This book is collection of delicious vegetarian recipes from the series of books based on Khana Khazana program. The book is printed on nice glossy paper with good photographs and detailed recipes that are easy to follow. After-all this yet another masterpiece from the master chef Sanjeev Kapoor. He rocks!!

The books reveal the tried and tested secrets passed down from generation to generation through families. These tips and techniques are the key to successful cooking. In this book Mridula Baljekar explores the subtle flavours of Indian cuisine in over 100 recipes, through techniques such as dim (steaming), korma (braising) and talana (deep-frying). The selection of exquisite recipes includes Pulao Rice and Chappaties, Chicken Korma with Whole Spices and the more exotic Quails Poached in Coconut Milk. Mridula's highly readable text also reveals the secrets that create the delicate aromas that distinguish Indian dishes, and one of her tips is to fry curry leaves in coconut oil to create a delicious aroma. The book is divided into chapters by cooking method and each section opens with an introduction about the method in which Mridula draws on her Indian background and the secrets passed on to her from earlier generations.

This book is almost too beautiful for words and as one other reviewer mentioned it is a great introduction to the culture of Indian food. Try hot, freshly made chapatis with a generous helping of lemon pickle, simple and delicious. Of course, there is more to these culinary traditions than can be fit in one book. That is why you should buy Julie Sahni's other books as well! As for the reviewer with the maple syrup complaint. First off, Vindaloo is not a traditional North Indian dish, it's pure Southwestern Indian. A dish from the Portuguese Catholics of Goa. Second, maple syrup makes an excellent substitute for the raw Indian sugar traditionally used. So it creates authentic flavor with a not so authentic ingredient.

My friends and I discovered this book recently. After having tried several recipes over the past week, we are going to prepare our 2003 Thanksgiving meal using recipes from this book. We will start with Turkey Tandoori, curried potatoes, cayenne cauliflower, Mulligatawny Soup, Salmon madras, Cachumbar and mango lassi (to name a few.)
The recipes very are easy to follow. They not only note the time it takes to prepare and cook (not very long for most of them) but also shows step by step instructions, in individual photographs, how to prepare the meals. What could be easier? Very easy to prepare dishes with spices you most likely already have in your cupboard. And they are delicious as well. I had no idea I could create this kind of taste. I had always made my lentils with a spanish touch. Now with a few changes in spices/herbs I can create a whole new flavor. One drawback is that there are not very many vegetarian main dishes, although there are a few seafood dishes. Add this interesting cookbook to your repetoire. You'll be glad you did.

We love Indian food but I had never cooked it before. We needed to change our way of eating after some family health scares. Low fat is no fun if it's also low flavor. Roshi Razzaq's beautiful book and clear recipes introduced me to a whole new way of cooking and eating - low fat but incredibly delicious. She has even given me the confidence to try my own combinations. Indian food has gone from a special treat to the mainstay of our diet. Thank you, Roshi!

It is pretty rare that a cookbook inspires me like this one did. Vibrant photographs of every dish, as well as author notes on the region and history of the dish, inspired me to try a number of recipes. I can honestly say that every recipe I have tried has turned out perfectly. I have many cookbooks, most of which I have not cooked from; this one stands alone, in that I have tried almost half the recipes. If only I could find more copies for all the friends I've gotten hooked on Roshi's recipes

This cookbook is perfect for people who either don't have a lot of time to cook or are amateur cooks. The recipes are simple to follow and most take under an hour. These dishes are consistently delicious with every preparation and are guaranteed crowd pleasers.

Once you start cooking from this book, you will begin eating Indian regularly and you won't miss the fat.

This book truly does provide authentic Indian recipes and the food does come out great. It is a tiny small little book but is packed with all the basics of Indian cooking.
