Unlike so many other cookbooks, this one is practical and gives the best possible combination -- convenience, speed, nutrition and variety while no skimping on flavor either.

In this book I learned Mitchell's philosophy that works well with mine. She professes that "cooking from scratch is a much better choice for health-conscious dining. It's a much better alternative than takeout food and low-fat frozen meals tend to be deceptively high in calories."

Mitchell says that one of the simple pleasures of cooking for one is never having to make something you don't like. You can eat breakfast for dinner or double a recipe and serve it at another meal.

This book works for me!

Acknowledged as the classic work on North Carolina cuisine, North Carolina and Old Salem Cookery was first published in 1955. This new edition, marking the book's first appearance in paperback, has been revised and updated by the author and includes several dozen new dishes.

The book is already a standard reference in many kitchens, both for the wealth of good recipes it presents and for the accompanying information on the distinctive heritage of the state's cooking. Beth Tartan provides recipes for such North Carolina classics as Persimmon Pudding and Sweet Potato Pie. A chapter on Old Salem highlights the cuisine of the Moravian settlement there and offers recipes, including Moravian Sugar Cake, from their famous celebrations.

Tartan evokes the time when people ate three meals a day and sat down to a magical Sunday dinner each week. With the advent of boxed mixes and supermarkets, she says, old favorites began to disappear from menus. And in time, so have the cooks whose storehouse of knowledge and skills represent an important link to our past.

In 1916, Joe Czarnecki opened a workingman's bar in Reading, Pennsylvania, named, aptly, Joe's. The specialty was mushroom soup made from the wild mushrooms gathered in nearby pine forests. Joe's became famous for the mushroom dishes and survived through two more generations of Czarneckis, including his grandson Jack. A former proprietor of Joe's Restaurant, Jack Czarnecki has put together one of the most complete mushroom cookbooks ever assembled. Joe's Book of Mushroom Cookery is the New Basics of fungus. With more than 300 recipes, the selection ranges from the elegantly simple to the ultimately sophisticated. The book is also an excellent guide to demystifying cooking with both commercial and wild mushrooms. Czarnecki immediately cautions of the inherent dangers in collecting wild mushrooms, and advises that caution and education are the best way to avoid pitfalls. Since this is a cookbook, not a field guide, a chapter is included on how and where to learn about collecting wild mushrooms. Also helpful is an extensive section on the culinary characteristics and preparation and storage of selected mushrooms. But where Czarnecki ultimately shines is in the recipe section of the book. Joe's Book of Mushroom Cookery is perhaps the most comprehensive collection of mushroom recipes available. The spectrum is broad, covering classic French approaches such as Filet Mignon en Croƻte, to lighter nouvelle dishes such as Fresh Trout with Mushroom Stuffing. There are also excellent sections on mushroom soups, appetizers, sauces, and desserts. I love to cook, love the Food Network and I adore cookbooks. For that reason, I enjoyed much of this book. I just didn't know many of the cooks in the book as I would have liked to and therefore wasn't quite as interested in their stories. I would love to see an updated version of this book with all of the "current" chefs that are on TV and creating masterpieces in some of the great restaurants today.

I have had this cookbook for years, and it's one of my favorites. Every recipe that I have tried has worked out well. Flavorful!! The recipes are easy to follow, and the ingredient lists are reasonable. You can easily double if you want to make more, but they are really geared to the two-serving dinner. Truly a gem of a cookbook. I keep coming back to this one!

I have an original copy of this wonderful book. You will find pinches and dashes and teacups for measurements in this volume. It even tells how to stoke the fire! I make the bread pudding recipe and it is a favorite with my family. In using this book you might have to do some trial and error for the degrees and the measurments for the recipes. For example Tea cups usually hold 4oz and not 8oz. It true fun for the kitchen, and the housekeeping is an interesting look at yesteryear. And we think that housework is hard now...NO WAY!!!!

You probably know Mrs Fields' name from those cookie places in the mall - you know, you walk by the area and the chocolate chip cookies aroma hits you and you're not going to be able to think of anything else until you have one of those cookies. And yse, she does make a dynamite chocolate chip cookie.

A chocolate chip cookie recipe leads off this great volume of cookies. I won't swear it's the kind made inthe mall shops, but I think it tastes just as good if not better. And your whole house smells wonderful from the baking. But that's not all that's in the book.

There are "Chocolate Dreams" - these are similiar to a sandwich cookie, but that description doesn't begin to do them justice. It's as if you took 2 wonderful sugar cookies and put chocolate mousse in as the filler. It is awesome and very easy to make.

Maybe your taste runs more into the bar cookies, maybe something like, ooh, brownies? Mrs Fields comes to the rescue with her "Super Fudge Brownies" which are rich and are wonderful with a cold glass of milk or a hot cup of tea.

There's also a recipe for "'Light' Chocolate Cheesecake" which suprisingly pleased my finicky chessecake eater. There's even a "Mocha Mousse Cheesecake" which has a gret chocolate butter glaze on the top.

But maybe you don't like chocolate? Or maybe you think "Is that all Mrs Fields can cook chocolate?". Fret no more - the "Poppy Seed Bundt Cake" is awesome, no other words can quite describe it. Eggnog cookies, a wonderful "White Ivory Cream Cake" , cookies with bananas, pineapples, marshmallows, macademia nuts - there's even a recipe for "Fruitcake Cookies".

And here's the beauty of it all - all the recipes are clearly and concisely given, are easy to follow and don't require 3 trips to the specialty stores just so you can get ingredients that you will only use to make that particular recipe. There's the usual cookie jar cookies as well as the fancier kind you could give as gifts to your friend and family. If you like to bake and you like cookies, this is the book to broaden your horizons. Buy it, bake it, enjoy it:)
