If you have ever taken a NOLS course out of the Rocky Mountain branch, then you've most likely experienced the privilege of working with Claudia and the wonderful staff at The Gulch, who are extremely wise in the realm of nutrition, and very experienced with helping students. I really learned to eat in style while backpacking - and more importantly, how to supply myself with the proper amount of fuel for physically arduous expeditions.

During my Outdoor Educator Semester, we lived out of the Nols Cookery (National Outdoor Leadership School) - a wonderful book filled with recipes and strategies for bulk ration meals, a staple of the NOLS philosophy and the foundation of the best eating that I've ever done in the wilderness. Having had to return to the harsh reality of life outside of NOLS, I constantly found myself wondering how to adapt the skills I acquired to shorter trips, while maintaining the high quality of the food I cooked.

This book was made exactly for that purpose; imagine my delight! Repackaged in a convenient smaller size, easy to take with you, and filled with wisdom and some of the finer and more simply prepared recipes that NOLS has to offer. For baking, you'll want to acquire the NOLS Cookery (I made some WICKED pizza in the canyons of Southeast Utah, along with some death-by-peanut-butter-brownies,) but for delicious meals like the Gado-Gado spaghetti or cheesy hash browns, this book has you covered.

My recommendation? Get both the Cookery (write some of the recipes down) and this book, and take this one in your pack with your recipe notes. My thanks to Claudia, Joanne, Pat, and the rest of the amazing support staff who made this book and all the expeditions out of the RMB possible!

Originally published in 1910, this early outdoor cookery book gives recipes for outdoor delicacies such as Lungwort bread and dried beans. Written by Horace Kephart a renowned outdoorsman of his time, this delightful and fully illustrated cookbook contains, in addition to recipes, a wealth of advice and comments on camping and life in general. "The knack of camp outfitting consists in getting the best kit in the least weight and bulk. Wise campers prefer to go light, doing without most of the appliances of domestic life. It follows that camp cookery is an art distinct from the cuisine of kitchens. Originally published in 1910, this is a comprehensive presentation of all that is needed to set-up a successful camp kitchen; from provisions and utensils, to dressing and keeping game and fish, building of fires, proper utensils, and preparation with various recipes." The Best Advice and Meals for the Trail! 5 out of 5 stars.

Gretchen McHugh provides practical advice and guidelines on dehydration, equipment and meals for the backpacker who enjoys eating. The instructions and recipes are clear and easy to follow. Best of all, the results are very tasty! As a Trail Coordinator and Section Leader for the Florida Trail (alton2@mediaone.net), I highly recommend this book.

My sisters and I have used this as our bible for the last 15 years or so when we head to the Boundary Waters or the Quetico for a week of wilderness canoeing. "Superb meals" are indeed what you get! A couple of our favorites are the Spaghetti Carbonara and the Vegetable and Ground Beef Stew, but there are lots of other recipes to suit every taste. Although several of us have invested in dehydrators now, the directions for drying food using the oven are really good too. The jerky recipe could use a little more seasoning, but as with all cookbooks, one's own taste eventually dictates minor alterations. This is a great book for anyone who wants to lighten their load on the trail without sacrificing quality and taste. I'm so glad it was reprinted in 2002!

I have quite a few cookbooks, and even more camping books. I would rate this as one of the better books I have read about cooking in the woods. The instructions are easy to follow and the recipes are delicious. There are about 200 tasty recipes total, and he uses camp stoves, dutch ovens, reflector ovens, and the fire itself. The book has advice on pans and what to pack. He shows you how to cook the meals for big groups and small alike. And there are plenty of fun recipes for kids and scouts in here as well. He shows you how to cook in foil to cut down on dishes and pans, and other timesavers.

He also shows you differnet methods to build fires, and how to make a few home-made grills and stoves economically.
If you only buy one camp cook book, this would be a good choice.

If you buy this title buy the one with the 2nd edition marker on it, it is much improved.

The information in this book is accurate and presented clearly, but the techniques and recipes are extremely basic and boring. I won't need to refer to it for reference and thus won't be keeping my copy. Incidentally, no guidelines or plans are given for anything like the stone stove shown in the cover photo. Since that's such an attractive set-up, I think it's misleading to not include info on it in the book.

If you have always wanted to learn about skillet cooking, this is the book for you. A wealth of information is included on all aspects of skillet cooking from shaking the skillet, features of a good skillet, to sweetening the skillet. And I never knew there were so many skillet cooking techniques, but they are all explained here. Common terms are described as well as other not so familiar terms including sweating, trying out and parboiling. After reading this cookbook, I realized how much I did not know about skillet cooking.

Proper utensils to incorporate with skillet cooking are covered, for every skillet chef needs a wooden spoon and at least one spatula. Different ways to move the skillet around while cooking to achieve different results such as swirling, flipping, tilting and tapping are also discussed. Several possible skillet oils and the uses of each are explained too.

A section I found most important was that of skillet safety. My own perception of skillet cooking has always been that it can be unsafe, dangerous and unhealthy. All the various possible injuries are covered along with the proper way to handle each situation. A word of warning--skillet cooking is a full-time job, especially one on high heat. And most of us have heard to never leave a skillet handle sticking over the edge of the stove, especially if children are on the floor in the vicinity.

Most of the recipes are short, easy, and can be prepared in camp or on a tailgate, as well as in the home kitchen. Success in skillet cooking is related more to technique than to a long list of special ingredients, for it is a hands-on type of cooking. You will find that by and large there is a great deal of repetition as far as ingredients are concerned, so mastering the technique is the challenge but definitely worthwhile and entirely possible.

Those who love to skillet cook should enjoy the variety of recipes included. If it can be prepared in a skillet, you will most likely find it here. The book claims to contain more than 101 modern and old-time recipes for jackleg cooks and practical housewives. How true! And for those wanting to learn to skillet cook, you should be able to obtain a good education on this type of cooking. I wholeheartedly recommend Skillet Cooking for Camp and Kitchen. I received my copy of the book with the intention of eventually handing it over to my husband and son who camp and cook often with the Boy Scouts. I may change my mind and add the cookbook to my recipe shelf!

I have over 35 years experience in camping, hiking, survival training and having fun and a great experience in the back yard and the wilderness. This book offers a smile and easy fun for enjoying the rough aspects of the outdoors. I am sincerely disappointed that it is out of print. It must be that the publishers has his/her toenails done daily, because he/she has no clue as to what enjoyment this book can bring away from their overdomestication. I have worn out my first copy (the one with the colored pics), but smiled doing so.

As an outdoor trainer, I find this (and other Dian Thomas books) invaluable parts of my personal training library. She offers many simple yet intriguing ideas for outdoor cooking fun, suitable for novices or experienced cooks who want to add flair to their outdoor cooking experiences. My particular favorites are the wheelbarrow grills (great when the local ordinances will not allow us to build a fire on the ground) and the turkey cooked hung from a tripod (We fed 15 people with a "bird" done this way. It took a lot of work to set it up, but we were paid off in oohs & ahs for our inventiveness!)
