How to prepare simple, delicious meals on the trail

If you think eating in the backcountry means either cooking out of your car trunk on a multiburner stove or subsisting on dried fruit and freeze-dried pouch food, think again. In the first case you’re not really in the backcountry, and in the second case, says Don Jacobson, you’re not really eating.

The One Pan Gourmet shows you how to enjoy Mother Nature and enjoy easy, tasty, and satisfying meals using fresh ingredients and only one pan, pot, or small oven.

Don has gathered and trail-tested all the recipes, and he's added some new favorites for this edition. He's also included up-to-date information on cookware, outdoor stoves, and water filtration, as well as:

  • More than 175 recipes for breakfast, lunch, dinner, and dessert
  • Vegetarian options and low-fat choices
  • Provisioning and packing advice
  • Weekend menu plans for pan, pot, and oven

"Will improve the eating habits of all hikers. Gives the overnighter a delightful (yet luxurious) addition of tasteful, well-devised meals that require only one pan, pot, or do-it-yourself stove."—Sierra Outdoors

"Jammed full of a wide variety of dishes."—Sea Kayaker

"Offers a unique perspective on using fresh foods in the wild."—American Hiker

Pocket-sized disappointment 2 out of 5 stars.
29 of 30 people found this review helpful.

When I saw this compact book on-line, I was thrilled with the prospect of having a handy PORTABLE cooking book to add to our Boy Scout Troop grub box.

The size is just right, but there are very few recipes that typical boys would make. The cover shows a fish ... and recipes tend to that direction -- more 'elaborate' than most boys are interested in ... or often, have the TIME to make during camping events.

I gave it to the Troop, but don't feel it was as useful as it could have been.

Useless information 2 out of 5 stars.

I was very disappointed in this book. It was way too basic.

disappointed 1 out of 5 stars.

I expected a more simplified version of a ccokbook with common ingredients found on a camping trip. This book may be better suited for an adult crowd with gourmet camp food in mind. I should have selected another book geared for families and kids.

Cook Book 4 out of 5 stars.

For the most part I was pleased with this book. It had a lot of good ideas for recipes. I just wished it had more. The only downside is that even though it says that it is 96 pages the book is small (hand sized). The author has good ideas (even though they are few because of size). Otherwise a good read for the price.

senior reader 5 out of 5 stars.
1 of 1 people found this review helpful.

do you want a fun cook book to read? i got mine at a library sale and it is a hilarious book to read but also a serious book on what not to eat cooking in the wild. extremely handy for what to take and what to leave at home. great recipes for home or "out in the wild" even if it's only your backyard. for example-- frisbee. this can be used for a plate, lid, soup and/or mixing bowl, cutting board, sand shovel, fire fan, serving dish, emergency kayak paddle,, hat[ drill two holes and lash with shoelace], and last of all a toy. know a camper, well get this book for them and then borrow it for the recipes.
hairdryers are best left home for there are no plugins on trees.
this book is written in plain ol' english with no nonscence about dangerous mushrooms and other wild foods. enjoy just reading it.

Probably the best camp cookbook out there! 5 out of 5 stars.

Okay, I own LOTS of books, especially cookbooks. I've been camping most of my life. This book, bar none, is the best I've ever read on camping cookery. Whether you camp in a tent or RV, travel by foot, bike, boat, or motor, this book will be a worthwhile expense.

It talks about what you need for camp cooking, and more importantly, what you DON'T. Anyone thinking about buying any kind of RV or live-aboard boat needs to read this book first. You will never look at a galley the same way once you read this book! How to pack, why to pack it, and what you need for different types of travel are all covered. Backpackers take note: many of the recipes are especially geared for lightweight, safe meals which don't require all the comforts of an RV or designated campground. The authors are well-known for their Mexico guides and mention several ways to keep food from spoiling without power or ice.

Don't expect a full-blown discussion of stoves or the latest titanium doodads in here, that's not the focus of this book. It's a cookbook with enough how and why to ease even cook-shy people into preparing a wonderful wilderness meal. The emphasis is on fresh foods, with a good dose of common sense. You won't find recipes which require an Internet search to find all the ingredients, or ones which require you go to the specialty food store and spend a gazillion dollars on the ingredients. This is food you'll WANT to eat when you're done.

It's funny, truthful, and useful, but it's also a darn good collection of food for traveling! This stuff's so good I eat it at home. Their cooking methods make a lot of sense, and so do the equipment lists. You may take their lists of what you need in a kitchen and decide to redo your home kitchen, not just the one in your pack, panniers, or galley. You'll take a lot less with you, do a lot more, and save money by eliminating purchases you just don't need.

I really love this book. It's the only cookbook I own 3 copies of - there's one at home, one in the car kitchen box, and one with the bike panniers. If I'm on the road, it's with me (or at least portions of it, sliced up for weight).

Get one and you'll never be consigned to a camp dinner of canned pork and beans with cold hotdogs, or expensive freeze-dried foods again!

Where is the beef? 1 out of 5 stars.
12 of 16 people found this review helpful.

Was highly disapointed after reading the recipes in Backpacker Magazine and then not finding them, nor similar items in the book. I was impressed with and interested in hardtack and corn dodgers, which neither one appears in the book. Also, a more complete title of the book includes "Gourmet Cuisine", had I known that at the time I probably would not have orderd it. I just want to get by with the basics and do not care about a five star meal. I eat to live , not live to eat. James

Lots of good recipes in here 4 out of 5 stars.

I found this book very good. One of the best recipes is the pizza. It may be hard to believe you can make GOOD pizza in the bush, but I have cooked it numerous times for my family, and they ask for it everytime we camp out. The dessert recipes have been good as well. This is a good book for someone like me that is just learning how to cook good food out of what you carry on your back.

Excellent resource -- entertaining to read 5 out of 5 stars.
15 of 15 people found this review helpful.

I might not camp out a lot, but I do love my barbeque! And this book satisfies that, with delicious recipes you can make on an indoor electric grill or on your deck. Even better, you don't need a grill for the side dishes, salads and dressings and desserts. I love the cornbread recipe and the Rocky Road Fudge is to die for! Easy to read. Binding lays flat so the pages don't turn while you cook. It's become a staple in our house.

An easy-to-use recipe guide 5 out of 5 stars.
0 of 0 people found this review helpful.

Spiral-bound to wrap its front cover around and lay flat for easy reference, The Happy Camper's Cookbook: Eating Well Is Portable is a collection of recipes and cooking tips ideal for anyone on the go, whether camping, living in an RV, or just trying to scrounge up dinner when there's "nothing" in the house. Recipes range from a versatile "Country Pork Rub" ideal for use on meat to be cooked in the smoker, to "Cajun Stir Fried Rice Dinner", side dishes like "Maggie's Green Beans", "Chili Torta" (the perfect way to use up leftover chili), "Pink Salad", and much more. The tips and tricks range from how to effectively reheat food to how to turn cabbage soup into a hearty supper. An easy-to-use recipe guide especially recommended for anyone short on kitchen or refrigerator space who tends to run aground of too many leftovers!

Editorial Review:

In addition to great interpretations of grill classics "The Happy Camper's Cookbook" covers hot and cold side dishes, what to cook for a rainy day, intentional left-overs for fabulous lunches, and great dessert 'assemblies'. Along the way, Abraham and MacGregor offer helpful hints for making the camping chef's life easier.

A great book for campers and hikers of all experience levels 5 out of 5 stars.
41 of 42 people found this review helpful.

This book contains not only a variety of recipes but half the book is dedicated to valuable information on grocery shopping, food preparation, meal planning, equipment, cooking techniques, etc. Carole Latimer, author and "offical cook on the Call of Wilderness trips" has no qualms about listing the best brands of foods to purchase. Carole strongly believes that you CAN eat delicious meals in the wild (your meals don't have to all be prepackaged, freeze-dried). It is obvious in her writings that being in the outdoors is food for the soul and food for the body should enhance that experience. "The physical, psychological, and spiritual benefits of good food to a wilderness party can hardly be overestimated." This was exactly the kind of book I needed to boost my confidence in taking my family of five tent camping this summer!
