This Book Has a Few Problems, But I Still Recommend It 4 out of 5 stars.

I have lived in Marrakesh, Morocco for the past ten years, and eagerly picked up this book as soon as I saw it. Both the text and pictures in the book are REALLY lovely. If you are planning to travel in Morocco, it is a wonderful introduction to Moroccan cuisine.

However, don't try following the recipies given in this book, because some steps have been left out, and your result will not be correct. I found problems with several of the recipies. For example, the author tells you to make tagines (Moroccan stews) by putting meat or chicken in a pot with spices and water, and bringing ot a boil. While her lists of ingredients are correct, she has forgotten the all-important step of searing all sides of the meat in the pan BEFORE adding any water. If you don't do this, it will jsut taste like boiled meat. For correct and easy-to-follow recipies, adjusted to American kitchens, choose Paula Wolfert's book, "Good Food From Morocco."

The other small problem I found with this book is that some of the author's explanations for Moroccan behaviors are just plain not correct. For example, she states that most Moroccans never eat in restaurants because this would be an insult to the wife's or the mother's cooking. Having lived here for ten years, I can tell you the real reason is that most Moroccans just plain cannot afford even the cheapest restaurants. Upper-class and wealthy Moroccans DO eat in restaurants, nevertheless, often a couple of times a week.

Overall, however, I think the author has done an excellent job, and this would be a great book to either take with you on your trip to Morocco (it's pocket size), or to read in advance of your trip.

Good recipes, but not well ordered 3 out of 5 stars.

If you love Moroccan food but have never made it, this is the book for you. The steps for preparation are easy to follow and the food is delicious. However, the recipes are not as well categorized as they should be. Recipes seem to follow a certain indexing, but once you flip through the pages they are all over the place. I want all my main dishes under main dishes ... not the case here.

If you love lamb, this is the cookbook for you. But if you are looking for more, and in particular if you are searching for side dishes or vegetarian recipes, you will be disappointed. Some of the recipes call for ingredients not readily found in the US.

This is a good book to start learning how to cook Moroccan food. Nice pictures to go along with the recipes. But if you are cooking for a Moroccan some of the recipes aren't what they are used to eating.

This Somali cookbook is the first of its kind. These recipes represent traditional ways of food preparation and cooking that were for centuries transmitted orally[1] and practically by generations of Somali women: from mothers to daughters, elder sisters to younger sisters, aunts to nieces, grandmothers to granddaughters. To this extent, the recipes recollected in this book also represent an aspect of female history that captures Somali ways of living as maintained by and through generations of Somali women. Inside, you will find recipes for preparing all types of classic Somali dishes - from the exotic Somali tea to the appetizing sambuusi. Your culinary skills will sometimes be tested in preparing delicious Somali dishes like anjero with maraq bilaash. There are seventy recipes in all with over ninety colorful pictures that not only introduce a variety of Somali dishes, but also demonstrate the techniques to assure success. This is a good book for your 10 year old. There are exactly 22 recipes
in the book and no unfamiliar ingrediants. I think the spiciest
dish calls for a a tsp. of red pepper. The most exotic spice I saw
was cumin. It does have a few pretty pictures.
For an adventurous cook forget this book it is to African cooking
like taco bell is to Mexican cooking.

This entire series of Easy Menu Ethnic Cookbooks are wonderful for kids. I used them frequently when I was a nanny, and my boys loved them. The recipes are simple and not too intimidating for chefs-in-training! The bits of background information on the culture, history, and sample menus are wonderful as well. From someone with several years of childcare experience, and a woman who loves to cook (especially ethnic foods), this series of books are highly recommended to anyone who wants to introduce their kids to a variety of cultural foods.

Kitty Morse grew up in Casablanca, and through her extensive network of family and friends, she accumulated expertise in the cuisine of the entire Maghreb: Algeria, Tunisia, and Morocco. In this part of the world, banquets called diffas are long affairs which include heaping platters of couscous, aromatic tagines or stews, and exquisitely spiced dishes like feather-light Bisteya, a kind of pie often filled with pigeon. Meat, fish, and poultry are eaten, but most of the time, meals center on legumes like lentils, grains, and heaps of vegetables. Some of these dishes require seasoning with preserved lemons, fiery harissa, or a Tunisian blend of ground coriander, caraway, garlic, and chili powder which is called Tabil. Morse opens by showing how to make them all. There are recipes for a meatless Harira, a delightful Cauliflower and Zucchini Salad, and Tunisian Mechwya. There are also grilled peppers, several crustless Tunisian quiches, Foul Mudamus, a stew of fava beans with olives, plus a variety of couscous dishes and breads. The first chapter in the book describes the multitude of spices available throughout Africa: North African Harrissa, South African curries, East African piri-piri sauces, and Berbere from Ethiopia--all based, in some part, on chile peppers.
