YUM! 5 out of 5 stars.
17 of 17 people found this review helpful.

I bought this book because I've been trying to avoid Chinese take-out! I love Chinese food, but take-out can be so greasy. By making my own, I can control the oil and sodium in each dish.

An avid collector of Cooking Light books, I had to pick this up! More than 100 recipes; lots of fish, poultry, and beef selections; lots of variety. Got it yesterday; made the beef with spinach and ginger sauce for dinner that night. Got good reviews from my testers!

Also, I was pleasantly surprised to see that the book covers more than Asian stir fry. Cuisines covered include Mexican and Italian, with fajitas and other quick cooking, high-heat dishes.

Enjoy!

Amazing collection of successful recipes 5 out of 5 stars.

So far we have tried 15 of the 150 recipes and they have all been good. We rate dishes on a 1 to 10 scale, and all in this cookbook have been 7 or higher. It is taking us a while to get through the recipes because we are repeating so many of the 8's and 9's! Also, all of the recipes include the calorie and carb counts, which is very helpful.

Editorial Review:

A vivid account of a rich culinary legacy . . .A fabulous collection of 100 delicious, authentic recipes

Chinese cooking is one of the world's oldest continuous culinary traditions, developed over the course of four thousand years. A subject of profound importance for countless generations of Chinese philosophers, scholars, poets, and ordinary people, the selection, preparation, and consumption of food is much more than a matter of sustenance in Chinese tradition. It is the art of maintaining a subtle harmony between mind and senses. Now, The Food and Cooking of China invites you to explore the spiritual and sensual delights of Chinese cuisine as it takes you on a fascinating journey through the many regions of China, Hong Kong, and Taiwan.

"Francine Halvorsen takes Chinese food lovers to 'the source' in this book. Along with her travel notes from a recent culinary tour of China, she includes a food history of the country and authentic regional recipes that can be reproduced in the American kitchen. This is a journey you are sure to enjoy!" --Jacques Pepin Author, teacher, and host of the PBS-TV series, Today's Gourmet

"Francine Halvorsen's travel through Asia, exploring the relationship between food and culture are chronicled in this fascinating book. Along with a detailed description of every meal and bits of culture she encountered are recipes of the most popular regional dishes. If you love Asian food like I do, you too will love reading this book." -- Martin Yan Television Host, "Yan Can Cook"

Unusual Format, good culinary content, great pics 4 out of 5 stars.
3 of 3 people found this review helpful.

The three glossy, Golden Book styled Korean cookbooks by Noh Chin-hwa and Copyreader Shirley A. Dorow form a rather oddly titled collection of pretty good recipes covering the width and breadth of Korean cuisine. One really wishes these three volumes had been published as a single volume, especially as there is no index spanning the three volumes. These books are entitled `Healthful Korean Cooking, Meats & Poultry', `Low-Fat Korean Cooking Fish, shellfish & Vegetables', and `Traditional Korean Cooking, Snacks and Basic Side Dishes'.

Aside from the very non-European way of organizing these topics, the most difficult thing may be the mislabelling of various Korean techniques. Classic Korean barbecue is really a high heat fast cooking method, much more like grilling than smoke-based slow cooking barbecue. It's most distinguishing feature is that it is done on the tabletop on a grill very similar to the Japanese Hibachi. In other places, the name `broiling' is given to what is essentially another instance of grilling.

While I have eaten several meals at a Korean restaurant, I have never reviewed other books on Korean cuisine, so I can only judge this as if I were judging a book on French or Italian or Southern American cuisine.

One very dramatic feature of all three volumes is the fact that each and every recipe is accompanied with a series of very good color pictures illustrating the main steps in the procedure. This is in addition to a larger picture of the completed dish. Another very good aspect of the photographs in these books is that all the dishes are plated on similarly colored and shaped plates, so the essential difference from photo to photo is in the food and not in the crockery.

The photographer really gets a chance to do his stuff with the double page pics of typical table settings.

While it does me little good, I liked the fact that each dish is clearly named with an English name, a Korean name in English script, and the Korean name in Korean pictographs. For Korean speaking readers, I suspect this is a good thing.

The one thing I found most annoying about the way the recipes were written is in the fact that the list of ingredients is not in tabular form. That is, the amount and name of the first ingredient begins at the beginning of the first line, followed immediately by the amount and name of the second ingredient without a line break, if there is room remaining on the first line.

Ultimately, the most annoying thing about this collection is that the division of dishes between the volumes makes little sense to a Western cook, there is no combined index, and so much material in the introductions, glossaries, and table setting pics is duplicated in all three books.

And yet, until I review any more Korean cookbooks, these volumes' strengths outweigh its weaknesses if you are an amateur cook and really want to reproduce dishes from your local Korean eatery. I would prefer seeing a more general approach similar to the many excellent books on European cuisines such as Diane Kochilas' book on Greek food and Penelope Casas' early book on Spanish food.

Editorial Review:

75 traditional Korean recipes including desserts, bean curd dishes, basic side dishes and a variety of kimchis, a spicy fermented pickle have been chosen from the best of Korean cooking. These popular Korean snacks are very appealing for family meals as well as for entertaining guests. Over 340 color photos will teach and inspire the cook to follow each individual recipe.

Some great recipes including seafood 5 out of 5 stars.

We have enjoyed almost every recipe we have tried from this cookbook and I love the fact that it includes seafood. Lots of pictures. Try the crab stuffed shrimp...yum!

Great cookbook 5 out of 5 stars.

I've used many recipes in this cookbook, and I have yet to find one that isn't incredibly tasty. There's a good glossary for many of the ingredients in the front, and I don't have any difficulty finding things in my market. When I want to try something new, I am confident I can open any page in this cookbook, pick a recipe, cook it and likely have my taste buds singing for a couple of days.

Great Cookbook! 5 out of 5 stars.

I've used this in paperback form for over 12 years, and have not been disappointed with how tasty the recipes have turned out.

Easy, tasty recipes, and with some styling, they can look almost as nice as the pictures!

Great price (often under $2 at Amazon or even at garage sales etc), a pretty color photo of each dish...it just doesn't get better.

I've given these out as gifts to friends, who have been happy, can't beat that for a gift.

Shrimp Dumpling Dough Recipe! 5 out of 5 stars.
1 of 2 people found this review helpful.

This isn't a dense collection of recipes. I am buying all of the author's books because she's an authentic Sun Tak chef.

In my opinion, acquiring all of the author's cookbooks first before buying the other English language Chinese cookbooks makes an important foundation to understanding what you eat in America and how the food is cooked at home. Then proceed to the other cookbooks and hopefully to eating the more elaborate levels of Chinese cooking. I didn't pick up the author's cookbooks until very recently and only after learning that the author is from Sun Tak. I wish I had bought her books long ago.

Well thought out cookbook 5 out of 5 stars.

One of the challenges of cooking authentic asian cuisine is finding the right ingredients. You need a good asian market, of course, but you also need to know what to look for, how to choose, etc. This cookbook describes the ingredients in great detail so your trips to the market can be productive. And the recipes are great.

These recipes are great. Very innovative and healthy. 5 out of 5 stars.
6 of 6 people found this review helpful.

This book is a compendium of both great chinese dishes that have been re-created to minimize fat content, and innovative new dishes. My doctor is happy with my cholesterol drop, and I love the taste and texture of these dishes. The glossary, units conversion, low fat cooking methods, and nutrition notes sections are really helpful. Everyone that cooks should have a copy of this book. I have not seen any other books that compare to it. My hat's off to the author.

Absolutely Amazing! 5 out of 5 stars.

The recipes are easy to follow... The food is excellent and very tasty- you would never know it's actually good for you. Better than any Chinese take-out.

Great Chinese recipes! 5 out of 5 stars.

This is a great cookbook for anyone that wants to make authentic Chinese food in their own home. Oh yeah...it's also supposed to be low fat...you wouldn't know it from tasting the food! (That's a good thing.)

Editorial Review:

Providing more than 200 simple, low-fat recipes, this cookbook also includes nutritional information for each recipe.
