Frank Tolbert's A Bowl of Red started out as a series of columns in the Dallas News but it's hard to define exactly what this book is in terms of form. It's not really a cookbook but I've made terrific chilis from his suggested recipes. It's not even completely about chili, although it starts out with that classic American (not Mexican) dish. Tolbert starts with a rambling history of the origins of chili in Texas cuisine and uses that as a base for wandering around through southwestern cuisine, famous Texas and southern cooks, ghost towns, European immigrants in Texas, the science of chili, chuck wagon chefs and too many other topics to list. His descriptions of the first several World Series of Chili Cookoffs in Terlingua, Texas read like a combination of the Marx Brothers and P.J.O'Rourke.

It may be hard to believe but this book is hard to put down. It's one of a kind.

I love this book so much, I've purchased one for the camper, the boat, home, and have even given it as gifts. Of all the recipes in it that I've tried, 99% of them are delicious, and need very few (if any) adjustments. The salad section is great for those rough summer days when you're so hot you can't even think, let alone come up with interesting meals. Each dish is simple, and most are colorful and nice enough for guests.

If you like the Chicken Soup For the Soul books, you will want to have the cookbook as well. This is your chance to really experience the stories as you read them and then try your hand at the rceipes. I can almost smell the aroma of fresh bread or pies as they are cooking. I have tried several already and have gotten rave reviews for the food, but it is even more fun to tell the story to the family as they enjoyed the dish. I am already thinking of one recipe that I would like to share myself and I know as you read and try the recipes, you'll have one to share also.

I had thought this was a great book for learning how to use Dutch Ovens for cooking. Lots of good general info and many nice pics. But, when it comes to the recipes I just don't get how the author can get them so screwed up. As I am new to Dutch Oven cooking I followed the recipes and cooking times precisely. I just wish the author had taken the time to take each recipe and follow it as per the directions to re-test the directions. Many of the cooking times are just plan screwed up and incorrect. As an example, there is no way in this world that the 1 hr cooking time for the sausage and sauerkraut recipe is anywhere near close to correct. Being new, I followed this literally and found that 1 hr is totally inadequate to get the dish to cook thoroughly. Tonite, I am trying the Big Woods Chichen recipe. One hour is completely inadequate for cooking. I am now trying to get the recipe to cook at 2 hrs. I'm sure my rice will be completely overcooked when the chicken is finally done. I am using a Viking professional stove which has been tested and calibrated and am also using a Lodge Dutch oven. Please don't waste your money on this book. It looks good but when you follow the recipes to the letter the results are poor and very disappointing!!!!!!!1

I've had this cookbook for a while now and have used it to make soups over the past two winters. Many of the recipes within it have become family favorites that we make over and over. The split pea soup with ham and French onion soup gratinee can't be beat! Other favorites include: black bean soup with sausage, avgolemono and lamb and chickpea soup. Overall a great cookbook that will bring many hours of cooking and eating pleasure!

This book is a great collection of different soups for different moods. They also all incorporate several similar ingrediants, but stick to a great variety. My only complaint is the lack of calorie, fat, protein and carb counts. That would be helpful.

I first fell in love with this kind of food on a trip to the New Hebrides Islands (the island of Espiritu Santo) in the 60's. Upon returning home I immediately purchased the only book of French cooking around--Julia Child's "Mastering the Art of French Cooking" and put on 20 pounds. This book is wonderful! It's fun to read, easy to work with, and the food is really, really good. I loved the Split Pea soup and the Hunter chicken. Fortuneately, since the paradigm shift in French cooking during the 1970's, there's not a lot of high-fat food here--just good, solid, nourishing comfort food. Enjoy...
