A Must-Have...FANTASTIC 5 out of 5 stars.

I have had the wonderful opportunity to review the book, 'Food FAQs: Substitutions, Yields and Equivalents' by Linda Resnik and Dee Brock, published by FAQs Press. One of the authors approached me in November 2002 and noticed how I had not reviewed their book yet at Amazon.com. Through my information, they found the articles I have written at Suite 101, and there, also, I had not indicated once about their book "Food FAQs". Confidently, Linda Resnik offered me a copy of their book in exchange for a review. I accepted.

When the book first arrived, I noticed that it was small, and organized into 3 sections: Substitutions, Yields and Equivalents, and an Index, which fully cross-references. At a first glance of the book, I saw how functional this book was. Everything was alphabetized, with hard-to-find ingredients also included.

After 25 years of cooking experience (16 of those on a regular basis), I was very curious if this book would really work. Of course, I had to put it to the test. My first test, conveniently showed up the day the book arrived. I was planning on making a yogurt pumpkin pie and had just discovered that I forgot to buy the yogurt. I used their easy-to-use reference guide, and found that the substitution for yogurt was buttermilk. This was great, but I was leery, as one of the major ingredients in the recipe for this pumpkin pie was the yogurt. Well, I continued on my way, and prepared the pie as the recipe recommended. Later, my husband and I taste tested the results. My husband said, "This is delicious!" Being a man with challenging palate, I found this very rewarding, and I agreed to make this pie again for Thanksgiving! My next mission was that of "lotus root". One of my friends has only been in the USA for barely a year. She is from Japan and made me this rice salad. Being pregnant, I was craving this wonderful concoction! But I could not find the lotus root in the grocery store. I looked up the ingredient in this handy reference book to discover that the authors feel like water chestnuts would be an adequate solution. I was also very pleased with the results here.

When I ventured to the Equivalents and Yields section. I, again, was impressed at my first glance. Not only does it explain how much one onion makes when chopped, but also once it has been cooked. This makes shopping easier for the less experienced cook who has no idea what that might require!

Editorial Review:

Everyday, novice and experienced cooks confront such questions as How many onions must I chop to get 2 cups? and I donÕt have any sour cream --what can I use instead? For the first time, these questions and hundreds more are answered in one handy volume. Food FAQs, a necessary resource for every kitchen, contains more than 1100 entries covering foods used most often in American kitchens.

19 of 19 people found this review helpful.

The recipes comprising the Easy Diabetic Meals provide easy-to-follow directions and ingredient amounts for both 2 and 4 servings, feature easily-located and common ingredients, and lack the complexity of some diabetic cookbooks which require long preparation times. The result is a set of complete 2-week menus for three different calorie levels and meals which embrace the concept of appeal for the entire family, diabetic or not.

- Sweet and Spicy Alaska Spot Prawns
- Autumn Pear Salad with Gorgonzola and Spiced Pecans
- Chicken Breast Stuffed with Wild Mushrooms and Smoked Gouda
- Bread Pudding with Butter Bourbon Sauce

Is this a menu from one of North America's great restaurants? Yes and no. It's actually a menu from four of North America's great restaurants, some of which whisk you along at speeds upward of eighty miles per hour. This enticing meal, just right for crisp fall weather and featuring the great foods of North America, comes straight from the dining car menus of four of the greatest trains traveling the rails today: The Midnight Sun Express, which travels through Alaska between Anchorage and Fairbanks (the prawns); The Belle Vista, which often takes diners through the Montana Rockies (the pear salad); The Spirit of Washington Dinner Train, which gives diners views of the Seattle skyline (the chicken breast); and My Old Kentucky Dinner Train, which travels the old Bardstown line and passes by the Jim Beam distillery (the bread pudding).

All across America, as trains speed through mountain passes, wend their way along the shores of crystal-clear lakes, and roll across blistering deserts, riders are enjoying some of the best that the North American table has to offer. Complete with serious wine lists, crisp table linens, heavy silverware, fine china, gleaming crystal, and impeccable service, these dining cars bring the age-old romance of dining well on a train into the twenty-first century.

Riders on the Napa Valley Wine Train can feast on California crab stacks, smoked Sonoma range chicken, and crème brulee, sip the local vintage and watch while small towns like Yountville roll by. Those waking up on the luxurious American Orient Express can watch everything from the autumn foliage of New England to the sun-basted Pacific Ocean surf pass by while enjoying fluffy omelets, freshly brewed coffee, pastries, and fruit juice.

James D. Porterfield, author of the now-classic Dining by Rail, takes readers into the kitchens and dining rooms of the great trains and rail cars, both public and private, to discover the secrets of the great railroad chefs. He talks to them about how they prepare meals that would be the envy of a conventional restaurant while working in a kitchen one-half or one-third the size.

Featuring more than two hundred recipes and just as many behind-the-scenes stories, James D. Porterfield's From the Dining Car brings the food of the great trains from the dining car to your dining room table. All aboard!

Editorial Review:

Oh, the dilemma of home-entertaining in our hectic world! Sure, formal sit-down dinners may impress our friends, but the hours spent slaving in the kitchen leave us exhausted. And it doesn't seem quite so hospitable to ask guests to throw together a casserole for a potluck supper. What's the alternative to this common predicament?

A great big platter. (Or, if you choose, a table full of them.)

In The Big Platter Cookbook, seasoned hosts and food writers Lou Jane Temple and A. Cort Sinnes serve up more than 100 full-flavored, crowd-pleasing, incredibly convenient recipes-like Cowboy Cassoulet, Bourbon and Coke Short Ribs, and Butternut Squash Risotto-that reflect the comfortable, casual approach to entertaining we prefer today. This cookbook is organized by the seasons, and includes chapters on starters and desserts to round out the meal. Each entree is paired with a recommended wine, and the book closes with suggestions for pots and pans that will make preparing these dishes a breeze. AUTHOR BIO: LOU JANE TEMPLE, the former owner of Cafe Lulu in Kansas City, continues to develop menus for new restaurants. She writes about food and entertaining for Kansas City Magazine, and is the author of the Heaven Lee Mysteries, a series of culinary thrillers.

A. CORT SINNES is the author of three popular cookbooks on grilling, including The Grilling Encyclopedia, which was nominated for a James Beard Award, and The Gas Grill Gourmet, which has sold more than 150,000 copies. He lives in Napa Valley.

If you liked Dinner's in the Freezer, get this, too. 4 out of 5 stars.
44 of 48 people found this review helpful.

While the book covers much of the same material as Dinner, it's updated and expanded to include breakfast and lunch. It's definitely a different book. There's more information about regional produce markets, and a recipe index. I'm disappointed that there aren't forms to photocopy like there are in "Dinner."

If you've never cooked in quantity, this book will take you by the hand and make it easy.

Now, to be picky, the math in the benefits section leaves much to be desired (waaay overstating the value of buying in bulk), and an appendix that was promised in the bulk buying section wasn't included. Both of those bugged me, but it's worth the effort to go beyond these and other editing errors to get to the information.

A time-saving, delicious and easy way to feed my family. 5 out of 5 stars.

Jill Bond does an extraordinary job in this book of explaining exactly how to Mega-Cook. I have read many books on this subject and this book by far puts me at ease with this somewhat intimidating process. I'm thankful for the tips she gives on page 103 about making up multiple batches. She gives an example of this method so those of us who need to "see" things can grasp the idea. This is a wonderful way to get started by understanding the whole process of this type of cooking and food preservation. The tips she sprinkles throughout as well as the test family responses gives everyone a great variety of recipes and ideas to choose from. Jill makes me feel that I know her family with the personal touches she puts in the pages. I waited quite a while for this book to be released and it has not disappointed me. I have tried some of the recipes and my family has enjoyed each one. I am looking forward to this method becoming a very welcomed way of life for me and my family.
