I recently completed my 4th Quarter as a Culinary Student at the Art Institute. Using the book "Garde Manger, The Art and Craft of the Cold Kitchen" was great text used in our course of Garde Manger. The recipes easy to understand and the outcome of each dish had great results. This book is a great addition to my library as i will refer back to it frequently.

This publication provides a broad range of basic and advanced techniques for the cold kitchen. We used this book in the culinary arts program at the college I attend and I have made many of the recipe's successfully. I withheld one star because I found that universally the recipe's lack proper seasoning. It's a great book for anyone needing real working recipe's and techniques for salads, dressings, hors d hovres, canapes, taurine, sausage making, smoking, and other detail cold kitchen work.

Best Buy for self-taught sugarcrafters 5 out of 5 stars.

Start with Book 1: Beginners, to get the foundation of sugarcraft skills then move onto this one, the advanced version with many more expanded techniques. As in Book 1, Book 2 lays out each technique step-by-step, with gorgeous photographs and easy to understand text. These are progressive lessons in sugarcraft, each building on the skills learned in the previous one.
The text is written for an international audience with metric measurements and imperial in parenthesis. There are occasional bumps in the translation for American readers(the reference to a "cake board" is actually a "cake drum" found in British import or specialty baking shops),however, 99% of the math is done for you and I had no trouble doing the little bit of calculating needed. It is good practice for other books on sugarcraft you will no doubt want to buy later that only use metric measurements and international terms.

The designs are unique and very do-able, although patience is a requirement. Practice, practice, practice.I strongly recommend purchasing Book 1:Beginners, as this book is a continuation to advance your skills and not a starting point. Recipes are included with an array of patterns and a glossary of terms. My only complaint with these books is that they aren't spiral-bound to lay flat.

Great cookbook for one or two people 4 out of 5 stars.

This is a great cookbook. Lots of great recipes, broken up into breakfast, beef/pork, chicken/turkey, seafood, vegetarian, and dessert sections. It is not a huge cookbook, but has lots of variety. The recipes do not require too many ingredients and no hard-to-find ingredients like some other cookbooks. The recipes also have low fat or fast labels (or both) on them. This cookbook also has many pictures and nutritional breakdowns for every recipe. The only thing I do not like about this cookbook is some recipes often require lots of pots and pans and sometimes too many things going on at once (but I'm a beginner cook though). However, with practice, I'm sure I'll get the hang of it. I've made about 10 recipes so far and loved every one! There was no review of this book when I bought it, so I was a little nervous, but very impressed!

A very straight forward and complete book for those who are thinking they would like to become a chef or work in food services. Ms. Bilderback pulls no punches in explaining to the reader what it is like to pursue a career in food preparation and what it is like once you are fully trained. A very easy to read and humorous book that should be read by everyone thinking of exploring a new career for themselves. This is one of those "must have" books.

Iron Chef is the most ingenious TV show ever created, well, the REAL original IC show, at any rate.

The over-the top cheesy quality, the bad-English dubbing, the dumb air-head actresses(who sometimes come up with surprising smart comments); the exotic ingredients, and of course--the challenges. The stuff that no normal person would ever cook, or dream of touching on his dinner plate.
The combination of sports arena quality and the sideshow of Prices Right, equals=valuable hours of your life spent on watching TV!

the book is very in depth, though not quite a "cook" book, the only true thing it lacks it the statistical point. Who won the battles, etc.

I am very disappointed in Food Network for not continuing to buy more Iron Chef shows and or continuing to show the reruns; and not to make them into DVDs....instead they're being despots and forcing us to watch that horrible horrible horrible mutant child that came out of that so called "chef".
Yet again, an original anime/comedy/whatever show is ruined...just like how they mangled Godzilla. the "Other Thing" show lacks the corny flavor, the second commentator (Fuki-San was awesome), the REAL chairman, a REAL Chef, REAL ingredients; Fun challengers, (ok, Ming Tsai was funny, but that's it);my respect for Ming grew after watching that only good episode...he was funny, relaxed, self-assured and he kicked Flay's butt!!
awful musical score (sure the soundtrack of the ONLY incarnation of IC was from.....movie, Backdraft), pathetic judges (they ALL annoy me, for some reason).

watching the "OTher Thing" gives me a stomach ache, a headache....and I keep rambling.

SCOUR THE EARTH for lost videos/tapes/bootlegs of the ONLY IRON CHEF. If you're a true fan, don't even bother watching "Other Thing".

"If my memory serves me correctly....this book will give me recollections of funny and good times."
