Hit and Miss, Mostly Miss 2 out of 5 stars.
4 of 4 people found this review helpful.

I got this cookbook from my Mom as a gift. I thought it would be great since I am a student on a budget, and buying 5 ingredients seemed to be very economical. As it turns out, the ingredients for each recipe are indeed easy to find and easy to work with (at least on the recipes I have made). Granted I have only cooked 13 recipes out of this book, which is barely scratching the surface.

In any case, out of the 13 recipes I have tried, only 2 of them have resulted in something that I would make again. The Quick and Easy Lasagne was great, although I added italian sausage and ground sirloin to the recipe. The recipe overall was not much of a deviation from how I would normally make lasagne, so I was sure it would be fine. The next one is the Enchilada Soup. That is some of the best soup I have ever made! Goes great with a chicken quesadilla or even just some crackers. It is also incredibly fast to make. In this case I cheated a little by getting a rotisseri chicken, shredding it the day before, and putting half of it aside for the soup. I just added chipotle seasoning, and it came out great!

Unfortunatly, that leaves 11 other recipes that I have tried and did not like. I had high hopes for the Late-Evening Breakfast Dinner (I think that is the name), however after trying it three different times and wasting a dozen eggs, a package of english muffins, and two cans of corned beef hash, I decided it was time to give up on that one. Getting the eggs to stay on the hashbrown/english muffin base was near impossible, even after making a hashbrown cradle. Although it didn't seem to matter anyway since since baking the eggs turned them into rubber, and would make the already toasted english muffins into frisbees.

The other big disappointment was the Spicy Oven Fried Chicken. I don't have a deep fryer or an iron skillet, so frying chicken (properly anyway) was out of the question. This recipe gave me hope that maybe I could make something that was close to fried chicken. I think the cornflakes killed it for me though. They just didn't seem to taste right after they had been baked. The chicken also ended up with dry spots on the crust, and yes I did add the optional oil to help prevent that. I think panko bread crumbs or even crushed croutons would have been a better option then corn flakes. The buttermilk and hot sauce mixture is something I would carry over though, it added a nice kick.

I won't get to far into the other recipes that I tried, but suffice it say that I am thus far not impressed with this cook book. I will give a few more recipes a try, like the Monkey Bread recipe, but I don't have high expectations for any of them. Maybe its just me, but I have been cooking on my own for the last six years (I'm only 24 cut me some slack :P), and I have yet to have such a run of bad recipes from one cookbook. I am no Alton Brown, but I know I don't suck bad enough to ruin 11 recipes in a row.

Excellent mexican cooking book!!!! 5 out of 5 stars.
8 of 8 people found this review helpful.

I was looking for a good authentic mexican book (my husband is mexican) and this one captured my attention. My husband reviewed it and he aggreed that the recipes are authentic from a lot of regions in Mexico. Each recipes has its own picture and very well presented.

I recommend it to all people who wants to cook mexican cuisine. The recipes are relatively easy to make and it's easy to find the ingredients.

A fabulous book!

Simply Exquisite 5 out of 5 stars.

Once again Marilyn Tausend does not disappoint! I own the Spanish edition of this book and have given the English edition to friends visiting Mexico and wanted a "real authentic Mexican cuisine" cookbook. She does a great job on explaining the traditions and festivities that go hand-in-hand with a lot of foods in Mexico. The Christmas punch is a family favorite served annually at our Posadas and Christmas meals. (Recipe tip: remove the seeds from the Guavaba fruit before adding to the punch.)

Even if you don't relish roasting and peeling a Poblano Chili, just reading the recipes and looking at the tantalizing photographs will make your taste buds tingle. This book is so beautiful, it would even look lovely on your coffee table. Mrs. Tausend's work, replete with interesting historical explanations, is a true portrayal of Mexico's rich cuisine and culture. If this book is not enough for you, then I recommend that you accompany Mrs. Tausend on one of her wonderful culinary trips to various parts of Mexico for a "hands on" experience of Mexico and its unparalled cuisine.

Favorite cooking tip: many of the Mexican chili salsas can be made in large batches and then frozen in smaller portions for use at a later time.

Not what I expected. . . 3 out of 5 stars.
2 of 2 people found this review helpful.

I was somewhat disappointed in this book as I was hoping to get more cooked recipes (especially for Korean Beef) and these are cold/raw recipes. It would have been nice if there was more of a description of the contents.

I do admit it has great pictures and might be a good book--just not what I was looking for. . .

Excellent publication for beginning cooks... 5 out of 5 stars.

This whole series of books is so well illustrated and written that anyone can follow them. As a culinary student and personal chef I love the fact that there is a picture of what everything is suppose to look like along the way. If you are wanting to cook and try some authentic tasting Korean cuisine this is a great book to start with. Even my Korean friends from church approved at our last dinner together. I am hoping to collect more in the series. The format and food are both excellent!!!

Great for beginners! 5 out of 5 stars.

I am married to a Korean man and wanted to try to make some of his favorites. This cookbook really does show you step by step how to do things to make it right. Very easy to follow the instructions. The only thing I would like better is if they were to give pictures of what the foreign ingredients look like. Overall a great book.

Editorial Review:

You’ve got a serious hankerin’ for Kung Pao Chicken, but Wang’s House of Noodles is 35 minutes away, it’s overpriced, and well, it just plain stinks. Come to think of it, you haven’t found great, let alone decent, ethnic take-out for a while. What to do? How about cook it yourself? All you need is to open up The Take-Out Menu Cookbook and step confidently into the kitchen. . . .This first-of-its-kind cookbook features the top 200 take-out and carry-away dishes from the 12 most popular ethnic cuisines: French, Italian, Spanish, German, Chinese, Thai, Mexican, Middle Eastern/Moroccan, Indian, Eastern European/Jewish, Greek, and Japanese. Why buy a Chinese cookbook when all you want is authentic-tasting but healthier-than-take-out Kung Pao Shrimp, Spicy Potstickers, and Mu Shu Pork? By focusing on the most popular dishes from each cuisine, Meredith Deeds and Carla Snyder provide starving chefs with the tools at their disposal to create authentic, healthy, and delicious meals that will make staying home worthwhile! Even highly experienced cooks can be rattled by sushi or derailed by dim sum. But with the help of the authors, who have more than 20 years of experience as cooking instructors between them, there’s no need to worry! With their guidance, the unfamiliar territory of ethnic cuisine is easily maneuvered.

What ever happened to the meals of yesteryear? They are here in this book. Talking about bring back years you thought were long gone. This book will reintroduce you to the comfort foods of your youth.

5 star plus! 5 out of 5 stars.

Easy, quick recipes. Bread recipe easier than mine, and just as good. Highly recommend this to people who want to save a few $$$.

Haven't tried the recipes as you need to purchase dehydrated ingredients 3 out of 5 stars.
3 of 3 people found this review helpful.

I was hoping this cookbook would help fill the niche of Make Your Own Groceries but it does not.

It does offer lots of recipes using dehydrated ingredients, which if you normally purchase, would make this method affordable. I am debating on whether to purchase the cheese powder, butter powder, dehydrated shortening, etc. to make the book's recipes.

I can either use the aforementioned Make Your Own Groceries or go back to the faithful copy of Make-A-Mix for do-ahead mix cooking.

Overall, the concept is good, especially if you normally stock dried ingredients for emergencies. I do not.

Editorial Review:

With Mix-A-Meal Cookbook you will enjoy the convenience of EASY just-add-water meals (like the commercial mixes you buy at the grocery store) and save time and money at the same time!

You will be able to reduce the preservative content in your foods or adjust the mixes as necessary to fit special dietary needs.

Because the mixes are shelf stable, they are ideal for traveling, camping trips or unexpected company. Tasty homemade Mix-A-Meal gifts are always a hit for Christmas, Valentines, birthdays, weddings, and more!

One of a kind information!

Helpful if you're not already a vegetarian 3 out of 5 stars.
24 of 28 people found this review helpful.

I found this book to be helpful in understanding the basic proportions of a healthful vegetarian diabetic diet, but have some reservations about it overall.

First of all, this book, which is sub-titled "Vegetarian Pleasures" might lead a practicing vegetarian to believe that it is focused on vegetarians, but ...throughout the book, vegetable protein sources are referred to as "meat substitutes". To a practicing vegetarian, there is no such thing as a meat substitute because there is no meat on your plate. The editors should take note of this for the next edition or be more up front about the fact that this book is really for non-vegetarians trying to add meatless meals to their diabetic routine. Which I completely support, by the way!

I also found some of the meals a little awkward, like this one: 1 soy dog, 1/2 c EACH carrot and celery sticks, 1/2 brussels sprouts AND 1 c bean salad, made with legumes. I really didn't know what to make of this either from an aesthetic or nutritional viewpoint. And I found the use of a certain brandname dried soup mix throughout to be annoying when it's so easy to make up and freeze nutritious home-made soups.

All that being said, though, I would still recommend this book to anyone who wants to have a selection of usually tasty, nutritious vegetarian diabetic meals, in a easy to read format. I liked the mix and match concept, the meals provide good templates for designing your own favorites, and the nutritional information in the back is very helpful. The menus tend to be the :30 quick-fix at home sort, but some of them are really good and they appeal to a contemporary palate in their mix of ethnic and old standard recipies. The use of soy product is minimal and most folks trying to just add some vegetarian variety to their diets will find many appealing options. The value to the practicing vegetarian is in the way menus are modelled on proper amounts of fats, carbs and proteins, so that you can train yourself to make appropriate and well-balanced meals of the correct portion size. So, despite flaws, I do recommend this helpful and useful book.

"Everyday cooking?" Give me a break! 1 out of 5 stars.
46 of 54 people found this review helpful.

Don't be fooled by the title of this cookbook. First, it is filled with exotic and gourmet, not to mention expensive, recipies. The choice of ingredients might be fine if you live in New York or San Francisco, but here in northern Wisconsin many ingredients just aren't available. (And if they were, would you fix squab or fried rabbit for Tuesday night dinner for your family?)

A second disappointment is the copious use of butter, oil and heavy cream.

This is the first time I've ever been so disappointed in a book I ordered that I will be returning it.

Keep it on the counter. 4 out of 5 stars.
22 of 24 people found this review helpful.

The Hildebrand cook book is very useful to me. I'm not a gourmet; I don't even like to cook that much (yet must do it three times a day). Somehow knowing that any of the interesting dishes in this fat book can be created with just three ingredients actually makes me want to whip something up. Even I can manage three ingredients! I like the fact that they include "add it in" items beyond the three. The add-ins are still simple, but make me feel like a real cook, by deciding whether to embelish. This is the only cook book I actually keep on my counter.

Editorial Review:

Bob Hildebrand, chef of a first-class inn in Vermont, and his sister Carol, a food writer, have teamed up to develop 500 recipes that use only three ingredients (plus the ôfreeö ingredients of water, oil or butter, salt, and pepper). This book features delicious recipes like:
  • Braised Chicken with Leeks
  • Sinful Chocolate Torte
  • Popovers
  • Bacon-Wrapped Scallops with Dill

Decent but not worth the price 3 out of 5 stars.
12 of 13 people found this review helpful.

The tips are decent but not really worth the price of the book. Also, there isn't a lot of text so you can read the book in under an hour.

All the tips are available online by subscribing to the electronic version of cook's illustrated for $3.95/month. Not only is this method cheaper, but you also get the tips that were published after this book came out.

Therefore I can't recommend this book because of the amount of content vs. the price.

Editorial Review:

But what is a quick tip? For the editors of Cook's Illustrated it's an easier way of performing a kitchen task that either saves time or money or improves the quality of the outcome. The tip may call for an odd appliance such as a hair dryer (for smoothing chocolate frosting) or a surprising ingredient such as miniature marshmallows (placed on the ends of toothpicks to hold plastic wrap above an iced cake). You will find practical tricks for peeling tomatoes, chopping garlic, knowing when your steamer is out of water (add marbles to the bottom of the pot) and toasting pine nuts (use a popcorn popper). Arranged alphabetically it takes you through softening Almond Paste to drying Wine Glasses on chopsticks.
