Recipes OK, but get the ringed binder 4 out of 5 stars.
1 of 1 people found this review helpful.

So far have only made a couple of the recipes, which were fine. I saw the book in a store shortly after getting it from Amazon, and the one there had a ringed binder - which would be much better because it would lay flat on the counter. I didn't think about that when ordering.

Abundant in recipes for the light cooker. 3 out of 5 stars.

I'm a big time calorie counter and fat counter. I have good eating habits do to the fact that I lost 56 lbs. with Weight Watchers about four years ago. So I'm not a stranger to cooking light. I prefer it. And I love to cook with my slow cooker. I bought the original Fix-It cookbook and LOVE it. And I have to say that although I haven't used this one as often it is filled with an abundance of great recipes and their nutritional facts.
Overall, a great cookbook that I will keep next to my other favorite cookbooks.

Don't get this book- waste of money! 1 out of 5 stars.

I can't tell you enough how bad these recipes were. And like the other reviewers was excited to get this cookbook so we'd stop eating on the go so much.
I started trying a new recipe such as the chilli and it was awful! Most of the recipes were bland or mushy.

Great Recipes! 5 out of 5 stars.
0 of 0 people found this review helpful.

So far everything I have tried has been great! The recipes are very clear and easy. I like that it doesn't plan out every meal for you, you get to just look through and pick what you want. Works perfect for me even though I am only cooking for two. I can adjust the meal portions as I see fit which means I can make extra and pack for lunch the next day. We have saved a lot of money not having to go out and buy lunch everyday. It is also easy to make the recipes as healthy as possible by just using low fat low sodium ingredients. I am getting this book as a gift for family members for Christmas! I recommend it to everyone!

Delicious and easy recipes 5 out of 5 stars.
2 of 2 people found this review helpful.

I have a bunch of recipe books for baby/toddler food, but this one is my favorite. I've made about 10 recipes from the book and each one is easy to make, healthy and delicious. Most of the recipes are great for the whole family - not just toddlers, and I love that she emphasizes the value of organic food. I'm ordering another copy now to give as a gift.

Editorial Review:

Can you tell whether a recipe will work before you cook it? You can if you really know what's cooking.

In the long-awaited CookWise, food sleuth Shirley Corriher tells you how and why things happen in cooking. When you know how to estimate the right amount of baking powder, you can tell by looking at the recipe that the cake is overleavened and may fall. When you know that too little liquid for the amount of chocolate in a recipe can cause the chocolate to seize and become a solid grainy mass, you can spot chocolate truffle recipes that will be a disaster. And, in both cases, you know exactly how to "fix" the recipe. Knowing how ingredients work, individually and in combination, will not only make you more aware of the cooking process, but transform you into a confident and exceptional cook -- a cook who is in control.

CookWise is a different kind of cookbook. There are over 230 outstanding recipes -- from Snapper Fingers with Smoked Pepper Tartar Sauce to Chocolate Stonehenge Slabs with Cappuccino Mousse -- but here each recipe serves not only to please the palate but to demonstrate the roles of ingredients and techniques. A What This Recipe Shows section summarizes the special cooking points being demonstrated in each recipe. This little bit of science in everyday language indicates which steps or ingredients are vital and cannot be omitted without consequences.

Among the recipes you'll also find some surprises. Don't be afraid of a vinaigrette prepared without vinegar or a high-egg-white, crisp pâte â choux. Many of the concepts used here are Shirley's own. Try her method of sprinkling croissant or puff pastry dough with ice water before folding to keep it soft and easy to roll.

CookWise covers everything from the rise and fall of cakes, through unscrambling the powers of eggs and why red cabbage turns blue during cooking but red peppers don't, to the essential role of crystals in making fudge. Want to learn about what makes a crust flaky? Try the Big-Chunk Fresh Apple Pie in Flaky cheese Crust. Discover for yourself what brining does to poultry in Juicy Roast Chicken.

No matter what your cooking level, you'll find CookWise a revelation. Different people will use CookWise in different ways:

  • Home cooks will value CookWise as a collection of extraordinarily good recipes.
  • The busy chef can use CookWise as a reference book to look up and solve problems. Major headings are shown in the Contents and 42 At-a-Glance summary charts make problem solving quick and easy
  • Beginning cooks can use CookWise as a howto book with easy-to-follow recipes that produce dishes looking and tasting like the work of an experienced chef.
  • Food writers and test-kitchen chefs who are developing recipes can find the formulas and tips for successful recipes,
  • Anyone who wants to improve a recipe can use CookWise as a guide. Here is how to make cakes moister, a pate A choux drier and crisper, a dish lighter or darker in color; how to make muffins peak better, cookies spread less, or a roast chicken juicier.
  • Everyone who cooks needs to be able to spot bad recipes and save the time, money, and frustration that they cause. Many of the At-a-Glance charts point out specific problems.

CookWise is not only informative, it's engrossing, and many sections react like a mystery story. The knowledge you gain from its pages will transform you, too, into a food sleuth, an informed and assured cook who can track down why sauces curdle or why the muffins were dry -- a cook who will never prepare a failed recipe again!

Great, but... 4 out of 5 stars.
2 of 2 people found this review helpful.

This cookbook is a great start to learning how to stretch your dollar. Just a few things to note before purchasing: 1) it does not allow for gluten intolerance or other allergies (I wasn't able to use any of the bread recipes, for instance), 2) the philosophy it teaches of using less meat and more complimentary vegetable proteins is common sense and some may not be willing to do this, 3) even though it teaches the use of complimentary proteins, there are a lot of recipes which use white rice and regular flour, both of which have very little protein to offer (use whole grains instead). They make up for this by using lots of soy, legumes and some dairy. 4) Most recipes are hearty, standard fair. No mediteranean flavors like olive oil, etc. That being said, so far the recipes are tasty. I just add vegetables to the recipes for color, texture and nutrition.

Editorial Review:

Welcome to Cook's Country - a place where you'll learn what's cooking in kitchens across America. This debut collection from the editors of Cook's Country magazine celebrates the landscape of American home cooking from yesterday and today. In the tradition of great American cookbooks like The Fannie Farmer Cookbook and The Settlement Cookbook, The Cook's Country Cookbook is, at its core, a wide-ranging, comprehensive collection chock-full of beloved classics like roast chicken, beef stew, biscuits, blueberry pie, and more. In addition, the editors of Cook's Country magazine have also reached back in time to revive old favorites to suit modern tastes and lifestyles. Here you'll find Chicken Divan without the soup mix - only tender chicken crisp broccoli blanketed in a velvety cheese sauce. You'll learn that it's possible to serve a from-scratch comfort food classic like meatloaf on a weeknight when time is tight: our mini-meatloaves cook in a fraction of the time of traditional versions.
Discover fresh, new, and sometimes regional recipes that illuminate the depth and personality behind American cooking - recipes such as North Carolina Pulled Pork (a slow-cooker dish with real barbecue flavor); 24-Hour Salad (a make-ahead salad where the vegetables remain crisp and fresh); and King Ranch Casserole (a kid-friendly creamy chicken casserole with toasty corn chips and Southwestern spices, made famous by Lady Bird Johnson).
In addition to foolproof recipes, The Cook's Country Cookbook also pulls back the curtain to reveal the often fascinating origins of classic American favorites, such as the use of breakfast cereal in party snack mixes or how Bundt pans gave rise to the popular cake. Much more than a collection of foolproof recipes, The Cook's Country Cookbook provides a lively, in-depth portrait of the great American table.

Good reference 4 out of 5 stars.

Being a fan of Mr. Brown's "Good Eats" I was kind of hoping this book would read more like a story.
It will be kept in the kitchen as a reference for any future purchases but it is not the type of book you read from cover to cover.

Editorial Review:

Alton Brown has smoked a salmon in a cardboard box, roasted a prime rib in a terracotta flower pot, cooked onion soup in an electric skillet, used a C-clamp as a nutcracker, and a binder clip to hold a probe thermometer in place. While his machinations may border on the Rube Goldberg-esque, it is among Brown's missions to present the best - and often the simplest - tool to get the job done. Following an introduction that discusses a little bit of kitchen history and some advice on room layout and organization, the book is divided into 9 chapters: Big Things with Plugs, Pots and Pans, Sharp Things, The Tool Box, Small Things with Plugs, Storage and Containment, It Came From the Hardware Store, Surfaces, and Safety and Sanitation.

Editorial Review:

"In Culinary Artistry...Dornenburg and Page provide food and flavor pairings as a kind of steppingstone for the recipe-dependent cook...Their hope is that once you know the scales, you will be able to compose a symphony."a Molly O'Neil in The New York Times Magazine.

For anyone who believes in the potential for artistry in the realm of food, Culinary Artistry is a must-read. This is the first book to examine the creative process of culinary composition as it explores the intersection of food, imagination, and taste. Through interviews with more than 30 of America's leading chefsa including Rick Bayless, Daniel Boulud, Gray Kunz, Jean-Louis Palladin, Jeremiah Tower, and Alice Watersa the authors reveal what defines "culinary artists," how and where they find their inspiration, and how they translate that vision to the plate. Through recipes and reminiscences, chefs discuss how they select and pair ingredients, and how flavors are combined into dishes, dishes into menus, and menus into bodies of work that eventually comprise their cuisines.
