A Must Have 5 out of 5 stars.
2 of 2 people found this review helpful.

Absolutely the best camp cookbook I have had yet. Recipes are simple and easy to understand. Ingredients can all be found at any supermarket, even small ones. The breakfast section alone is worth the price of the book.(These cooks really liked a big breakfast) The book is durable and there are enough recipes to last the average camper years before having to repeat a meal. Most meals will feed 4 to 6 easily and the additional stories, tips and photos are a great bonus!

Editorial Review:

The National Museum of Forest Service History presents a charming cookbook that celebrates decades of camp cooking by countless Forest Service agents in the field. Featuring legendary recipes for Dutch oven meals, open-fire dishes, and other tasty outdoor specialties used daily in the early days of the Forest Service, Camp Cooking: 100 Years has dozens of recipes, photos, and anecdotes that tell the whole history of these brave and hardy individuals. Dedicated ranger's wives prepared meals with limited resources as they accompanied their husbands in the field, often supplementing cooking with k-rations cooked over an open fire. In rustic and remote locations, delicious, time-tested creations were prepared and served, including Dutch Oven Beer Bread, Parmesan Mashed Potatoes, Pioneer Night Stew, and Creamy Pumpkin Pie.

Fantastic for backpacking meals... 5 out of 5 stars.

As a boyscout leader, we like to outdo the scouts on our creative cooking to inspire their creativity. It is a great book, to show how to make creative meals without the weight of heavy food items. This has been great!! Thanks C>

This book is all about fulfulling those food fantasies and avoiding those expensive disappointments. Learn to plan menus and prepare meals just like the ones you left behind, using fresh foods from your garden or market, prepared and seasoned the way you like them.

GREAT 5 out of 5 stars.
2 of 2 people found this review helpful.

I'm a outdoor trainer for Girl Scouts-- this cookbook is excellent for the new to experienced person. All the receipes are tried and true, from the easy level to the advanced. Everything you need to know, how to cook using stick, one pot, dutch oven, cardboard box, paper bag, ingredients, type of fire, even to the number of charcole brickets you need are included. It's easy to read and understand. I highly recommend it to anyone that cooks outdoors. I've done 3 outdoor trainings using it, and every leader there (including people who have never cooked outside), purchased a book. The receipes can also be cooked in your kitchen. Try it, you won't be disappointed. Christine and Tim have done their homework on this book.

Brings back memories and gives new ideas 5 out of 5 stars.

The Scout's Outdoor Cookbook does, indeed bring back memories and gives new ideas! Simple, easy meals are described. Whether carried miles by backpack or prepared in a cast-iron Dutch oven, these culinary delights are practical as well as mouth watering. Also, these recipes kindle the spark of innovation, and create unique dining experiences as we all want and need in the wilds. These wonderful foods are not for the sit at home, or the weight watcher, but for the robust, trail-pounding adventurers burning calories and experiencing adventure

Too Funny 5 out of 5 stars.
32 of 42 people found this review helpful.

I havn't had the opertunity to try the recipes yet but this cookbook is a great read. The recipes all look basic enough with a good mix of simple supermarket ingrediants as well as wild game recipes. I have about a 1/2 dozen dutch oven cookbooks and these are by far the best read so far. Unfortunatly despite the listing this is *not* spiral bound and wont stay open while cooking hands free. The second book, "more Cee dub's Dutch Oven and other camp cookin" is still spiral bound.

Dutch Oven cooking at it's best 5 out of 5 stars.
8 of 8 people found this review helpful.

For me as a German "Dutch Oven Lover" this cookbook is an easy and efficient way of learning how to cook with a Dutch Oven; the recipes are explained in detail and easy to change with other ingredients that are handy.
The highlights of this book are the tales which are very amusing and informative at the same time. It gives this cookbook a touch of a Wild West story book, nicely to read and entertaining.
When did you read - really read - a cookbook last time?
This book was fun to read and I learned a lot of "handling" my Dutch Oven and outdoor cooking.

Editorial Review:

The book is a cookbook focusing on Dutch oven and camp cooking, spiced with humorous and informative stories of Mr. Welch's experiences cooking in the back country of Idaho. It includes the basics of history, selection, and care of Dutch ovens along with many recipes which a beginning Dutch oven cook, as well as a more experienced cook, will be able to master. The objective is to prepare easy, healthy, and delicious meals outdoors.

Don't buy for dinner recipes unless you have a dehydrator 2 out of 5 stars.
12 of 15 people found this review helpful.

I agree with the person who wrote that you need a dehydrator for this book's recipes. The author commented (rather self-defensively) that a full 2/3 of the recipes do not require one, but that's not true for the dinners.

I'll be honest and say that dinners are why I bought this - snacks and breakfast aren't that hard to make, but dinners, especially for a group, can be challenging. I did a quick count, and 40 of the 59 dinners require a dehydrator. Of the ones that don't, the authors include recipes with ramen, spam, and macaroni and cheese, none of which I need a cookbook for and two of which I bought the book to get away from.

And then there's the "Trail-grown sprouts" dinner which suggests growing sprouts for three days in netting, presumably in your pack, and then eating. This is hardly a full meal. There are also a few dinner recipes with the main ingredient being plants or fish caught while in the backcountry, such as "Sandy's Weed Salad" with "Collect greens along the way in a plastic sack and wash them in streams" and then toss with dressing as the directions. Most experienced hikers know to not plan on a meal being caught or harvested in the wild.

The book is also padded with information about National and Historic Scenic Trails in the United States, which is ok information I guess, but a) is of very little use to most people unless they plan on traveling the entire country, and b) odd to have in a cook book.

I will probably sell this book and look for another that doesn't have so many major meals (e.g. dinners) that require a dehydrator.

Editorial Review:

Tasty backcountry cookbook filled with trail-tested recipes providing nutritional information, food preparation and meal-planning tips from experienced long-distance hikers.

Simple Beginner book for Campfire Cooking 4 out of 5 stars.
5 of 6 people found this review helpful.

A good beginner book to give basic recipes and ideas for cooking on the campfire. The book does what I imagine it set out to do, giving starting point for people doing outdoor cooking with younger children such as parents, scout leaders, or teachers.

fun book with neat ideas 5 out of 5 stars.
3 of 3 people found this review helpful.

I got this book at the library, but then came now online to purchase it. The ideas presented were fun and easy. I hadn't used tin foil on the campfire before, and the author gave some good ideas for that as well as items to be cooked on a stick. For example, I loved the idea about melting chocolate and bananas in the banana peel wrapped in tin foil. One reviewer commented about the use of perishables in the recipes. That wasn't a concern for us because of the refrigerator in our trailer. I suppose one could put the food items in an ice chest as long as one could drive to his/her campsite.

I highly recommend this book. It's fun and easy food for families while camping.

KEY for expedition planning 5 out of 5 stars.
9 of 9 people found this review helpful.

This book is all you will ever need (and you WILL need it) to plan long trips. I find that planning food rations for long trips is one of the biggest logistical challenges. Not only can the planning be difficult, it can also be difficult to figure out which foods will keep your body energized and healthy over long periods of time (i.e. not Ramen). When you are on a high altitude expedition or on a long-distance backpacking trip this is very important. This book tells you which ingredients to bring along, how to break up food during the day (i.e. 10% of your food should be breakfast food, 25% should be lunch food, etc.) and which foods work well for each category. Included in the book are two worksheets which you can photocopy and use for each trip. The worksheets are basically formulas - you plug in the number of people in your group, the number of days you will be travelling, the quantity of food you want to take each day (the book also makes good reccomendations about how many pounds of food you should eat each day) - and then the book tells you how many pounds of breakfast foods, dinner foods, etc you will need for the entire trip. Once you have all of the basic ingredients, the book also has a great recipe section which tells you how to put together all of your ingredients into tasty meals. The book is small enough that you can take it with you on your trips (maybe 6 inches by 8 inches?). If you're really nitpicky you can cut the "cookbook" section out of the book and leave the rest at home to save weight. I'm glad that I finally got around to writing a good review for this book, and someday I need to get around to writing a thank-you letter to Claudia Pearson for writing it.

Healing the Earth 5 out of 5 stars.
13 of 16 people found this review helpful.

Our planet, Gaia, is sorely in need of healing. Her earth, waters, and air are polluted. Natural resources are being depleted. Thousands of plant and animal species are becoming extinct.

In this classic book, Thomas Berry summarizes and discusses the dire needs of our planet for healing. While not going so far as to advocate spiritual healing as a solution, Berry strongly advocates for awareness of the innate intelligence of Gaia.

Berry masterfully explores the mind-sets that have contributed to the dangerous depletion of our planetary resources. He suggests that we have yet to find the guiding myths and images to inspire us to relinquish our focus on personal and national material gains in order to properly focus our energies on relating to Gaia in a harmonious way.

The annotated bibliography invites focused further reading.

Editorial Review:

This landmark work, first published by Sierra Club Books in 1988, has established itself as a foundational volume in the ecological canon. In it, noted cultural historian Thomas Berry provides nothing less than a new intellectual-ethical framework for the human community by positing planetary well-being as the measure of all human activity.
Drawing on the wisdom of Western philosophy, Asian thought, and Native American traditions, as well as contemporary physics and evolutionary biology, Berry offers a new perspective that recasts our understanding of science, technology, politics, religion, ecology, and education. He shows us why it is important for us to respond to the Earth’s need for planetary renewal, and what we must do to break free of the “technological trance” that drives a misguided dream of progress. Only then, he suggests, can we foster mutually enhancing human-Earth relationships that can heal our traumatized global biosystem.

Editorial Review:

Why cook by the hearth when our modern stoves offer such convenience? William Rubel's remarkable The Magic of Fire provides unexpected answers to the question, not immediately apparent to those interested in pursuing live-fire cooking and the intense flavors it produces. To be sure, the book is definitive in its exploration of open-hearth technique; readers learn everything they need to know about equipment, methods (including ash baking, ember roasting, and hearthside grilling, among others), and even about fire itself (it has various life stages, each best for a particular cooking task). Rubel also provides 100 delicious hearthside recipes for fundamental foods like roasted red peppers, ember-baked fish, pot roasts, and desserts, including bread pudding and baked apples--formulas he conscientiously walks us through.

But the book's greatest--and most exciting--virtue lies in its presentation of fire cooking not merely as a "hobbyist" project but as a means for understanding cooking itself. It does this by revealing the relationship of fire to the things it cooks; in learning, for example, that a hearthside frittata requires "a moderately mature fire with gentle to moderate flames" to cook while simple toast needs "a new to moderately mature fire with moderate to high flames," we begin to see just how cooking works. For anyone interested in this everyday but still magical feat, this is thrilling stuff. With over 100 color illustrations of the required fires (whose preparation is thoroughly detailed); a discussion of alternative cooking "venues," including campsites; and a useful food glossary, this guide, both practical and illuminating, is an unexpected treasure. --Arthur Boehm

best cookbook for camping available 5 out of 5 stars.
6 of 6 people found this review helpful.

Many years ago I went on my first camping trip with my husband. We entered beautiful Big Sur with everything we thought we needed; a tent, sleeping bag, camp stove and some propane. I forgot to bring food. I didn't even have a can opener. If only "Campfire Cuisine" had been available back then. The first two chapters cover all the gear and cooking supplies you need to bring and how to plan meals for the trip.

I love to cook. I love camping. This book really brings the two together. The usual camp cookbook recipe ingredients like bisquick, frozen tater-tots and canned mushrooms are completly absent. The author instead relies upon planning, at-home preparation, and careful packing to take the place of processed convenience products.

"Campfire Cuisine" is filled with delicious recipes most of which use a camp stove or grill. (Unfortunately there are no recipes for dutch oven cooking.) The recipes are fun without being really fussy. The "Fish cooked with curried couscous" (page128) is wonderful without being weird. Even my kids liked it! The whole thing cooks in tin foil on the grill. No clean up! The "grilled flatbread pizza" (page156) calls for lavash bread instead of pizza dough. Of course the next day that same lavash can be used for one of the many varieties of "Aram sandwiches" (page 88). There honestly isn't a recipe in here that I wouldn't try. But I do like trendy food and I like to try new things. If you like more basic food then this book might not be for you.

As for the book's design, I can see where someone who has poor eyesight would have a problem reading the book. It's printed in olive green and orange on white. I think the author wanted the book to be small enough to pack for a camping trip, so the type is really small. The content is so good though that the book is still worthwhile.

After fifteen years of looking for a great camping cookbook I finally found it. If you like to cook and want a book that will make the meals on your next camping trip really shine, then this book is for you.

Editorial Review:

Campers will wax rhapsodic about sleeping outdoors, breathing clean air, and communing with nature, all the while eating unhealthy, unsatisfying foods. Campfire Cuisine is here to ensure that you won't have to eat hot dogs and baked beans any longer.

This illustrated cookbook features more than 100 simple but inspired recipes for meals that can be cooked at a campsite all made from fresh foods, without any prepared or freeze-dried ingredients. Enjoy recipes such as Spicy Orange Chicken, Grilled Steak Tacos, Bourbon-Glazed Salmon, Lemony Couscous Salad, Cinnamon Baked Bananas, and more!

With Campfire Cuisine's practical guidance on meal planning, cooking, and equipment selection, it's easy to eat well while reveling in the great outdoors.
