Great vegan soup recipes 4 out of 5 stars.
10 of 10 people found this review helpful.

I have been making a lot of soup as a way to eat healthier and lighter, and this book has been great. I like how it is organized into the four seasons to encourage us to eat seasonally-available foods. I have made about six or seven of the soups, and I would say that the majority of them were quite good. This inexpensive book seems like a great gift for vegetarians/vegans to give to their friends (even omnivores), as this collection of soups will appeal to anyone.

Editorial Review:

In this completely revised and updated edition of a classic collection of vegetarian recipes, Nava Atlas ladles out more than 120 satisfying, imaginative soups and stews. Twenty of the recipes are brand new and, for the first time, all of the entries are totally vegan. The chapters are arranged according to season, allowing chefs to highlight the best from the market with international flair, with soups like fall's Moroccan Lentil & Chickpea Soup and Southwestern Fresh Corn Stew; hearty winter warmers like Brazilian Black Bean Stew and Four-Grain Tomato Soup; the fresh spring flavors of Curried Cashew Vegetable Soup; and summertime no-cook quickies such as a Minted Peach Soup. A section of accompaniments, such as breads and muffins, to make while soups are simmering rounds out this healthy and delicious showcase of the flavor and excitement of seasonal, vegan cooking.

Editorial Review:

Credited with moving vegetarian cooking from the fringes of American society to mainstream dinner tables, Mollie Katzen has proved that there's more to salad than tossed greens. With fresh fruits and vegetables, pungent cheeses, beans, oils, herbs, and nuts, a salad can be a hearty meal in itself. Celebrating THE MOOSEWOOD COOKBOOK's 30th anniversary, the latest addition to the MOLLIE KATZEN'S RECIPES series brings together her classic salad combinations from MOOSEWOOD and ENCHANTED BROCCOLI FOREST in a convenient easel format. Each recipe is lovingly hand-lettered and illustrated with Mollie's distinctive pen-and-ink drawings, making this timeless collection the perfect kitchen countertop companion.

Tasty and Sensible 5 out of 5 stars.
9 of 9 people found this review helpful.

Not only are the soups tasty and inventive; but they are sensible and nutritious. They require little time and ingredients that are neither exotic, nor hard to find. Most recipe books are loaded with expensive ingredients that necessitate driving 20 miles from your home, and that you use only for one particular recipe. I want recipes that use inexpensive stuff I have on hand, or will have no trouble finding. This book meets those requirements. I read cookbooks like other people read novels, and this is the best cookbook I've ever had. Now that he's conquered the soup pot, Joe needs to move on to pastas and more.

Editorial Review:

After seeking out the best soups from family, friends, and restaurants through every region of Italy, award-winning cookbook author Joe Famularo presents 150 enticing, unexpected, exuberantly flavorful recipes. Here are tasty soups for every appetite and every season. Cold-weather comfort is as close as Abruzzi Chickpea and Chestnut Soup. And casual warm-weather lunches and suppers are more tempting with a tureen of Zuppa di Primavera ("soup of springtime"). And for anytime: Five-Fish Soup from Livorno or Garlicky Mussels in Broth.

Editorial Review:

The global scope of stews and other long-simmered, richly warming dishes is vast. Clifford Wright's Real Stew offers 300 recipes for this delicious fare--everything from basic Irish stew through stroganoff, bouillabaisse, gumbo, feijoada, and much more. What makes Wright's dishes--and cookbook--different from similar efforts (besides its "all-under-one-roof" commitment) is his insistence on authenticity. Readers will find, for example, a recipe for the famous French Daube Provençale that calls for salt pork in addition to slab bacon, plus beef or veal foot, among other ingredients. Wright's devotion to the real thing will excite most readers, and while it may discourage others, all will find the recipes clear and easy to follow. The results of Wright's devotion to formulas in every way justify the kitchen (and shopping) duty required.

The recipe selection is definitive. The section on lamb stews, for example, contains over 50 mouthwatering recipes, from the paprika-hot Classic Lamb Stew of Andalusia; piquant Abruzzi Lamb Stew with Egg and Lemon Custard; and Sweetly Saffroned Lamb, Onion, and Golden Raisin Stew of the Jews of Morocco; to Indian Rogan Josh and Martinique-Style Mutton Curry, among others. Other sections, like those on seafood stews and vegetable stews, are equally comprehensive--and enticing. Wright also provides inviting background material, and sidebars such as "What's a Cardoon?" and "Cuisine of the Poor," which details the birth of many stew-type dishes. With notes on equipment and a comprehensive list of ingredient sources, the book is full of worthwhile information as well as wonderful cooking. --Arthur Boehm

Editorial Review:

From his travels around the world, culinary writer and expert Bernard Clayton, Jr., has put together an eclectic collection of more than 250 soup and stew recipes, adding to the clear instructions personal anecdotes and historical background. Now, in this beautiful updated hardcover edition, The Complete Book of Soups and Stews, Updated, he includes an array of favorites, as well as some delicious new additions and healthful preparation tips, that makes this a must-have in any kitchen for any season.

He covers a wide range of soups, from Asparagus and Crab to Peach Buttermilk, and American classics such as New England Clam Chowder, Burgoo, and U.S. Senate Bean Soup share the spotlight with such international gems as Japanese Shabu-Shabu, Nigerian Peanut Soup, and Scottish Cock-a-Leekie Soup. After a thorough discussion of the many kinds of stocks, from Brown Stock to Dashi, Clayton includes, for those of us who are time-pressed or just plain lazy, the pros and cons of homemade versus store-bought stock, along with tricks and tips to improve the latter.

Clayton's first book, The Complete Book of Breads, won the coveted Tastemaker cookbook award and was praised by Craig Claiborne as perhaps the best book on the subject in the English language. Of Clayton's The Complete Book of Pastry, which also received a Tastemaker award, Claiborne said: "One of the most important cookbooks of this year if not this decade."

With recipes that are well written and easy to follow, Clayton shows that soup making is neither time-consuming nor difficult, and in any case is well worth the effort.

Editorial Review:

For every occasion there seems to be a suitable soup: chicken soup for when you're under the weather, chili for the big football game, cheese soup for après-ski. Author and food writer Ken Haedrich relishes and highlights the unique character of soup in Soup Makes the Meal: 150 Soul-Satisfying Recipes for Soups, Salads, and Breads. His soup and salad recipes feature fresh, interesting, and, in many cases, seasonal foods. The recipe choices are meant to appeal to all appetites: they can be hearty enough to satisfy the hungriest meat eater or observant enough for vegetarian tastes or stylish enough for more elegant affairs. Find Chilled Creamy Peach Yogurt Soup for the summer months paired with Blueberry Lemon Scones and Tomato, Feta, and Peach Composed Salad garnished with Peach Vinaigrette. The yeast and nonyeast breads included are both interesting and unique. Jeff's Whipped Cream Biscuits are a rich accompaniment to Deborah's Bulgur Buttermilk Herb Soup, and the Molasses Soda Bread with Curried Pumpkin is the perfect winter's night companion to Haedrich's Cheddar Bisque. A well-known and experienced food writer, Haedrich offers the reader a bountiful harvest of choices that he recommends mixing and matching. This impressive collection should lead to a near-endless supply of satisfying combinations and possibilities. --Teresa Simanton
