oils, and herbs. Mollie emphasizes freshness and educates on less common greens and veggies. She also has recipes for Tofu Mayonnaise and Homemade Croutons. The presentation is illustrated with pen-and-ink drawings and sprinkled with useful tips.
