I thought this book would provide good recipes for complete meals you can prepare ahead and freeze. It is recipes you sort of do half way and freeze and then you still have to thaw and finish cooking when you want to make them. To me that is just making a mess and dirtying pans twice for no apparent reason. I wanted ideas for good homemade frozen dinners my hubby can pull and reheat for he and our daughters while I am away on business trips.

There are some good recipes here, most require up to an hour plus thawing to "finish" the night you want to use them.

In its many publications and on TV, Cook's Illustrated/America's Test Kitchen offers exhaustively tested "best" recipes, tips, and product evaluations. Among its cookbooks, The Best Make-Ahead Recipe offers over 300 formulas that can be prepared in advance, held, and finished later. The recipes range widely from pre-prepared oven-ready dishes like Baked Fish Provençal; "double-duty" recipes, such as Mexican-Style Pork and Chorizo Stew, that use leftovers imaginatively; slow-cooker items like Tuscan white bean soup; and desserts, such as a chocolate soufflé that can go from freezer to oven successfully. In addition, the fully illustrated book offers helpful charts like How to Reheat, which provides advice according to portion size and heating method; special-occasion menus that can be started up to a month ahead; and discerning product and equipment advice.

As with other Cook's Illustrated projects, Make-Ahead includes recipes that have appeared previously in its other works, though a majority of these have been amended with make-ahead or scaling-up data. Almost all the recipes are prefaced with their trademark testing "diaries," exhaustively detailed accounts of the recipe-making process ("With the onion shells figured out, we focused next on the filling...," gives the flavor), which some readers will find enlightening, but others will think excessive.     I had seen this book at a friends business and thought it was good. Since I have ordered and received it I have had the chance to really review the contents and find it one book that I can use daily. The CD rom is also fantastic in the number of recipes it contains. One nice feature is that you can size the recipes to what you need. Another great plus. Well worth the money. Tom Elliott, CEC

    This book is so helpful to me. I'm a new head cook at a Public school and plan to use many recipes from this book. Besides the great recipes it helps me with Nutritional planning, Variety menu planning with eye appeal, specific food information such as heating temps and storing food, and recipe adjustment. This book will be a tool I will use daily at work. I love that each recipe has the nutritional values per portion.

    I had to buy this book for my Quantity Foods course as a part of my Dietetics major. I actually liked the book, and I am going to keep it for later use. I thought the book was organized very well. Some of the charts in Chapter 2 and 5 that we used quite often were a little hard to find (because there are so many!).
    It also presented a good overview of things you wouldn't think would be in the book, such as the school lunch program, etc.
    I liked it!

    Overall a good resource, especially for the price.

    Pros:
    -- excellent lists and tips for making lists
    -- good section on portions and quantities
    -- interesting menu ideas
    -- tips on how to find help and when to use hired help
    -- good decoration ideas


    Cons:
    -- some of the recipes don't work
    -- most recipes serve 8 people. If your party is for 50 it would be helpful to have recipes that serve more people or more specific information on how to scale the recipes (both those in her books and favorites from other sources).
    -- could use more sketches/diagrams on table settings. The few she has are good. Possible layouts for rooms and buffets would be helpful as well
    -- some information is obvious or redundant
