This is a very good food textbook, simple, clear, easy, no gimmicky or outrageous and so-called innovative modern Chinese nouvelle cuisine, such as those made up in "Susanna Foo Chinese Cuisine." The other one that I found as authentic as it is "Mrs. Chiang's Szechwan Cookbook" by Ellen Schrecker and her husband. Only the latter is so authentically Chinese that you may have to reduce certain fat from the ingrdients by using leaner stuff.

I was looking for a really good Char Shue (Chinese Bar-B-Q Pork) recipe since having this delicous treat at Chef Chew's restaurant in CA. For years, nothing came close to what I had that day. Then I found this book by Chef Chew and I wouldn't part with it for anything! It's well written and it's got some of the best authentic chinese cuisine in it *YUM!*

You won't be disappointed!

I've been a hobby Chinese cook for about 10 years, since I found this book for $1 on a table along NYC's Broadway on the Upper West Side. Its perfectly adapted recipes for the American kitchen are true to the original intent, and you will be able to create great meals at home with little trouble to replace that cold take-out.

Lest it sound that it's not for the serious chef, the instructions provide lots of interesting details about the true Chinese recipes and ingredients. If you live in a city or town that gives you access to the true ingredients (as I do), then you can also play authentic Chinese cook for your family or friends.

All-in-all, one of the most used cookbooks in our house, where we have well over 100, and my wife is a professional chef!

Authentic history wrapped around each recipe. The chinese experience the way my mother knew the world from 40's-70's. 5 out of 5 stars.

This book has many of the recipes and ways of life that my family lived with in China. There is one special recipe in the book for deep-fried sweet sesame balls that no one else could make any better. It is this kind of unique and obscure recipe that makes this book interesting. The lore behind where the recipes came from or how people make a living with these foods is what makes the book a really good read. I love all the recipes that are included.

This is the seccond printing of the original Chinese Peoples Cookbook published in 1979. It's the same book in paperback.

I have over 40 cook books covering just about every continent & country except Africa, Central & South America, & the country France. What I am looking for is for the authors to explain why a recipe works, not just giving the how + some glossy photos. This book is pretty good. It gives the basics such as type of cook ware that are needed & a few simple techniques that an average Joe can do at home. I'm giving it a 4 because I don't think any book, be it a chemistry or cook book, can explain everything. One needs a collection of books to be competent in a subject.

This is a REALLY bad book. I was very disappointed in the complete lack of authenticity of the recipes. That they should be simplified is something I've come to expect, but that they should be so inauthentic is inexcusable in this day and age when Chinese ingredients are so widely available--in supermarkets, Chinatowns, or online. Here are some examples:

In the section on ingredients, Ms. Liley includes (Vietnamese) rice paper wrappers (although the Chinese do in a very few cases use a type of rice paper wrapper, it bears no resemblance whatever to the hard, glassy Vietnamese kind); she states erroniously that Spring roll wrappers are made of rice flour (see Eileen Yin-Fei Lo's "The Dim Sum Dumpling Book" for the authentic recipe and method); and she labels as wonton wrappers, which are square and egg-based, potsticker/gyoza wrappers, which are round and water-based.

In the recipe for Pearl Balls (p.26), she lists short-grain rice instead of glutinous rice for the coating, and suggests that the rice be soaked for 30 minutes. I have been making pearl balls since I was 16 years old, and you *must* use glutinous rice, because even short grain non-glutionous rice won't soften in the relatively short steaming. Also, the rice needs at least 1.5 or 2 hours soaking.

Finally, Ms Liley in recipe after recipe suggests fish sauce (widely used in Vietnamese, Thai, and Filipino cooking, but never in mainstream Chinese) as, presumably, a substitute for light soy sauce, since most Chinese recipes specify light soy sauce (or a combination of light and dark soy sauces) for fish or seafood-based dishes.

The photos are exquisite, but what good are glamourous photos when the content is so falsified? Better to take the extra money and buy Lo's dim sum book, or the book "Dim Sum" by Rhoda Yee (the text is excruciating, but the recipes are good and really work), or for those who really want to get into this in depth, the dim sum books by Wei-Chuan Publishing.
