This is my bible of cookbooks. I have had a copy for 25 years and have never had a recipe flop or prove to be a diaster. The recipes are easy to follow and the ingredients tend to be easily available. The book has an excellent section on cuts of meats and how to best cook them. It also has a conversion section that is concise and extremely useful.

For those wanting South African recipes this book offers many. From koeksisters to bobotie to biltong to boerewors the recipes are excellent.

I have often found that the baking sections of many general cookbooks tend to be less then great. This is not true of "The Complete" cookbook. My husband has managed to make scones using the basic recipe! My daughters have both learnt to cook using this book and have rarely had any failures.

This is a cookbook that allows cooks from basic to advanced the opportunity to find good recipes that offer a variety of choices and many new recipes that will become family favourites.

Although this is the perfect book for a beginner, it is also an indispensable reference for the more experienced cook, offering more than 650 basic and easy-to-prepare recipes along with many tempting variations. There is a wonderful selection of hors d'oeuvres, soups, fish and seafood, meat, poultry and game, as well as sauces, vegetables and vegetarian fare, salads and dressings, egg and cheese dishes, desserts, cakes, breads and pastries, confectioneries, and preserves.

What a bunch of nonsense, Hostile Reviewer.

This is a beautifully written book with thoughtful, interesting recipes sure to tantalize and delight fellow epicurians. It's easy to follow, the instructions are clear and concise, and the ingredient lists read like a tale from Arabian Nights. I can't see how anyone could complain about this gorgeous book- unless they like the big glaring fonts of a McDonald's menuboard and call the Olive Garden "exotic".

Mr. Mercator, maker of wall maps, would have us believe that the continent of Africa is this piddly little thing, mostly below the equator, weighed down by the size and majesty of Europe. Jessica B. Harris, author of The Africa Cookbook, shows us how big this continent truly is (three times the landmass of Europe; 1,000 different languages); how incredibly ancient its history is; how grand and majestic is the sweep of cooking styles and food flavors that shift from north to south, east to west; and how up-to-the-minute and relevant those food and flavor experiences can be. As with any of Harris's previous books, the reader can savor equal portions of eye-opening scholarship, delectable storytelling, and delicious recipes.

The book is divided into chapters that discuss the edible history of Africa, the range of food regions in Africa, a glossary of African ingredients and utensils, and an argument that the much vaunted Mediterranean diet needs to look south for its origins. My first attempt was "Couscous Fritters with Fresh Corn and Tomato Salsa". Delicious! Every recipe tried was well seasoned and was what I'd call an "eager to repeat winner", if you don't mind fighting past all the errors.

In "Couscous Fritters", the instructions you're supposed to turn to page 20 for her technique on how to peel and seed tomatoes. There is nothing about tomatoes on page 20. It's really page 22. The recipe calls for 2/3 cup broth, but what kind? Step 1 puts all the ingredients for the salsa together while in step 2 you are asked to prepare the fritters. Among the ingredients you're supposed to mix together is the "remaining salt". What remaining salt? You used it all in step 1 for the salsa. I think she meant the cumin.

Recipes are well thought up but somehow, either the test kitchen or the editors goofed. If you are someone who really needs recipes to be right, skip this book. You'll pull your hair out trying to figure out what's wrong. If you can work around the mistakes and really want to try couscous, you'll find some really tasty meals in here. My copy has lots of notes and cross-outs. I'm sure yours will too.

I made three of these dishes. All recipes were easy to follow with well presented pictures and helpful English translations of the titles. My family particularly liked the potato chaps. Introductory material shed a lot of light on the background of the author during a happy youth in Iraq. I look forward to making the baklawa recipe.

Potato chap, otherwise known as a potato kibbi, is similar to a meat stuffed latke. The recipe called for an unusual amount of parsley, but it is definitely worth using. All who tried my batch enjoyed the kibbis.

We have ejoyed reading this book because of the unique presentation which includes beautiful color photos, excellent recipes, and a history of a family and Iraq. This book is especially interesting because of the importance of this region today. We received one book as a present, and we liked it so much we gave it as a birthday present to a person who loves to cook, especially new recipes. We have tried many of the recipes. Baklawa melts in your mouth and also is very healthy for you. We found the lamb recipes superb including the doub which is very tender. This goes very well with dolma which is a stuffed vegetable and the saffron rice and peas. Another recipe that we had enjoyed very much is eggplant casserole (Tabsi Badinjan). We love this book and we recommend it highly as a unique and exciting authentic Iraqi cookbook.

My cooking. The West African Cookbook is one of the few African Cookbook availlable on line. I was able to obtain one for myself after I saw one with my friend. I have since been using the book and it is amazing how easy it is to use the book. Perhaps the most amazing thing about this book is it authenticity. It is pure African. There are several ways to cook BLACK-EYED PEA and they are delicious.The Coconut rice and the Fried plantain are good together. This coming Xmas I am going to buy some for my friends as gifts. I think anyone who has a taste for African food should have a copy of this book.
