I have owned this book for over 20 years. I have used it so much, mine is falling apart, so I am replacing it! If you want easy to follow recipe's and clear techniques, this is the book to own. When it's my turn to do the Holiday cooking, everyone requests Chinese over Turkey. It's easy to adapt your own style of cooking with the recipes in this book. This is a must have for your cookbook library.

I love chinese food! Never could make it right though and nothing ever tasted like I got in the restaurants. Most chinese cookbooks seemed to miss the mark where it came to replicating the restaurant type food. I gave up on chinese food altogether for over 10 years.

I bought this on a whim this last winter and couldn't believe how good this stuff was. For me, it cracked the nut on restaurant style chinese cooking. This stuff is so freaking easy and the same ingredients in varying quantities are used throughout the book. You DO NOT have to have an extensive pantry to make this stuff and it is as tasty as anything you will ever order in a restaurant.

As a matter of policy and courtesy, I usually don't say anything about another review but there is one here that talks about having to use two cups of oil everytime you make something and how it isn't all that practicle. The person is right, for a lot of recipes the books tells you to have 2 cups of oil to cook your meat but you don't have to. I just sautee mine when I'm not in the mood to go all out or just use my deep fat frying and just reuse the oil like I normally would for anything else. It's not that big of a deal.

The sauces in this book are worth the price on their own and you won't be sorry.

The title should be called low fat instead of fat-free 3 out of 5 stars.

I was interested in buying this book. I read the previews of other readers, and I went to public library to check out this book before I invest money on this book. I am reaserching for the food combination from Suzanne Somers diet. For level one, one combination is that the veggies can combine with carbos but without fat (oil). In Chinese cooking, it is very hard to achieve bringing out the flavors from spice without oil. I am a Chinese housewife, and I have some knownedledge of Chinese cooking. Just by reading it, I can see these dishes might not be very flavory (especially Tofu dishes, which need some effort to get taste into this ingredient(tofu) through stewing or some heavy tasty paste).

In most of the receipes, cornstartch is used very often, which is the thing I try to avoid (refined carbos). This book uses many cooking spray (which is oil) in many dishes. It has some fat free dishes, but I consider they are not significant enough to be called such title as Fat-Free Chinese Cooking. A low fat title is more proper for it. This is a very American-Chinese cookbook taste.

Well, I'll keep looking for some other fat-free (or low fat) cookbook to see if there is some idea to replace oil in Chinese cooking.

This book might be useful to someone looking for a book with general information about tea, but for someone who wants to learn about the real art of Chinese tea, this book is useless . The book does not go into any detail about important elements of Chinese tea drinking such as Yixing teapots and the gongfu brewing method; it just tries to explain them in a few sentences. After reading this book, you will hardly have gained any knowledge of Chinese tea at all.
The book is obviously an imitation of John Blofeld's "The Chinese Art of Tea", which is an excellent book on the subject of Chinese tea. This book even copied the format of "The Chinese Art of Tea" by inserting small drawings in the margins, and they also copied the teahouse section of "The Chinese Art of Tea". The only thing they forgot to copy was all the good information.

The section in this book on tea brewing, entitled "How to Make a Nice Cup of Tea", provides instructions on making tea that could only be used to make tea for your dogs. The book does not explain any of the Chinese brewing methods, it seems like the authors just read the back of a Lipton box and copied into their book. If you are interested in Chinese tea, it is much better to find a few good websites on Chinese tea than to buy this book. Anybody who has even a small amount of knowledge of Chinese tea can see that this book is very badly made.

This is one of my favorites. The beautiful color pictures are great. The instructions are simple and easy to follow. The list of ingredients clear. I tried many of the dishes and haven't been disappointed yet.

I Just love Tammy Wynette. She was a true southern lady. This is the second purchase for this cookbook, I loaned mine out and she refused to give it back because the recipes were out of this world. I just can't live without it. Once I have put together one of the recipes in her book, people always ask for the recipe or ask for me to make it again. Tammy believed in southern cooking, and she believed as well as I do, the way to a man's heart is through his stomach. How true that is, my husband loves my cooking when Tammy's in the kitchen with me. I reccomend this book highly it is money well spent.

I received this book for Christmas and I have been cooking chinese food like mad crazy ever since. The best section of the book is the beginning which gives an overview of different chinese ingredients which might be unfamiliar to the novice. I've had success with each and every recipe I have tried---from the Tossed Noodles with Ginger and Scallions to Sweet Corn Soup. My favorite is the Dry-fried Four-Swason Beans on page 203. And also, my brother had been talking for months and months of a crispy seaweed dish that he loved to eat at chinese restaurants in England. I never had any idea what he was talking about until I found the "Seaweed" recipe in this book. It was so easy to make and he said that it was just as he remembered. I would recommend this book to anyone wanting to start experimenting with Chinese food in the kitchen.

A very fascinating and practical guide to the real authentic chinese cooking. Very well researched and easy to follow. Being an overseas chinese, I only use to hear about these authentic dishes from my grandfather, today I am keeping the tradition alive by cooking them! Two Thumbs up!

My copy of this book was published in 1978. I have used it regularly. Each time my family gets together I surprise them with another wonderful dish made from this lovely cookbook. I was also happy to see Ms. Kah and I have matured gracefully over these years. During the last 26 years I have made almost all the dishes, repeated several time after time and still love it. Don't be afraid to give this book a real try -- you'll be happy you did.
