Review title says it all. The recipes are long and quite involved - but easy enough to follow. The results are well worth the time invested. As a Brit living in an Indian cuisine desert (Minnesota, US) this book saves my sanity.

Vegetarians seeking something different need look no further than this collection of vegetarian dishes from Southern India: Sreedharan hosts a title which covers a variety of foods, from a Cabbage Curry and an unusual Tomato Rasam to Spinach with Baby Potatoes. The dishes are spicy, authentic, and tailored to American tastes while retaining authenticity. Advanced Indian cooks will find it particularly appealing.

As an indian I can tell you, these recipes are as close as you can get to authentic indian while staying low fat.

I must admit this cookbook sat on my shelf for a long time because I loved Mathu Jaffrey's time consuming and complexly spiced recipes if I was going to use a cookbook. The cooking we have always done at home used alot of specialty ingredients and took a lot of time, it seemed to me that simple low fat indian couldn't be any good.

BUT I WAS WRONG! The recipes in this book are EXCELLENT. Very close to authentic while using ingredients you can find almost anywhere and VERY HEALTHY. Imagine that!

The recipes in this book are low-fat, low cholesterol and low sodium while being very flavorful and fresh tasting. The nutritional lable at the end each recipe is very complete also. For example, for beef samosa's, she has 2 different ways of cooking them, fried or baked. Then she includes 2 nutrient analysis for each way of cooking it. VERY NICE!

Also each nutrient analysis has a breakdown for sodium with salt included and sodium content without AND a saturated fat versas total fat breakdown.

The last 40 pages have info on :

indian spices and their usages and flavor

American, British, Australian, and Metric conversion

oven temperture conversion : F versas Celcius

explaination of proteins, fats, carbs, and sodium Table of desirable weights for men and women

differences in cholesterol cooked and raw

balanced diet info

and a nutritional breakdown table of "common" foods although it includes items like lentils, bulgar and veal.

The only minus is that this book has diagrams (for somosa wrapping etc.) but no color pictures. :(

Overall I'd say this is a wonderful book for people interested in fitness or dieting and exotic foods! Not a single item in this book is swimming in fat, like most indian cookbooks are.

I would buy this book for cooking for myself daily and a Muthu Jaffrey's (high fat) cookbooks for cooking for special occassions and guests.

Defionately buy this book, it lives up to it name!

Another good cookbook low fat cookbook I would recomend is "Easy Exotic : A Model's Low-Fat Recipes from Around the World" mostly indian, some asian. Very good too!

I thought the recipes were too simple and ignored major ingridients that are used in sephardic cooking. The only advantage is very few ingridents, so it is easy to shop. Disadvantage: the taste suffers and isn't aromatic enough.

Pamela Grau Twena's introduction to Sephardic culture began on a blind date. Her future husband came from a family of Iraqi Jews who had immigrated to Israel. She was a non-observant Jew from Hollywood whose encounters with Jewish food had been limited to her grandmother's matzoh ball soup, a semiannual brisket, and an occasional cheese blintz. Twena's mother-in-law ushered her into a world of flavorful dishes. Captivated, she coaxed out the recipes, which had been passed through generations but never written down. Many designs for borders as well as animals, people, and things. I have found almost all of the designs useable for my pottery work.

There is More Than One Way to Tandoori 5 out of 5 stars.

Tandoori Cooking in the Oven is one of my favorite cookbooks and I have scores of Indian cookbooks, as I'm sort of a gourmet chef. I wrote a cooking column for a sailing magazine for a couple years and one of my favorite articles was my "Two Ways to Tandoori" which you can read in one of my "Amazon So You'd Like to Guides," if you want. Tandoori chicken is just delicious. Anyway, while I was making the guide, I listed fifty cookbooks from my collection. I have more. I know, I know, one would think a couple books would be enough, but it's sort of an obsession with me, making food taste great and I just love to see how others have done it.

While I was doing the guide, I pulled out all my Indian Cookbooks, had them all stacked around me. Then I decided to pull out all the ones I didn't think I could live without. It came to an even dozen and Tandoori Cooking in the Oven was one of the books. The recipes are just divine. I've never been to India, been a lot of places, but never there. Delhi, Bombay, Ganges, names that just ring with adventure. I imagine I'm there every time I cook up something Indian. I can feel the smells as they wrap their delicious flavors all around the kitchen, or galley, if I'm cooking on board the sailboat my husband Dub and I live on half the year.
